ITALIAN SAUSAGE AND PEPPERS ON TOASTED GARLIC BUNS



Italian Sausage and Peppers on Toasted Garlic Buns image

Number Of Ingredients 18

6 - 8 links of sweet, mild Italian sausages (or if you can find it, Italian turkey sausage)
1/4 cup extra-virgin olive oil
8 - 10 cloves of garlic, sliced into slivers, not minced or pressed
1 lb. crimini or baby portabello mushrooms, cleaned with a cloth, stem ends trimmed, and sliced
2 large yellow onions, cut in half and then sliced
2 green peppers, cored, seeded, and sliced into 1/2? wide strips
2 red peppers, cored, seeded, and sliced into 1/2 " wide strips
1 yellow pepper, cored, seeded, and sliced into 1/2? wide strips
1 8 - 15 oz. can of crushed tomatoes
2 Tbsp. tomato paste (to thicken the sauce; add more if you like it much thicker)
1 tsp. dried oregano
1/2 cup fresh basil, chopped
1/4 to 1/2 cup Marsala or red wine (optional)
2 pinches crushed red pepper flakes (optional)
Freshly ground sea salt and black pepper to taste
Italian submarine/hoagie buns
butter
garlic powder

Steps:

  • Instructions
  • Poke the sausages all over with a fork.
  • In a large, deep, heavy skillet, pour in the extra virgin olive oil, heat on medium heat.
  • Place the sausages in and cook until fairly brown.
  • Add the garlic to the sausages when they are not fully cooked, but fairly golden brown, so that the garlic does not burn from cooking too long.
  • Place the sausages into a large (13 x 9?) baking dish, draining the oil to stay in the skillet.
  • Place the sausages in a pre-heated 400 degree oven to stay warm while cooking the peppers and onions.
  • Add the sliced onions to the hot left-over olive oil in the skillet.
  • Cook onions until browned and caramelized, but still crunchy, 6 minutes.
  • Add mushrooms to the cooked onions until browned and caramelized, 6 minutes.
  • Add the cooked onions and mushrooms to the sausages in the oven, draining the oil from them to be left in the skillet to saute' the peppers.
  • Add more olive oil to the pan if there is not enough.
  • Add all of the peppers and saute' 6 minutes; keep them at a nice level of crunchiness, not wilted or soft.
  • Remove the sausages, onion, and mushrooms from the oven.
  • Add the peppers to the sausage, onions, and mushrooms to the sausage mixture.
  • Add the oregano, basil and red pepper flakes; blend well
  • Add tomato sauce and wine at this point and carefully blend together.
  • Salt and pepper to taste.
  • Return to the 400 degree oven and bake uncovered for 20 minutes.
  • While baking, melt a stick of butter.
  • Add garlic powder to the melted butter to your preference level, about a Tablespoon.
  • Blend well.
  • With a pastry brush, thoroughly and heavily brush on the garlic butter on both sides of the hoagie/submarine buns.
  • After the sausage, peppers, and onions are done baking, turn on the BROILER.
  • Place the buns under the broiler for about 2 - 3 minutes and watch them so they do not burn!
  • When golden brown, remove from the oven.
  • Place a sausage on each bun and smother with the peppers, mushrooms, and onions!

1 package precooked Italian chicken or turkey sausage (cut into 1/2-inch rounds (12 ounces))
1 medium red bell pepper (sliced into 1/4-inch strips)
1 medium yellow bell pepper (sliced into 1/4-inch strips)
1 small yellow onion (sliced into 1/4-inch strips)
3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
2 garlic cloves (minced (about 2 teaspoons))
1/2 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (plus additional to taste)
Optional for serving: (thinly sliced fresh basil, chopped fresh parsley, freshly grated Parmesan cheese)

Steps:

  • Preheat the oven to 400 degrees F. For easy clean up, line a large, rimmed baking sheet with parchment paper.
  • Arrange the cut sausage, bell peppers, and onions in the center of the pan.
  • Drizzle with the olive oil and red wine vinegar, then sprinkle with the garlic, salt, basil, oregano, black pepper, and red pepper flakes. Toss to combine, then arrange in a single layer.
  • Bake for 25-35 minutes, until the peppers are as tender as you like, tossing once halfway through. Remove from the oven and serve hot.

12 Italian sausages, hot
1 cup olive oil
4 tablespoons red wine vinegar
2 teaspoons dried oregano
2 teaspoons basil
2 teaspoons sugar
12 drops hot pepper sauce
3 red peppers, cleaned and quartered
3 yellow peppers, cleaned and quartered
3 green peppers, cleaned & quartered
2 -3 loaves French baguettes or 12 submarine buns
honey mustard

Steps:

  • Prick the sausages, cover with water and simmer 5-6 minutes, cool in cold water, pat dry and slice in half leaving them joined in the center.
  • Heat BBQ medium-hot.
  • Combine olive oil,vinegar, oregano, basil, sugar& hot pepper sauce.
  • Grill the sausages and the pepper quarters basting with the oil mixture.
  • BBq until the sausages and peppers are rich golden color 14-18 minutes.
  • Split the buns/bread in half and if using bread cut into serving sizes, leaving them joined at the middle and brush with the oil mixture.
  • Remove sausages and keep warm.
  • BBQ the oiled bread toast 2-3 minutes.
  • Slip a sausage in the bun and a piece of each of the peppers, some mustard and Mmmmm.

My Grandfather Joey used to make these sandwiches, they were so good. But they are even better on toasted garlic bread! Note: You can mix sweet and hot sausage, or all hot.

2 lbs sweet Italian sausage, sliced into 4 inch rounds (keep frozen until ready to slice, makes it much easier to slice)
2 red peppers, washed, cored, seeded and sliced into 1/4 inch strips
2 green bell peppers, washed, cored, seeded and sliced into 1/4 inch strips
2 medium onions, peeled and sliced into 1/4 inch strips
2 large garlic cloves, finely chopped
1/4 cup olive oil
2 potatoes, peeled and diced into small cubes
salt & freshly ground black pepper
2 loaves fresh Italian bread, each loaf cut in 3 equal size pieces, then sliced the bread in half horizontally
6 garlic cloves, finely chopped
1 teaspoon garlic powder
1 cup olive oil
2 tablespoons unsalted butter
1 tablespoon dried Italian seasoning
salt and pepper

Steps:

  • Put potatoes in pot of cold salted water over med/high heat. Bring to boil then cook for 15 to 20 minutes. Drain and set aside.
  • In large deep saute pan over med heat, add sausage, season with a pinch of salt and pepper. Cook until sausage are golden brown stirring occasionally.
  • Add peppers, onions, potatoes, garlic, olive oil and salt and pepper to taste. Cook for 10 minutes stirring occasionally.
  • Reduce heat to low, cover and cook for 30 minutes stirring occasionally.
  • For Garlic Bread:.
  • Preheat oven to 350 degrees F.
  • Heat a small sauce pan over med heat, add olive oil, butter and garlic, cook for 1 minute.
  • Remove from heat, add Italian seasoning, garlic powder, salt and pepper to taste. Stir to combine.
  • Spread the garlic mixture evenly on all sides the bread with a pastry brush or spoon. Put the halves together and wrap in aluminum foil.
  • Place bread in the oven and bake for 5 minutes, open foil and bake for additional 5 minutes.
  • Pile the sausage, peppers, onions and potatoes into the garlic bread and serve.

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.
