1-1/2 cups uncooked elbow macaroni
5 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1 cup shredded cheddar cheese
2 ounces cubed Velveeta
2 tablespoons dry bread crumbs

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

3/4 ounce flour
3/4 cup milk
1 1/4 pounds cheese, an equal mix of extra sharp white cheddar, Manchego, and Havarti
Salt and freshly ground black pepper
2 pounds macaroni, cooked according to package directions
4 ounces grated Parmesan
2 ounces bread crumbs

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
  • Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

1 pound elbow macaroni
8 tablespoons unsalted butter
3 jalapenos, 2 finely chopped and 1 thinly sliced
2 1/2 cups half-and-half
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)
1/2 cup pickled jalapenos, finely chopped, and 1/3 cup pickled jalapeno juice
1/2 cup pickled jalapenos, finely chopped, and 1/3 cup pickled jalapeno juice
1/8 to1/4 teaspoon cayenne pepper
1 cup panko bread crumbs

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Melt the unsalted butter in a large saucepan over medium heat; transfer half the melted butter to a medium bowl and reserve. Add the chopped jalapenos to the saucepan, toss to coat and cook until softened, about 5 minutes; transfer to a small bowl and reserve.
  • Wipe out the saucepan and add the half-and-half. Cook over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and reserved pasta water and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently fold in the reserved cooked jalapenos, pickled jalapenos and pickled jalapeno juice. Season with salt and cayenne if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs in the bowl with the reserved melted butter and a sprinkle of salt. Sprinkle evenly over the macaroni and cheese. Lay the sliced jalapenos evenly on top of the bread crumbs. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

Jackie is my daughter. She requests this frequently, I can never make just a single recipe, it's always at least doubled. The base of this recipe is from an old Betty Crocker cookbook, but I've made it mine. This is absolutely one of our favorite comfort foods! ENJOY!!!

32 oz macaroni, elbow
1/2 c butter (1 stick)
2 tsp onion powder
3/4 tsp white pepper
1/2 c flour
3 1/2 c milk
5 oz velveeta, sliced or cubed
4 oz mexican blend shredded cheese
4 oz swiss cheese
3 oz havarti cheese

Steps:

  • 1. Cook macaroni as directed on package. Do not overcook. If it says to cook 7-9 minutes, cook NO longer than 8.
  • 2. Melt butter over low heat. Measure onion powder & pepper into 1/2 cup measure. Fill remainder of cup with flour. Add flour mixture to butter in pan and mix thoroughly with a wisk. Cook over low heat stirring constantly till mixture is smooth and bubbly.
  • 3. Remove from heat and stir in milk with wisk. Heat to boiling over medium heat, stirring constantly. Boil and stir for one minute.
  • 4. Remove from heat and stir in cheeses till melted. Pour sauce over cooked macaroni & stir well. If desired, pour some or all of the mac n cheese into a buttered casserole, top with bread crumbs or ritz crumb in a little melted butter and bake for about 30 minutes at 375º. ENJOY!!
  • 5. NOTES: Rarely do I get to bake the mac n cheese. My kids don't usually give me the chance. They dig in as soon as the mac is mixed into the cheese. The original recipe called for chopped onion and salt. My kids don't like the chunks and I figured with all that cheese additional salt is not necessary. Also tastes great with add ins such as tuna or chicken.

1 cup milk
1 cup cream
1/2 teaspoon salt

  • Preheat oven to 400°F.
  • Cook and drain macaroni according to package directions; set aside.
  • In a large saucepan melt butter.
  • Add flour mixed with salt and pepper, using a whisk to stir until well blended.
  • Pour milk and cream in gradually; stirring constantly.
  • Bring to boiling point and boil 2 minutes (stirring constantly).
  • Reduce heat and cook (stirring constantly) 10 minutes.
  • Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
  • Turn off flame.
  • Add macaroni to the saucepan and toss to coat with the cheese sauce.
  • Transfer macaroni to a buttered baking dish.
  • Sprinkle with breadcrumbs.
  • Bake 20 minutes until the top is golden brown.
  • (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

175g mature cheddar , such as Denhay
50g gruyère
50g parmesan (or vegetarian alternative)
50g white bread , crusts cut off
3 medium tomatoes
280g good-quality macaroni
700ml full-fat milk , plus a bit extra
50g butter
50g plain flour , minus 1 tsp
1 rounded tsp Dijon mustard

