1 lb lean (at least 80%) ground beef
1 jar (26 oz) primavera spaghetti sauce
1 jar (4.5 oz) sliced mushrooms, drained
1 cup water
2 cups Bisquick Heart Smart® or Original Bisquick™ mix
1/4 cup frozen chopped spinach, thawed, squeezed to drain
1/4 cup grated Parmesan cheese
1/2 cup milk

Steps:

  • In 4-quart Dutch oven, cook beef over medium heat, stirring occasionally, until thoroughly cooked; drain. Stir in spaghetti sauce, mushrooms and water. Heat to boiling; reduce heat.
  • In medium bowl, mix Bisquick mix, spinach, cheese and milk until soft dough forms. Drop dough by 10 spoonfuls onto hot spaghetti mixture.
  • Cook uncovered over low heat 10 minutes. Cover; cook 10 minutes longer.

1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1/3 cup cider vinegar
2 tablespoons dry red wine or beef broth
1 can (29 ounces) tomato sauce
1 cup water
1/3 cup chopped roasted sweet red peppers
3 bay leaves
3 tablespoons brown sugar
3 teaspoons beef bouillon granules
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/3 cup uncooked long grain rice
1/2 pound cubed cooked roast beef
2 cups chopped fresh spinach
Sour cream and grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; saute 1 minute longer. Stir in vinegar and wine. Bring to a boil; cook until liquid is almost evaporated., Add the tomato sauce, water, peppers, bay leaves, brown sugar, bouillon and seasonings. Bring to a boil. Stir in rice. Reduce the heat; cover and simmer until rice is tender, 15-20 minutes., Discard bay leaves. Add beef and spinach; cook and stir until heated through and spinach is wilted. Serve with sour cream and Parmesan cheese if desired.

  • In medium bowl, combine the flour, baking powder and salt; blend well.
  • In small bowl, combine spinach, cheese, 2 tablespoons of oil, egg and 1/4 cup of milk; mix well.
  • Add to dry ingredients; stir until just moistened, adding more milk if necessary to form a soft dough.
  • Drop by rounded tablespoonfuls onto hot stew mixture.
  • Cover tightly.

2 (8 3/4 ounce) cans corn
2 lbs ground beef
1 (16 ounce) package corn tortillas

2 cups rutabagas, small chunks
2 cups potatoes, larger chunks

1 (20 ounce) can diced tomatoes
2 beef bouillon cubes, dissolved in 4oz hot water
1/2 tablespoon garlic salt
1/2 tablespoon italian seasoning

  • Place first 5 ingredients in pot.
  • Brown ground beef and add to pot.

This is the best ever Italian Spinach. I believe it is very close to the recipe used by the Memphis resteraunt called Grisanti's. This recipe would also be VERY easy to double or triple. I hate eggs, and I love this recipe. My husband is not a huge 'green veggie' fan, and he loves this recipe. It is great, fast, easy, involves common ingredients, and will be a staple in your kitchen. I am going to try cooking in batches and putting in ziplocks to freeze (OAMC).

1 (10 ounce) box frozen chopped spinach
3 tablespoons olive oil
1 garlic clove, minced (I used 3)
1/4 teaspoon salt
2 eggs
fresh parmesan cheese (to garnish)

Steps:

  • Thaw spinach and squeeze out excess water.
  • Now, squeeze some more and set aside.
  • In a saute skillet, over medium heat, add olive oil and garlic.
  • Cook until garlic is golden brown (don't burn it!).
  • Add spinach and seasonings, saute for 3-4 minutes.
  • Break in eggs and continue to saute and stir until eggs are cooked and thoroughly mixed into the spinach.
  • Drain any excess oil and transfer to serving platter.
  • Sprinkle grated Paremesan cheese over the top, amount to your liking.

This is a tart and hearty stew with a southwestern flavor. I made it up after visiting a local Texas restaurant which declined to give me their recipe for the delicious stew I ate there. Although mine tastes similar to theirs, it is much more tart (which I like) and hot (which I love!) Check it out if you like something a bit different. You won't be disappointed.

1 -1 1/2 lb lean ground beef
2 -4 tablespoons yellow onions, finely minced
1 teaspoon garlic, crushed
1 -2 tablespoon bacon grease (olive oil may be substituted)
2 -4 tablespoons chicken broth
1 (4 -7 ounce) can green chilies, chopped
1 (10 ounce) can Rotel Tomatoes (or tomato and chili mix)
1 (6 ounce) can tomato paste
2 -3 potatoes, peeled and finely diced
4 -6 tablespoons vinegar
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/4-1 cup water (added as needed during cooking)

Steps:

  • In a deep pot, crumble and brown beef with onion, garlic, cumin, and bacon grease.
  • Add chicken broth, salt, pepper, and chili powder; mix together well.
  • Add all canned ingredients and stir well.
  • Stir in vinegar to desired tartness.
  • Add potatoes.
  • Simmer on medium low heat for about 1 hour or until potatoes are fork-tender.
  • Serve topped with grated cheese and jalapeños, with warm tortillas on the side.

Stracotto apparently means 'overcooked' in Italian. It's really good if you can cook this one for as long as possible. Serve with mashed potatoes and a green vegetable. This is also really good reheated the next day.

750 ml red wine
2 kg beef rump
2 tablespoons olive oil
750 ml beef stock
3 large carrots, roughly chopped
2 celery ribs, roughly chopped
6 garlic cloves, peeled
2 rosemary sprigs
4 bay leaves
4 -6 small pork belly, slices
salt
pepper

Steps:

  • Preheat oven to 180 degrees celsius.
  • In a saucepan over high heat boil the red wine for 15 minutes. Set aside.
  • Season the beef with salt and pepper.
  • In a casserole dish over high heat brown the beef in the olive oil.
  • Add red wine, stock and remaining ingredients.
  • Bring to a simmer, then cover and place in the oven.
  • Turn the heat down to 160 degrees celsius and cook for 2 hours.
  • Take beef and pork out of the pan and set aside.
  • Strain liquid into a bowl and cool slightly.
  • Discard herbs. Place carrot, celery and garlic in a blender and puree until smooth, adding enough of the reserved liquid to make a smooth sauce. Return to the pan with the beef.
  • Return the pan to the oven for a further 45 minutes or until the meat has fallen apart into the sauce.
