- Cook Pasta: Cook the pasta according to package instructions. Drain and transfer to a large bowl.
- Preheat oven to 350 F degrees.
- Make Sauce: Crumble the sausage meat into a large skillet over medium heat and brown, stirring often for about 5 minutes, until it's no longer pink.
- Add the onion, pepper and continue cooking for another 3 minutes, or until the onion and pepper have softened and the onion is translucent.
- Stir in the tomatoes, oregano, tomato paste, basil, thyme, fennel seeds, salt and pepper. Add the chicken broth and stir. Bring to a boil, reduce the heat and cook for another 20 minutes, stirring often as needed.
- Stir in the peas. Remove the sauce from heat.
- Toss penne with sauce: Pour the sauce over the cooked pasta and stir. Stir in about 1 cup of cheese.
- Assemble: Transfer the pasta to a large casserole dish. Top with remaining mozzarella cheese.
- Bake: Transfer the casserole dish to the preheated oven and bake until the cheese has melted and the casserole is bubbling, for about 20 minutes.
- Serve: Garnish with parsley or basil if desired and serve warm.

SAUSAGE AND PENNE SOUP

- Preheat oven to 400 degrees.
- In a large saucepan over medium heat, add sausage and cook until browned. Add onion and cook about 3 minutes, until soft. Add garlic and cook for 1 minute.
- Add whiskey, and scrape the bottom of the pan to remove brown bits. These bits are all flavor, and the alcohol will cook out!
- Add kale and cook for 2-3 minutes, until soft. Add broth and simmer for 15 minutes. Add beans, basil, parsley and water. Bring to a low boil. Add penne pasta and cook for about 15 minutes or until pasta is tender.
- Turn heat to low, and add spinach, fresh oregano and basil. Cook for an additional 3-4 minutes, until spinach wilts.
- Combine melted butter with flour creating smooth paste. Add mixture slowly to the soup and stir. Continue cooking on low until slightly thickened.
- Divide soup between 4 ovenproof bowls. Divide cheese evenly on top of each bowl. Bake for 5-7 minutes or until cheese is melted. Turn oven to broil and cook for an additional 2-3 minutes or until lightly browned.
- Be very careful, because cheese will be SUPER HOT! Let rest for about 5 minutes before serving.

- Put a large pan of water on to boil.
- Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
- Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
- Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.

- Bring large pot of salted water to a boil over high heat. Cook pasta according to package directions.
- In a large deep skillet over medium-high heat, add olive oil. Add onion, garlic, Italian seasoning mix and red pepper flakes, if using. Sir frequently and cook until the onions are soft and fragrant, about 3 to 4 minutes. Add sausage and cook for 1 minute. Add can of crushed tomatoes, stirring all the ingredients together to combine. - Soak the mushrooms in one-and-a-half cups hot water for 30 minutes.
- Meanwhile saute the onion and the garlic in the olive oil until soft. Add the sausage and brown lightly. Drain off any fat.
- Drain the mushroom through a coffee filter or cheesecloth, reserving the soaking liquid. Quickly rinse the mushrooms under the running water.
