GRILLED BAHAMIAN LOBSTER TAILS
Sweet and buttery, grilled lobster tails.

Steps:
- Preheat grill to medium-high heat and oil grate.
- Cut the lobster tails in half lengthwise with a sharp knife. Combine melted butter and lemon juice in small mixing bowl. Brush mixture onto meat side of lobster tails. Lightly season with salt and fresh black pepper.
- Place lobster tail splits onto the grill shell side down and cook for 5-6 minutes. To create the grill marks on the lobster meat, flip tail splits for 15-20 seconds at end of cook time, being careful not to overcook. Remove from heat and serve immediately.
BUTTERFLIED LOBSTER TAILS
Butterflying lobster tails is a presentation common in restaurants. It is a little more complex method of cooking a lobster tail but it is well worth the effort for this spectacular presentation.

Steps:
- Defrost the lobster tails.
- Preheat the oven to 450 degrees.
- Using kitchen shears cut down the center of top of each tail down to the base. Next grab each side of the shell and gently pry the shell away from the meat- leaving the meat at the base of the tail attached. Squeeze the shell together to close the gap and lay the meat on top of the shell. Gently slice the meat 3 times down the top- enough to be able to lay the meat over the sides of the shell. Repeat for the remaining tails.
- Place the tails in an oven safe pan and brush the top of each tail with the marinade. You will want to baste the tails again 2 or 3 times during the cooking process.
- Bake the tails for about 25 minutes. Cooking times may vary so make sure you keep an eye on the tails!

Steps:
- Holding each lobster tail shell side down, cut away the ribbed membrane as close to the shell as possible with kitchen shears, remove the lobster meat in one piece from each shell, and rinse and pat dry the shells.
- Devein the pieces of lobster meat if necessary, rinse and pat them dry, and sprinkle them with the lemon juice.
- In a small saucepan melt the butter with minced garlic and remove the pan from the heat.
- In a shallow bowl stir together well the bread crumbs, the salt, the pepper, the herbs, the garlic powder, the cayenne and the Parmesan cheese.
- Roll the pieces of lobster meat in the garlic butter, dredge them in the bread crumb mixture and return them to the shells.
- Grill the lobster tails, shell sides down, on a rack set 4-6-inches over glowing coals, turning them occasionally from side to side, for 10 minutes.
- Cover the grill and grill the lobster tails for 5-10 minutes more, or until they are just cooked through.

SPICE RUBBED BAHAMIAN LOBSTER TAIL WITH RED CHILE-COCONUT SAUCE
Steps:
- For the sauce: Heat oil in a medium saucepan over high heat. Add the onion and cook until soft. Add the garlic, ginger and chile de arbol and cook for 1 minute.
- Add the stock and roasted red pepper puree, and cook until reduced by half. Add the coconut milk and cook again until reduced by half, stirring occasionally. Add the lime juice, honey and cilantro and season with salt and pepper.
- Remove from the heat.
- For the lobster tails: Whisk together all spices in a medium bowl.
- Bring a large stockpot filled with salted water to a boil. Add the lobsters and parboil lobsters for approximately 12 minutes.
- Remove and place in a bowl of ice water. Drain well. Remove the meat
- from the tail and cut into 1-inch pieces. Dredge the lobster meat in spices and tap off the excess.
- Heat a few tablespoons of oil in a large saute pan over high heat until shimmering. Add the lobster and cook until golden brown on all sides.
- Ladle some of the Red Chile-Coconut Sauce onto a large platter and top with the lobster meat. Garnish with cilantro leaves.
GRILLED SPINY LOBSTERS WITH BAHAMIAN CURRY SAUCE
Steps:
- In a small bowl, combine all of the spices. Transfer to a sealed container and store for up to 1 month.
- Bahamian Curry Sauce:
- For Bahamian Curry Sauce:
- Heat the oil in a medium Dutch oven over high heat. Add the onions and ginger and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute. Stir in the Mesa Curry Mix and cook for 2 minutes.
- Add the white wine and cook until reduced by half. Add the lobster stock and coconut milk and cook until reduced by half, stirring occasionally, about 10 minutes. *Transfer the mixture to a blender and blend until smooth. Strain into a small saucepan and cook to a sauce consistency. Season with honey, salt and pepper, to taste, and fold in the cilantro. Keep warm.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
- For Spiny Lobsters:
- Preheat the grill to high.
- In a pot fitted with a steamer insert, steam the lobster tails until just beginning to become opaque. Remove the tails from the steamer, brush with the oil and season, to taste, with salt and pepper. Place 2 skewers, lengthwise, into each tail so the tails will lie flat on the grill. Grill flesh side down for about 10 minutes or until marked and just cooked through. Serve with the Curry Sauce.
