Here's a simple sausage gravy with an Italian flair that's served over hot biscuits.

½ cup onion, diced
1 (16 ounce) jar Classico Fresh Four Cheese Alfredo Sauce
3 fresh sage leaves, finely chopped
⅛ teaspoon freshly ground black pepper
¼ cup chopped green onion
1 (10 ounce) can refrigerated biscuit dough, baked according to package instructions

Steps:

  • Cook sausage in a large skillet over medium heat until no longer pink, following cooking instructions indicated on the packaging. Add diced onions and continue to cook until onion softens and turns transparent. Drain fat.
  • Stir in the Alfredo sauce, sage and black pepper. Bring to a simmer, stirring occasionally; reduce heat and simmer for 10 minutes.
  • Serve over fresh biscuits and top with green onion.

2 tubes (12 ounces each) refrigerated buttermilk biscuits, divided
1-1/3 cups chopped sweet red peppers
8 large eggs, lightly beaten
3/4 cup 2% milk
1/2 cup minced fresh parsley
1-1/2 cups shredded Monterey Jack cheese
1 tablespoon butter
2 teaspoons dried oregano

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Arrange 10 biscuits in a greased 13x9-in. baking dish. Sprinkle sausage and red peppers over the biscuits. In a large bowl, whisk the eggs, milk and parsley. Pour over sausage. Sprinkle with cheese., Bake, uncovered, at 350° for 20 minutes. Top with remaining biscuits. Brush biscuits with butter and sprinkle with oregano. Bake 15-20 minutes longer or until biscuits are golden brown and a knife inserted in the egg mixture comes out clean. Let stand for 5 minutes before serving.

2 teaspoons plus 3 tablespoons olive oil, divided

8 cups chopped fresh kale (about 5 ounces)
3/4 teaspoon salt
1/4 teaspoon pepper
Shredded Romano cheese

Steps:

  • Cook pasta according to package directions, decreasing time by 3 minutes. Drain, reserving 2 cups pasta water. Toss pasta with 2 teaspoons oil., In a 6-qt. stockpot, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking sausage into large crumbles. Add garlic and remaining oil; cook and stir 2 minutes. 1 1/2 lbs Italian sausage (mild or hot)
olive oil (optional)
2 onions, coarsely chopped
3 garlic cloves, minced
1 large sweet red pepper, coarsely chopped
28 ounces meatless extra chunky pasta sauce
213 ml can tomato sauce
1 teaspoon dried basil
1 teaspoon oregano
1 teaspoon fennel seed
5 cups penne pasta
1 (284 g) package fresh spinach (trimmed and coarsely chopped)
3 cups shredded provolone cheese or 3 cups mozzarella cheese
1 cup grated asiago cheese or 1 cup parmesan cheese

Steps:

  • Cut sausage into 1/2 inch chunks. I large skillet, brown sausage over medium-high heat, in batches and adding oil if necessary. Transfer sausage to a bowl.
  • Pour off any fat from pan. Add onions, garlic and red pepper, cook over medium heat, stirring occasionally, for about 5 minutes or until softened. Stir in pasta sauce, tomato sauce, basil, oregano and fennel seeds; bring to a boil, stirring and scraping up any brown bits from bottom of pan. Return sausage and any accumulated juices to pan; cover and simmer for 15 minutes or until sausage is firm throughout.
  • Meanwhile, in a large pot of boiling salted water, cook pasta for 6 minutes, add spinach;cook for 1 minute. Drain well and return to pot. Add sausage mixture and provolone/mozzarella cheese; stir to combine well.
  • Transfer to 2 greased 8-inch square baking dishes or 1 13x9-inch dish. Sprinkle with Asiago/parmesan cheese. Cover dish with greased foil, greased side down.
  • To serve: Bake, covered with foil, in in 375 degree F. oven for 30 minutes or for 1 hour if from the refrigerator. This freezes beautifully (thaw in refrigerator before baking).

Cut Italian sausage into 2" pieces. Bake in oven 30 minutes. In the meantime cut onions into 1/4 slices. Slice bell peppers into 1/2" slices. Saute onions in olive oil just until tender; set aside. In same skillet, saute bell pepper slices just until tender. Add drained tomatoes, Italian seasoning and pinch sugar to pan; stir to mix.
