1/3 pound bulk hot Italian sausage
1/3 cup chopped onion
1 garlic clove, minced
1-3/4 cups beef broth
1-1/4 cups water
3/4 cup chopped tomatoes
1/2 cup chopped green pepper
1/3 cup sliced fresh carrot
1/3 cup dry red wine or additional beef broth
1/3 cup tomato sauce
1/4 cup tomato paste
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
3/4 cup frozen cheese tortellini
1/2 cup sliced quartered zucchini
2 tablespoons minced fresh parsley

Steps:

  • Crumble sausage into a large saucepan; cook over medium heat until no longer pink. Remove with a slotted spoon to paper towels. In the drippings, saute onion until tender. Add garlic; cook 1 minute longer. , Stir in the broth, water, tomatoes, green pepper, carrot, wine, tomato sauce, tomato paste, oregano and basil. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Skim fat. Stir in the sausage, tortellini, zucchini and parsley. Cover and simmer 10-15 minutes longer or until tortellini is tender.

1 tablespoon olive oil
4 ounces hot or sweet Italian sausage, removed from casings
1 onion, chopped
1 medium rib celery, chopped (about 2/3 cup)
One 15-ounce can white beans, such as cannellini or navy, rinsed and drained
One 15-ounce can diced tomatoes
2 cups low-sodium chicken broth
One 8- to 9-ounce package of your favorite refrigerated tortellini
Kosher salt and freshly ground black pepper
1/4 cup prepared pesto
Grated Parmesan, for serving

Steps:

  • Heat the oil in a medium pot over medium heat. Add the sausage and cook, breaking the meat up with a wooden spoon, until browned, about 4 minutes. Add the onions and celery and continue to cook, stirring, until the vegetables are softened, about 5 minutes. Add the beans, tomatoes, broth and 4 cups water and increase the heat to medium-high to bring to a simmer. Continue to simmer, adjusting the heat if necessary, until the vegetables are tender, about 10 minutes.
  • Add the tortellini and continue to cook until they are tender, about 10 minutes. Season to taste with salt and pepper. Serve in bowls topped with a spoonful of pesto and a sprinkle of grated Parmesan.

1 cup chopped onions
2 cloves garlic, minced
5 cups beef stock
⅓ cup water
½ cup red wine
4 tomatoes - peeled, seeded and chopped

½ teaspoon dried basil
½ teaspoon dried oregano
1 cup tomato sauce
1 zucchini, chopped
8 ounces cheese tortellini
1 green bell pepper, chopped
1 tablespoon chopped fresh parsley

Steps:

  • Place the sausage in a large pot over medium high heat and saute for 10 minutes, or until well browned. Drain the fat except for about 1 tablespoon, add the onions and garlic and saute for 5 more minutes.
  • Next add the beef stock, water, wine, tomatoes, carrots, basil, oregano and tomato sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes, skimming any fat that may surface.
  • Add the zucchini, tortellini, green bell pepper and parsley to taste. Simmer for 10 minutes, or until tortellini is fully cooked. Pour into individual bowls and garnish with the cheese.

5 cups beef stock or canned broth

1 large zucchini, sliced
1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine
2 tablespoons dried basil
2 tablespoons dried oregano
8 to 10 ounces purchased fresh cheese tortellini
Freshly grated Parmesan cheese

Steps:

  • Sauté Italian sausage in heavy Dutch oven over medium-high heat until cooked through, crumbling with back of spoon, about 10 minutes. using slotted spoon, transfer sausage to large bowl. Pour off all but 1 tablespoon drippings from Dutch oven. Add onion and garlic to Dutch oven and sauté until translucent, about 5 minutes. Return sausage to Dutch oven. Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Add tortellini to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.

28 oz crushed tomatoes ((1 can))
12 oz cheese tortellini (Frozen (1 bag))
5 cloves crushed garlic
1 cup chicken broth ((use vegetable broth if vegetarian))
2 tsp sugar
1/2 tsp salt
2 tsp Italian seasoning
3 tbsp butter
1/2 cup heavy cream
4 oz fresh spinach

Steps:

  • Combine the tomatoes, broth, Italian seasoning, salt and garlic bring to a simmer. Let simmer for 5 minutes.
  • Reduce the heat to low and stir in the sugar and butter and mix until they are dissolved and well combined.
  • Very slowly pour in the heavy cream, while simultaneously stirring, until all of the cream is combined and the soup has a creamy texture.
  • Return to a simmer and add tortellini and spinach and cook for about 5 minutes or until the tortellini is heated through and the spinach is wilted.

