- In 4-quart Dutch oven, cook beef over medium heat, stirring occasionally, until thoroughly cooked; drain. Stir in spaghetti sauce, mushrooms and water. Heat to boiling; reduce heat.
- In medium bowl, mix Bisquick mix, spinach, cheese and milk until soft dough forms. Drop dough by 10 spoonfuls onto hot spaghetti mixture.
- Cook uncovered over low heat 10 minutes. Cover; cook 10 minutes longer.

I came up with this recipe using what I had on hand one day, and it remains a family favorite on these colder New England days. It's a fabulous was to use up leftover roast. - In a Dutch oven, saute onion in oil until tender. Add garlic; saute 1 minute longer. Stir in vinegar and wine. Bring to a boil; cook until liquid is almost evaporated., Add the tomato sauce, water, peppers, bay leaves, brown sugar, bouillon and seasonings. Bring to a boil. Stir in rice. Reduce the heat; cover and simmer until rice is tender, 15-20 minutes., Discard bay leaves. Add beef and spinach; cook and stir until heated through and spinach is wilted. Serve with sour cream and Parmesan cheese if desired.

- In small bowl, combine spinach, cheese, 2 tablespoons of oil, egg and 1/4 cup of milk; mix well.
- Add to dry ingredients; stir until just moistened, adding more milk if necessary to form a soft dough.
- Drop by rounded tablespoonfuls onto hot stew mixture.
- Cover tightly.
- Simmer 12-15 minutes or until the dumplings are fluffy and no longer doughy on bottom.

BEST EVER ITALIAN SPINACH
This is the best ever Italian Spinach. I believe it is very close to the recipe used by the Memphis resteraunt called Grisanti's. This recipe would also be VERY easy to double or triple. I hate eggs, and I love this recipe. My husband is not a huge 'green veggie' fan, and he loves this recipe. It is great, fast, easy, involves common ingredients, and will be a staple in your kitchen. I am going to try cooking in batches and putting in ziplocks to freeze (OAMC).

- Thaw spinach and squeeze out excess water.
- Now, squeeze some more and set aside.
- In a saute skillet, over medium heat, add olive oil and garlic.
- Cook until garlic is golden brown (don't burn it!).
- Add spinach and seasonings, saute for 3-4 minutes.
- Break in eggs and continue to saute and stir until eggs are cooked and thoroughly mixed into the spinach.
- Drain any excess oil and transfer to serving platter.
- Sprinkle grated Paremesan cheese over the top, amount to your liking.

DEB'S CALDILLO (MEXICAN GROUND BEEF STEW)
This is a tart and hearty stew with a southwestern flavor. I made it up after visiting a local Texas restaurant which declined to give me their recipe for the delicious stew I ate there. Although mine tastes similar to theirs, it is much more tart (which I like) and hot (which I love!) Check it out if you like something a bit different. You won't be disappointed.

- In a deep pot, crumble and brown beef with onion, garlic, cumin, and bacon grease.
- Add chicken broth, salt, pepper, and chili powder; mix together well.

- Preheat oven to 180 degrees celsius.
- In a saucepan over high heat boil the red wine for 15 minutes. Set aside.
- Season the beef with salt and pepper.
- In a casserole dish over high heat brown the beef in the olive oil.
- Add red wine, stock and remaining ingredients.
- Bring to a simmer, then cover and place in the oven.
- Turn the heat down to 160 degrees celsius and cook for 2 hours.
- Take beef and pork out of the pan and set aside.
- Strain liquid into a bowl and cool slightly.
- Discard herbs. Place carrot, celery and garlic in a blender and puree until smooth, adding enough of the reserved liquid to make a smooth sauce. Return to the pan with the beef.
- Return the pan to the oven for a further 45 minutes or until the meat has fallen apart into the sauce.
