8 ounces baby arugula
1/2 head radicchio, sliced thin crosswise
1 endive, sliced thin crosswise
Lemon Vinaigrette:
1/3 cup freshly squeezed lemon juice
2/3 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 pound chunk of Italian Parmesan cheese

Steps:

  • Place the arugula, radicchio and endive in a medium bowl.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour enough dressing on the salad to moisten. With a very sharp knife or a vegetable peeler, shave the Parmesan into large shards on top of the salad. Toss gently and serve immediately.

4-6 ounces grilled chicken breast strips ((fully-cooked, heated throughout))
3-5 tbsp red wine vinegar
2 small garlic cloves ((finely chopped))
1 large fennel bulb ((sliced))
1/2 tbsp coconut oil
1-2 small heads of radicchio ((sliced or chopped to yield to cups))
1 1/2 tsp sea salt ((divided, plus more to taste if needed))
1/2 tbsp lemon juice
1-2 tsp fresh tarragon leaves ((torn to garnish))

Steps:

  • Place the fully cooked grilled chicken strips in a skillet over medium-high heat and cook 3-5 minutes, or until strips are heated through. Remove chicken from heat and set aside.
  • Wipe out the skillet and place it over medium heat. Add in 1⁄2 tablespoon coconut oil and allow it to heat up. Add in the chopped garlic; sauté 1 to 2 minutes or until fragrant. Add in the sliced fennel, season with 1 teaspoon sea salt, or to taste. Sauté for 2 to 3 minutes or until the fennel is slightly softened.
  • Add in the sliced radicchio; season again with 1⁄2 teaspoon sea salt, or to taste. Sauté 1 to 2 minutes more or until radicchio begins wilting and turning brown in spots. Remove from heat immediately and add a splash of lemon juice.
  • To serve, place the radicchio/fennel salad mixture on a serving plate and top the grilled chicken strips, and a few of the torn tarragon leaves. Finally, drizzle the salad with red wine vinegar; season with additional sea salt, if needed, to taste, then serve immediately.

1 fennel bulb
1 ounce black olives
1/4 cup lite olive oil (or other veggie oil)
1 tablespoon fresh lemon juice
1 anchovy, filet
3 black olives, pitted
salt & pepper
1 pinch sugar

Steps:

  • Clean the fennel Bulb, cut off the top leaves and the rough bottom.
  • Cut the bulb into 1/2" strips.
  • Arrange Lettuce, olives and fennel artistically on a serving plate.
  • Combine in a blender or food processor the dressing ingredients, blend& process 10 seconds.
  • Season with salt and a dash of sugar.
  • Pour over the salad& serve.

The combination of sweet fennel, bitter radicchio and salty anchovy is a winning one. Look for fennel with the tops still attached and firm, pale green bulbs. As for anchovies, any type will work, but spend a bit more for a better brand of anchovies, packed in glass jars. (Anchovies from Spain are quite good.) If using tinned supermarket anchovies, rinse the fillets and pat dry before using to mute their fishiness.

3 medium fennel bulbs, topped and trimmed, fronds reserved for another use
Salt and black pepper
3 tablespoons extra-virgin olive oil
2 tablespoons lemon juice (from 1 small lemon)
1/4 teaspoon grated lemon zest
1 small garlic clove, grated or smashed to a paste
1 medium head radicchio (about 12 ounces)
3 large eggs (cooked 8 minutes), cooled in ice water and peeled
4 to 6 anchovy fillets, preferably the best quality you can find, rinsed, patted dry and halved

Steps:

  • Using a sharp knife or a mandoline, slice fennel crosswise 1/8-inch thick. Place slices in a wide salad bowl, and season with salt and pepper to taste. Add olive oil, lemon juice and zest, and garlic. Toss everything together, coating the fennel well. Taste for salt and adjust. (This can be done up to 30 minutes ahead.)
  • Remove and discard any wilted outer leaves of radicchio. Separate tender leaves, tearing large ones into smaller pieces.
  • To finish the salad, quarter the eggs. Add radicchio to the salad bowl and sprinkle very lightly with salt. Toss together radicchio and fennel, coating everything well. Garnish with quartered eggs. (Yolks should have a moist center.) Top eggs with the anchovy fillets.

150 g gorgonzola

Steps:

  • Cut off the fennel leaves and reserve for the garnish. Wash the fennel, remove the hard core and thinly slice the bulb. Put into a bowl. Wash and trim the radicchio, shred, but not too finely, and add to the bowl.
  • Roughly chop the walnuts, dice the Gorgonzola and add both to the salad. Roughly chop the parsley. Make a dressing from the oil, lemon juice, vinegar, honey and parsley.
