ITALIAN VEGETABLE SOUP RECIPE

This vegetable & gnocchi Italian soup recipe is bursting with flavor and can be made in around 30 minutes, making it an easy weeknight meal.

1 yellow onion
4 cloves garlic
½ cup chopped basil leaves, plus additional for serving if desired
15-ounce can chickpeas
2 tablespoons olive oil
2 pinches red pepper flakes
1 quart vegetable broth
28-ounce can diced fire roasted tomatoes*
15-ounce can diced fire roasted tomatoes
1 teaspoon kosher salt
Fresh ground pepper
1 1/2 cups frozen (or fresh) cut green beans
1 pound gnocchi (gluten-free if necessary; here's our favorite)
4 to 6 cups spinach leaves
Parmesan cheese, for serving (optional)*

Steps:

  • Chop the onion and mince the garlic cloves. Chop the basil. Drain and rinse the chickpeas.
  • In a large pot, heat the olive oil over medium high heat. Saute the onion until translucent, about 5 minutes. Stir in the garlic and basil for 1 minute. Add the chickpeas, red pepper flakes, broth, both cans of tomatoes and their juices, kosher salt, and several grinds of fresh pepper. Bring to a boil, then reduce to a simmer. Add the green beans, then simmer for 15 minutes.
  • Break apart any clumps in the gnocchi, then add them to the pot and cook for 5 minutes until tender. Turn off the heat and stir in the spinach until wilted, about 1 minute.
  • To serve, ladle soup into bowl and top with Parmesan and basil leaves if desired. Allow to cool slightly before diving in!

A yummy soup that my neighbor used to make for my family. After he moved away, we finally found the recipe online and wanted to keep it in a safe place. Some of the ingredients seem weird (like the dill pickles) but they work together really well. It's easily doubled if you have a large enough pot to fit it all.

Number Of Ingredients 15

1 (28 ounce) can whole tomatoes
1 lb Italian sausage, cut into bite sized pieces
1 (15 ounce) can tomato sauce, Italian flavor
7 cups beef stock
1 cup onion, chopped
1 garlic clove, minced
1 cup carrot, sliced
1 -2 tablespoon fresh basil, chopped (or 1 tsp dried)
1 teaspoon oregano
2 cups zucchini, sliced
1 cup mushroom, sliced
1 medium green pepper, seeded and sliced
1/4 cup fresh parsley, chopped
1 1/2 cups dill pickles, sliced
2 cups tortellini (frozen)

Steps:

  • Combine tomato, sausages, tomato sauce, stock, onion, garlic, carrots, basil and oregano in a large pot and simmer (DO NOT BOIL) 30 minutes.
  • Add remaining ingredients and simmer slowly for another hour, adding more water as needed to cook tortellini.

3/4 pound beef cube steak, chopped
1 cup water
1 can (8 ounces) tomato sauce
1 small potato, peeled and cubed
1/2 cup sliced fresh carrot
1/2 small onion, cut into thin wedges
1/2 small sweet red pepper, chopped
1 tablespoon onion soup mix
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/2 cup frozen peas

Steps:

  • In a large saucepan coated with cooking spray, brown meat over medium heat for 5 minutes. Stir in the water, tomato sauce, potato, carrot, onion, red pepper, soup mix, Italian seasoning and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes. , Stir in peas; simmer 5-10 minutes longer or until vegetables are tender.

1 lb Italian sausage
2 (14 1/2 ounce) cans chicken broth
1 (16 ounce) bag stir fry vegetables
1 (15 ounce) can cannellini beans, rinsed and drained
14 1/2 ounces Italian-style diced tomatoes, undrained
1 cup macaroni, uncooked
1 cup mozzarella cheese, shredded

Steps:

  • heat dressing in saucepan on medium heat.
  • add sausage and cook 8-10 minutes, stirring occasionally and breaking up sausage.
  • add broth, veggies, beans and tomatoes.
  • bring to boil.
  • stir in macaroni.
  • reduce heat to medium & simmer 8-10 minutes.
  • ladle into 8 bowls and top with cheese.
