Coarse salt and ground pepper
1/3 cup olive oil
2 tablespoons white-wine vinegar
1 teaspoon Dijon mustard
2 cups quartered cherry tomatoes
1/2 cup sliced scallions
1/2 cup crumbled feta cheese

Steps:

  • Cook beans in a large pot of boiling salted water until crisp-tender, 6 to 8 minutes. Drain in a colander; run under cold water to stop cooking.
  • Whisk oil with vinegar and mustard; season with salt and pepper.
  • Toss beans with vinaigrette, tomatoes, scallions, and feta.

1 ½ pounds fresh green beans
1 sweet onion, peeled
2 cloves garlic, chopped
½ cup rice wine vinegar
½ cup apple cider vinegar
⅓ cup canola oil
1 tablespoon white sugar
¾ teaspoon salt
ground black pepper to taste
1 dash hot sauce
1 dash Worcestershire sauce
4 ounces feta cheese, crumbled

Steps:

  • Thinly slice the onion and place into a colander over the sink. Add the cleaned green beans to a large pot of boiling water and boil until crisp tender (about 4 minutes). When the beans are done, drain the water into the colander to slightly cook the onions. Immediately rinse all in cold water to stop the cooking process.
  • For the dressing: In a large bowl, whisk together the garlic, rice wine vinegar, cider vinegar, oil, sugar, salt, pepper, hot sauce and Worcestershire sauce. Add beans, onions and cheese and stir until combined. Place in a nonreactive container and refrigerate for at least 4 hours. Enjoy!

8 ounces haricot vert, trimmed
12 fingerling potatoes
1 tablespoon kosher salt
6 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
2 tablespoons Dijon mustard
1 tablespoon clover honey
Salt and freshly ground black pepper
1 cup extra-virgin Greek olive oil, plus more for drizzling
Canola oil, for grilling
8 ounces feta, crumbled
1/2 cup pitted kalamata olives
2 tablespoons lightly chopped fresh oregano
Fresh parsley leaves, for garnish

Steps:

  • Bring a large pot of salted water to a boil and cook the haricot vert until al dente, about 90 seconds. Shock in ice water, drain well, chop in halves or thirds and reserve.
  • Put the potatoes in a large pot, cover with 2 inches cold water and add 1 tablespoon salt. Bring to a boil and cook until a small knife inserted into the center of the potato meets with some resistance, about 5 minutes. Drain well, place on a baking sheet and let cool slightly. Halve lengthwise.
  • Whisk the vinegar, lemon juice, mustard, honey and salt and pepper. Slowly whisk in the olive oil until emulsified.
  • Heat the grill to medium heat. Toss the potatoes with canola oil and sprinkle with salt and pepper. Grill until golden brown in spots, tossing occasionally, about 5 minutes. Remove and toss with some of the vinaigrette.
  • Combine the potatoes, green beans, feta cheese, olives and oregano in a bowl. Toss with more of the vinaigrette, taste and season with salt and pepper if necessary. Scatter the parsley leaves over the top and drizzle with a bit more olive oil.

3 tbsp olive oil
2 x 400g can chickpeas , rinsed and drained
1 garlic clove , roughly chopped
7 sundried tomatoes in oil, drained
2 whole roasted red peppers from a jar
1 tbsp sherry vinegar
200g pack feta cheese , broken into chunks

Steps:

  • Heat oven to 200C/180C fan/gas 6. Spread the beans onto a baking tray, season and drizzle over 1 tbsp oil. Roast for 10 mins until lightly charred. Tip into a bowl with the chickpeas.
  • In a food processor, make a dressing by whizzing together the garlic, sundried tomatoes, peppers, vinegar and the remaining oil. Season, stir into the beans with the feta and serve.

3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon sugar

1/2 cup chopped red onion
1/2 cup crumbled feta cheese

  • 1. Cook green beans in boiling salted water to cover 8 minutes or until crisp-tender. Drain and plunge into ice water to stop the cooking process; drain and pat dry. Place in serving bowl; cover and chill at least 2 hours.

1 red onion, thinly sliced
1 1/2 cups toasted chopped walnuts
1/2 cup white wine vinegar
3/4 cup olive oil
1 cup feta, crumbled

  • Bring a large pot of water to a boil over high heat and season with a large pinch of salt. Add the green beans and cook for 3 to 4 minutes until tender but still crisp. Transfer to a boil of iced water to cool and then drain and pat dry.

1 ½ Tablespoons/22ml fresh lemon juice
1 ½ Tablespoons/30ml extra virgin olive oil
1 teaspoon/5ml raw honey
½ teaspoon sea salt
1/8th teaspoon freshly ground black pepper
Strips of lemon zest from one small or half a large lemon (use a peeler to make strips), cut into thin slivers
½ cup, roughly chopped flat leaf parsley
4 oz/113g feta cheese, (preferably sheep's milk) cut into chunks
4-6 fresh figs, cut into large chunks
1/3 cup/37g almonds, toasted and roughly chopped
3 Tablespoons/30g shelled hemp seeds

Steps:

  • Prepare an ice bath by filling a large bowl with ice and water and set aside. Bring a large pot of salted water to a boil. Add green beans and cook for 1-2 minutes (until just tender), then strain and plunge the beans into the ice water. Gently pat dry between two clean kitchen towels and set aside while making the dressing.
  • In a large bowl, whisk together lemon juice, olive oil, honey, salt and pepper. Add the green beans to bowl and toss.
  • Add the chopped parsley, feta cheese, figs, toasted almonds, and hemp seeds and gently toss to combine. Season to taste and serve.