Steps:

  • Place the carrots, onion, celery, garlic, thyme and 2 cups of the broth in a 6-quart saucepot.
  • Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the onion is tender.
  • Add the remaining broth, zucchini(or/and vegs. of choice), tomatoes(fresh or canned), tortellini and beans. Heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the tortellini is tender. Serve with grated Parmesan cheese if desired.

1 tablespoon olive oil
2 links Italian sweet sausage (removed from casing and crumbled)
1/2 medium onion (chopped)
1 medium carrot (diced)
1/3 cup diced sweet red peppers (about 1/2 of a medium, blocky pepper)
2 cloves garlic (minced)
1 tablespoon tomato paste
1/2 teaspoon Italian herb blend
1/2 cup red wine
8 ounces tomato sauce
15 ounces diced tomatoes
2 cups beef broth
1/2 cup water
1 bay leaf
2 " piece of parmesan rind (optional)
9 ounce package fresh tortellini (refrigerated, not dried)
handful chopped spinach
chopped fresh flat-leaf parsley (for garnish)
salt and pepper

Steps:

  • Heat oil in a 5 quart dutch oven or soup pot over medium until shimmering. Add the crumbled sausage and cook until no longer pink. Add the onions and cook until softened (4 to 5 minutes). Add the carrots, peppers, garlic, tomato paste, herbs, and a big pinch of salt, and stir to mix well. Saute for several minutes to let the garlic, tomato paste and herbs become fragrant. Add the wine and continue sautéing until most of its liquid has cooked off.
  • Add the tomato sauce, tomato dices, broth, and water and increase heat to bring to a gentle boil. Reduce heat to maintain a simmer, and add the bay leaf and parmesan cheese rind (if using). Simmer for 15 minutes.
  • Remove the bay leaf and rind from the soup and discard. Taste, and add salt by the pinch as necessary. Add a few grinds of freshly ground black pepper.
  • Add the fresh tortellini to the soup and let cook for the time indicated on the package.
  • Stir in the spinach. Ladle into bowls and garnish with parsley.

1 (9 ounce) package refrigerated cheese tortellini
1 (6 ounce) package fresh Baby Spinach, coarsely chopped

1 dash crushed red pepper flakes
shredded parmesan cheese (optional)

Steps:

  • Crumble sausage into a Dutch oven; add onion.
  • Cook and stir over medium heat until meat is no longer pink.
  • Add garlic; cook and stir 2 minutes longer.
  • Add the broth, water and tomatoes. Bring to a boil.
  • Stir in tortellini; return to a boil.
  • Reduce heat; simmer, uncovered, for 5-8 minutes or until tortellini are tender, stirring occasionally.
  • Add the spinach, basil, pepper and pepper flakes; cook 2 - 3 minutes longer or until spinach is wilted.

1 lb Italian sausage
1 cup onion, coarsely chopped
2 garlic cloves, sliced
5 cups beef broth
1/2 cup water
1/2 cup dry red wine
4 medium tomatoes, seeded, peeled, chopped
1 cup carrot, thin sliced
1/2 teaspoon basil
1/8 teaspoon oregano
8 ounces tomato sauce
1 1/2 cups zucchini, sliced
8 ounces frozen meat-filled tortellini or 8 ounces frozen cheese tortellini
3 tablespoons fresh parsley, chopped
1 medium green pepper, cut in 1/2-inch pieces
parmesan cheese

Steps:

  • Remove sausage casing. In dutch over brown sausage.
  • Remove sausage; reserve 1 tbsp drippings.
  • Saute onions and garlic in drippings until onions are tender.
  • Add broth and next 7 ingredients, and add sausage.
  • Bring to boil, reduce heat and simmer uncovered 30 minutes.
  • Skim fat from soup and stir in zucchini and remaining ingredients, except parmesan cheese. Simmer covered an additional 35-40 minutes until tortellini is tender.
  • Serve topped with parmesan cheese.
  • If you prefer to use fresh tortellini, simmer 20-35 minutes until tender.

ITALIAN TORTELLINI SOUP - LAUREN LANE
Sauté onion, carrots, celery, and garlic in olive oil or avocado oil. Add Italian sausage until cooked through. Add chicken broth, white beans, fennel seed, and Italian seasoning. Simmer for 1 hour (or longer if you can – the longer you simmer the better the flavor!) 10 minutes prior to serving add tortellini and bring to a boil to cook through.