Steps:

  • Making macaroni cheese is a bit of a juggling act, so it's easier if you get a few things prepared ahead. Finely grate all the cheeses, keeping them separate. Tear the bread into pieces and whizz in a food processor to coarse crumbs. Mix 25g of the cheddar and one-third of the parmesan into the breadcrumbs. Toss the rest of the cheeses together and set aside. Thickly slice the tomatoes. Butter a dish, about 30 x 20 x 5.5cm. Heat oven to 190C/fan 170C/gas 5.
  • Put a pan of water on to boil. Tip the macaroni into the boiling water, stir and bring it back to the boil. Simmer for 8 mins, or cook according to pack instructions, stirring occasionally to stop it sticking. While this is cooking, start the sauce.
  • Warm the milk in a jug in the microwave (or in a pan). Melt the butter in a pan (big enough to take the macaroni as well), then stir in the flour. Cook for 1 min, stirring, then take off the heat. Pour in one-third of the warm milk and beat well with a wooden spoon until smooth - it is quite thick at this stage. Add another third - it may go a bit lumpy, but keep beating well and it will go smooth again. Pour in the final third of milk and keep beating until smooth.
  • When the macaroni is done, tip it into a colander and put it briefly under very hot running water to keep it separate. Drain. Put the pan of sauce back on the heat and cook, stirring, until thickened and smooth. Lower the heat and simmer for about 4 mins until glossy, stirring every now and then. Remove from the heat and stir in the cheese and mustard, then beat in 5 tbsp milk, or enough to give a slack coating consistency. Taste and season (you shouldn't need much salt). If the macaroni is sticking at all, put it under the hot tap again, then stir to separate. Drain well, then gently mix it into the sauce and stir to coat completely. If necessary, adjust the consistency again with milk. There should be enough sauce to coat the macaroni thickly and liberally.
  • Tip the macaroni cheese into the buttered dish, scatter over the cheesy crumbs and lay the tomatoes casually over the top. Heat through in the oven for 12-15 mins until beginning to bubble around the edges. Grill for 3-5 mins to brown the crumbs. Let it all settle for 1-2 mins, then serve while still piping hot.

1 (32 ounce) package Velveeta cheese (don't get the non or reduced fat kind it's icky)
1 cup milk
1/2 cup grated sharp cheddar cheese (you can go up to a whole cup)
1 teaspoon Dijon mustard (spicy not sweet)
1 teaspoon diced or minced garlic
1 1/2 cups ham, diced
1 medium size yellow onion, chopped
1 cup celery, chopped
1 (12 ounce) bag noodles (twisty kind work well)
1 cup breadcrumbs
1 -2 tablespoon butter
onion powder
garlic powder

Steps:

  • Melt the Velveeta, grated cheddar cheese, milk, mustard and minced garlic until smooth and creamy. Stirring frequently.
  • Sautee the ham, onion and celery. About 10 minutes
  • Add the ham mixture to the cheese sauce. Mix with the cooked noodles. Spoon into a large rectangle baking dish.
  • Brown the breadcrumbs with dash of onion and/or garlic powder in butter.
  • Sprinkle over top of macaroni & cheese bake @ 350 degrees for 1/2 hour.
  • This dish can feed up to 6 or more people at one meal. Makes great leftovers.

50g baguette, cut into small chunks
2 tbsp butter, plus 1 tbsp melted
350g spiral or other short pasta
1 garlic clove, finely chopped
1 tsp English mustard powder
3 tbsp plain flour
500ml whole milk
250g vegetarian mature cheddar, grated
50g parmesan (or vegetarian alternative), grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
  • Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.
  • Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.
  • Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
  • Scatter over the bread and the remaining parmesan, then bake for 20 mins until crisp and golden. Can be frozen before baking - defrost thoroughly before cooking.

  • Boil water and cook the macaroni according to the directions on the box.
  • While the macaroni is cooking, melt the butter in a sauce pan. Stir in the flour. Add the milk slowly. Cut the cheese into small pieces and add it to the milk mixture. Stir until the cheese is melted being careful not to let it burn on the bottom of the sauce pan.
  • Drain the macaroni when it is cooked.
  • Mix the cooked macaroni with the cheese mixture in a pan.
  • Cover the pan and bake it covered at 350 deg. for 45 minutes.
  • Remove the lid and bake for 10 more minutes.