1 small purple onion, thinly sliced
4 ounces crumbled good quality feta cheese
1 cup coarsely chopped toasted pecans
1/2 cup olive oil
1/4 cup champagne vinegar
4 -5 drops good balsamic vinegar, to taste
1 tablespoon chopped fresh basil
2 cloves garlic, minced
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste

Steps:

  • Trim the ends (and strings, if you like) from the green beans, then snap or cut them into thirds.
  • Using a steamer basket in a pan, cover and cook for 15 minutes or until crisp-tender; plunge the cooked beans into cold water to stop the cooking process, then drain and pat dry.
  • Toss together the cooked green beans, sliced onion, feta, and pecans in a large bowl; cover and chill in refrigerator for at least 1 hour.

  • Bring a large pot of salted water to a boil.

8 slices bacon - cooked, crumbled and divided
1 (16 ounce) package frozen cut green beans
1 teaspoon minced garlic
4 ounces crumbled feta cheese, divided
½ teaspoon onion powder
⅛ teaspoon ground black pepper
2 tablespoons water

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned but only slightly crisp. Drain grease, leaving a small amount in the skillet for later use. Crumble bacon, reserving 2 tablespoons for garnish, and set aside.
  • Cook frozen beans in a covered, microwavable dish for about 3 minutes until thawed, but not fully cooked. Drain liquid, pat dry, and set aside.
  • Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic until garlic is lightly golden. Add green beans and feta cheese, and season with onion powder and black pepper. Cook and stir until most of the feta cheese has melted, about 2 minutes. Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon. Serve hot.

8 ounces dried rotini pasta (or any similar size pasta)
1 lb medium cooked shrimp, peeled and deveined
2 -4 tablespoons chopped fresh dill

1 tablespoon lemon juice
4 ounces crumbled feta cheese
salt

Steps:

  • Have ready a large bowl of ice water.
  • In pot of boiling salted water, cook green beans until they turn bright green and start to soften.
  • Transfer beans to ice water immediately. When cool, drain them and pat them dry with a clean towel.
  • Meanwhile, prepare pasta according to package directions (cook until al dente.).

1/2 cup thinly sliced fennel
1 tomato, halved, seeded and sliced
3/4 cup crumbled feta cheese
1/3 cup KRAFT Zesty Italian Dressing

Steps:

  • Bring water in medium saucepan to boil. Add beans; cook 7 min. or until crisp-tender. Drain. Rinse with cold water. Place in medium bowl.
  • Add remaining ingredients; toss to coat.
  • Serve immediately. Or, cover and refrigerate several hours or until chilled.

1 teaspoon dill weed
2 cloves garlic, minced
1/2 teaspoon salt

1 cup chopped pecans
1/2 cup chopped red onion
1 cup feta cheese

Steps:

  • Cook beans tender crisp.
  • Chill at least one hour.
  • Combine oil, vinegar, garlic, dill, salt& pepper and blend well.
  • Add pecans and red onion to beans.
  • Add dressing and toss.

½ teaspoon fennel seeds
Salt and pepper, to taste
⅓ cup dried cranberries

Steps:

  • In a medium-size bowl, combine greens, beans and cheese. Add oil, vinegar, juice, fennel seeds, salt and pepper; toss. Sprinkle with dried cranberries, if desired.

6 large tomatoes , roughly chopped
100g feta , cubed
1 tbsp olive oil

Steps:

  • Boil a pan of water. Once boiling, add the beans and cook for 4 mins until tender. Drain the beans, then mix with the tomato and feta. Drizzle over the olive oil and season generously with black pepper.

  • Start with a large skillet over medium heat. Add the almonds and cook, stirring frequently (careful, they burn quickly). After 3 minutes, reduce the heat to medium-low, and continue stirring until they are fragrant and turning golden on the edges, about 1 to 3 more minutes. Transfer the almonds to a bowl to cool.
  • Make sure the heat is set to medium-low and place the skillet back on the heat. Immediately add the green beans, water and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until the beans are nearly tender, about 7 to 10 minutes. Remove the lid, raise heat to medium-high, and cook until the liquid evaporates, 2 to 5 minutes. Remove the skillet from the heat and set aside.
  • Meanwhile, whisk together the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes and remaining 1/4 teaspoon salt. Set aside.
  • Once the green beans are done cooking, whisk the olive oil mixture once more, then pour it into the skillet. Pour the almonds back into the skillet, and add about half of the feta, reserving the other half for garnish. Toss to combine, then taste and add more lemon juice or black pepper if necessary.

  • Cut green beans into 1-inch pieces, and slice tomatoes into halves or quarters, depending on size.
  • To make the dressing, mix olive oil, vinegar and a pinch of kosher salt and cracked black pepper. (I like to put this in a small plastic container with a lid and just shake the dickens out of it to combine. But whisking works too.)
