JACQUES PEPIN'S FLATBREAD
"The recipe is from Jacques Pepin's TV series, "More Fast Food My Way". It was developed after Pepin visited a Tibetan restaurant and wanted to re-create a pan-cooked flatbread. The advantage of the bread is that it cooks FAST. From start to finish no more than 20 minutes. The bread adapts well to flavor additions such as herbs or mushrooms, rosemary, etc."

Steps:
- Dump everything (except the 2 tablespoons water) into a bowl and "stir it into a gooey stuff" as Jacques says. The dough will indeed be very wet, gooey, sticky. Stir in any optional ingredients.
- Heat a non-stick 10" skillet over medium to medium-high heat. Pour about a tablespoon of olive oil into the pan and then pour in the dough.
- Spread into one flat layer with a spoon or spatula. (A little oil on the spoon or spatula helps keep the dough from sticking to it.)
- Add a tablespoon or two of water around the outside of the dough where it meets the pan; the object is to create steam to help cook the bread. Cover the pan with a lid and cook 8-10 minutes. Peek at the bottom of the bread about half way through the first 8-10 minutes just to make sure the bottom isn't burning. You want good color, but not charcoal! Adjust the temperature accordingly.
- After 8-10 minute flip the bread and re-cover the pan so that it cooks on the other side, 5 minutes.
- It tastes best if eaten while warm.
FRENCH HERBED OMELETTE

- Beat the eggs, pepper and salt in a bowl.
- Stir in the herbs.
- Heat 1 teaspoon each of the oil and butter in a nonstick frying pan over high heat.
- When the oil and butter are hot, add half the egg mixture.
- Stir it continuously with a fork while shaking the pan for about 2 minutes to create small curds.
- When most of the mixture is solid, cook it without stirring for 10 seconds to create a thin``skin´´ on the underside of the mixture, binding it together.
- Roll the omelet by bringing together 2 opposite edges.
- Invert in a plate.
- Repeat process using remainder of ingredients to create a second omelette.
- Serve immediately, half an omelet per person.
CARAMELS BY JACQUES PEPIN
My favorite caramel recipe so far. The sugar gets hot enough to develop its full potential complexity, and the texture is creamy, but without so much dairy taste that it overwhelms the sugary goodness. I also like that it makes a smaller amount than other recipes I've seen. Having too much of this stuff around is dangerous!

- Prepare a standard loaf pan either by buttering it or lining it with lightly oiled parchment paper.
- Place the butter, cut into pieces, and the cream in a glass bowl and microwave until butter is melted and mixture is hot, about 90 seconds. Set mixture aside, close enough to be reached quickly.
- Combine water, corn syrup, and sugar in a straight-sided pan. Stir just enough to moisten the sugar, but not so vigorously as to slosh any sugar onto the sides of the pan, where it is likely to crystalize.
- Heat over medium-high heat until mixture begins to boil, then put on a tight-fitting lid and continue to cook for one to two minutes. The steam will condense in the lidded pan and run down the sides, washing away any sugar crystals that have formed.
- Remove the lid and attach a candy thermometer. Cook to 320 degrees F or until the sugar begins to turn amber around the edges. This may take five to six minutes, but it can happen fast, so do not allow your attention to be diverted at this point or you will have a smoking black mess on your hands.
- As soon as the thermometer hits 320 F, or you see the edges turning amber, pour the butter and cream mixture slowly into the sugar mixture, stirring to combine. Temperature will drop to just above 200°F.
- Continue cooking until the mixture reaches your desired temperature: 240 degrees F for very soft caramels, 245 for soft-but-chewy, 250 for hard.
- When the desired temperature is reached, pour the mixture immediately into the prepared loaf pan. Allow to cool until they are just slightly warm to the touch, then turn out onto parchment or waxed paper and cut to desired size. They're very rich, so I like small pieces.
- Wrap in squares of waxed paper to store. The softer ones will need to be refrigerated, the medium and hard ones will not. These also freeze well if you want to store them longer-term.

JACQUES PEPIN SALMON GRENOBLOISE RECIPE
Steps:
- Heat a pan and add the oil to it
- Once hot, add the croutons to the pan
- Stir occasionally to make sure they have browned perfectly on all sides
- Once browned and crispy, transfer the croutons to a bowl and set it aside
- Season the salmon fillets with salt and pepper on both sides
- Now place them skin side down on the same pan you used for the croutons
- Cook the fish uncovered for about 3 minutes over medium to high heat
- Then cover and cook for another 2 minutes
- Once cooked, transfer the cooked salmon fillets on a warm platter, skin side up
- Sprinkle the salmon with the prepared croutons, lemon flesh, capers, and chives
- Now take the pan again and make sure you discard any remaining fat and clean it with a paper towel
- Then add the butter to the pan and cook it on medium heat until browned
- Once browned, add the red wine vinegar and mix them both together
- Once mixed, immediately pour over this glaze on top of the salmon fillets
- Serve right away and Enjoy!

- Preheat the oven to 325°. Butter a 10-by-5-inch loaf pan. Line the bottom with a strip of parchment paper that extends 2 inches past the short ends of the pan.
- In a bowl, using an electric mixer, beat the butter with the sugar, vanilla and salt at medium speed until fluffy, 3 minutes. Add the eggs, 2 at a time, beating between additions. Beat in the milk. Sift the flour over the batter and whisk it in until smooth. Scrape the batter into the prepared pan and smooth the surface.
- Bake the cake for 1 1/2 hours, until it is cracked down the center, golden on top, and a toothpick inserted into the center comes out clean. Let the cake cool in the pan on a wire rack for 10 minutes, then unmold the cake and let cool completely.
