Steps:
- Blend the fruit, sugar, honey and lemon juice with 2 cups ice in a food processor or blender until chunky. Add another 1 cup ice and blend until completely smooth.
- Pour the mixture into a shallow baking dish and freeze 30 minutes. Scrape the ice with a fork until slushy, then freeze until firm, about 2 more hours. Scoop into paper cups.
RASPBERRY ORANGE ITALIAN ICE

- Place a 9-by-13-inch pan in the freezer.
- Add the raspberries, orange juice and sugar to a blender and blend until smooth. Using a sieve, strain the mixture into a bowl and discard the seeds. Return the fruit puree to the blender, add the ice and blend until smooth again. Pour into the chilled pan and transfer to the freezer.
- After 20 minutes, scrape the pan with a fork to create a slushy consistency. Return to the freezer for an additional 20 minutes. Scoop and serve with a few raspberries.
LIME ITALIAN ICE
Steps:
- Fill a large bowl with ice water. Place another bowl inside so it's surrounded on all sides by the ice water. In a medium saucepan, bring water and sugar to a boil. When sugar has dissolved, remove from heat and add lime juice. Pour into bowl sitting in the ice bath to cool lime mixture, about 15 minutes. Pour mixture into a 10 by 12-inch baking dish that's sitting on a sheet tray and put in the freezer. After 1 1/2 hours, remove from freezer and scrape the ice with a fork, being sure to mix the softer center with the more frozen outer edges. Put back into the freezer for another 1 1/2 hours. Before serving, scrape again using the fork.

- In a saucepan, bring 1 cup water and sugar to a boil, stirring frequently. Boil for 1 minute or until sugar is dissolved. Steps:
- Combine water and sugar in a saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer for 5 minutes. Remove from heat and stir in light corn syrup and lemon juice.
- Allow to cool to room temperature, about 30 minutes.
- Divide cooled mixture amongst 3 plastic containers and freeze for 1 hour. Scrape ice crystals with a fork and return to freezer until ice is semi-frozen, 1 to 2 hours, scraping ice crystals every 30 minutes.
- Scoop Italian ice into small serving cups or cones and serve.

Mix well. Add ¼ cup heavy cream (or light cream/ half and half) and 1 teaspoon of vanilla. Stir well. Cover and refrigerate until you are ready to prepare the mixture for freezing. Preparing the Cannoli Ice Mixture (5 minutes) Freeze time 10 hours or overnight In a blender or food processer, add cannoli cream mixture and blend for about a minute. Add cooled simple syrup and blend for another minute. Pour liquid mixture to a metal pan (I use a loaf baking pan that holds approximately 8 cups). Cover with saran wrap or p
- Mix to spread out any mini chocolate chips that may have clumped together. Mix in any add-ins if desired. This scraped ice should resemble snow slush! Scoop out and Enjoy! If you have leftovers, which I doubt, you can refreeze and then follow the serving directions once you are ready to serve the Italian ice again. The Italian ice will keep in the freezer for about a week.
