3 cups uncooked farfalle (bow-tie) pasta (6 ounces)
1/2 cup water
4 ounces green beans, cut into 2-inch pieces (2 cups)
1 tablespoon olive or vegetable oil
6 ounces whole mushrooms, cut into fourths (2 cups)
1 medium zucchini, cut lengthwise into eighths, then into 1-inch pieces
1 medium yellow onion, cut into 1/4-inch wedges
2 cloves garlic, finely chopped
2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
3/4 teaspoon salt
4 ounces cherry tomatoes, cut in half
1/2 cup shredded Asiago or Parmesan cheese (2 ounces)

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 10-inch nonstick skillet, heat water to boiling. Add beans; boil uncovered 5 minutes. Cover and boil 2 to 4 minutes or until crisp-tender. Drain; set aside.
  • In same skillet, heat oil over medium-high heat. Cook mushrooms, zucchini, onion, garlic, oregano and salt in oil about 7 minutes, stirring frequently, until onion is tender.
  • Stir in tomatoes and beans; heat until hot. Serve vegetable mixture over pasta. Sprinkle with cheese.

1 tablespoon olive oil
1 zucchini, chopped
1 large onion, chopped

A tasty mix of chicken, garlic, mushrooms, prosciutto and pasta are complemented by a thin but flavorful Asiago cream sauce.

1 (16 ounce) package farfalle (bow tie) pasta
2 tablespoons vegetable oil
1 pound skinless, boneless chicken breast halves - cubed
2 ¼ cups heavy cream, divided
¼ cube chicken bouillon, crumbled
¾ cup grated Asiago cheese
½ tablespoon cornstarch
2 tablespoons butter
¼ cup chopped prosciutto
1 tablespoon chopped fresh garlic
¼ cup sliced mushrooms
½ tablespoon parsley flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain, and set aside.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Cook and stir chicken cubes, reducing heat if necessary, until no longer pink in center and juices run clear. Set aside.
  • In a medium saucepan, bring 2 cups cream to a simmer, stirring often. Whisk in bouillon and cheese until well blended and bouillon has dissolved completely. Dissolve cornstarch in 2 tablespoons water, and whisk into mixture. Cook and stir 2 minutes more, then remove from heat and set aside.
  • Melt butter in a medium skillet over medium high heat. Stir in prosciutto, garlic, and mushrooms and cook until mushrooms are tender, about 3 minutes. Add chicken, reduce heat, and continue cooking until chicken is heated through. Return sauce to the stove and add remaining 1/4 cup cream and parsley flakes. Heat through.
  • To serve, place pasta in a large mixing or serving bowl. Add chicken and mushroom mixture and pour in cream sauce. Toss well, and serve.

1 cup dry white wine
1 cup whipping cream
1 cup shredded Asiago cheese
1 cup thinly sliced green onions

Steps:

  • Cook pasta in large pot of boiling salted water 10 minutes. Add asparagus; boil until crisp-tender and pasta is tender but still firm to bite, stirring occasionally, about 3 minutes longer. Drain pasta and asparagus in colander.
  • Meanwhile, heat large skillet over medium-high heat. Add ham and cook until just brown, stirring frequently, about 2 minutes. Add wine; boil until reduced by half, about 2 minutes. Add cream; bring to simmer. Stir in cheese and 3/4 cup green onions. Add pasta and asparagus and toss with sauce to coat. Season with salt and pepper. Sprinkle with 1/4 cup onions and serve.

2 tablespoons butter
2 tablespoons all-purpose flour
12 ounces evaporated milk (low fat or regular)
1/2 cup milk
1/4 cup chicken broth
1 cup shredded asiago cheese
1 tablespoon olive oil
1 lb boneless chicken breast, cut into cubes
2 tablespoons fresh parsley, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb bow tie pasta

Steps:

  • In a medium saucepan, melt the butter over medium heat. Add the flour and stir just until mixed.
  • Add the evaporated milk, regular milk and chicken broth and cook, stirring often, until the sauce thickens and begins to simmer.
  • Remove from heat and add the Asiago cheese, stirring just until the cheese melts smoothly into the sauce. Set aside.
  • Heat the olive oil in a large, preferably non-stick, skillet. Add the cubed chicken, parsley and garlic, and continue to cook, stirring frequently, until the chicken is opaque and cooked through - 8 to 10 minutes. Add the Asiago sauce and season with salt and pepper. Stir to combine.
  • Meanwhile, cook the bow tie pasta in a large pot of boiling salted water until tender but not mushy.
  • Drain well in a colander, then return pasta to the pot and add the chicken and Asiago sauce. Toss to combine and serve immediately, with additional grated Asiago cheese sprinkled on top, if desired.
  • If making ahead, transfer the sauce to a covered container and refrigerate. When you are ready to serve dinner, place sauce in a large saucepan and heat very gently over low heat, stirring often. Don't let it boil.

1/8 teaspoon cayenne pepper
2 boneless skinless chicken breast halves (5 ounces each)
2 bacon strips, diced
1/2 cup sliced fresh mushrooms
1 green onion, sliced
1 garlic clove, minced
1 cup uncooked bow tie pasta
1 tablespoon butter
4 teaspoons all-purpose flour
1/2 cup half-and-half cream
2 tablespoons chicken broth
1/2 cup plus 2 tablespoons shredded Asiago cheese, divided
1-1/2 teaspoons cream cheese, softened
1 plum tomato, seeded and diced

Steps:

  • Rub pepper and cayenne over chicken. Broil 4-6 in. from the heat for 4-5 minutes on each side or until juices run clear. Set aside and keep warm. , In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 teaspoons drippings. In the drippings, saute mushrooms, onion and garlic. Remove from the heat; set aside., Cook pasta according to package directions. Meanwhile, in a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add cream and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add 1/2 cup Asiago cheese and cream cheese; stir until cheese is melted. , Cut chicken into strips. Drain pasta. Toss chicken, pasta, bacon and mushroom mixture with cream sauce. Top with tomato and remaining Asiago cheese.
