Steps:
- Remove casings from sausage. In a large skillet over medium-high heat, cook and crumble sausage until no longer pink. Add onion and peppers; cook until crisp-tender. Drain and transfer to a 6-qt. slow cooker., Add the next 5 ingredients; pour in broth. Cook, covered, on low until vegetables are tender, 6-8 hours. Serve with croutons and cheese.

- In a large saucepan, heat oil over medium heat. Saute mushrooms and onion in oil for 2 to 3 minutes, or until tender.
- Mix in water, pizza sauce, pepperoni, tomatoes, sausage and Italian seasoning. Cover, and bring to a boil. Reduce heat; cover, and simmer for 20 minutes, stirring occasionally.
- Before serving, stir in Parmesan cheese. Garnish with mozzarella cheese.

Steps:
- Heat olive oil in a large saucepan.
- Saute the onion and green pepper until softened.
- Stir in the garlic and cook for a minute.
- Add the oregano, basil, rice, tomatoes and broth, and bring to a boil.
- Turn down heat and place cover on saucepan.
- Simmer for 20 minutes or until rice is tender.
- Stir in the pepperoni, and sprinkle with the cheese.
- Continue cooking for another minute or two.
- Serve, and add an extra sprinkling of Parmesan cheese, if desired.

PEPPERONI PIZZA SOUP

- Add the pepperoni to a soup pot over medium-high heat and cook, stirring occasionally, until the pepperoni render their fat and get crispy, 3 to 4 minutes. Remove the pepperoni with a slotted spoon and drain on paper towels. Set aside.
- Lower the heat to medium; add the mushrooms, garlic, onions, oregano and 1 teaspoon salt. Cook, stirring, until the vegetables soften and the mushrooms release their liquid, 6 to 7 minutes. Add the broth, marinara sauce and Parmesan; cover the pot and bring to a boil. Reduce the heat to medium and cook, about 15 minutes.
- Position an oven rack in the center of the oven and preheat the broiler to medium-high. Put the bread on a baking sheet. Brush the bread with the oil and sprinkle with 1/4 teaspoon salt. Broil the bread until crisp and brown, 1 to 2 minutes. Flip the bread and sprinkle with 1 cup mozzarella. Broil until the mozzarella melts and is brown and bubbly, about 2 minutes.
- Ladle the soup into 8 serving bowls. Sprinkle each bowl with the remaining 1/2 cup mozzarella, then top each with a bread half, melted-cheese-side up, and some of the pepperoni. Sprinkle with some Parmesan and basil if desired.
REAL ITALIAN PIZZA DOUGH
Pizza dough as it is made in Italy. When I first moved to Italy, I was surprised to see that deciding to eat a pizza for dinner meant whipping up pizza dough with a few common ingredients a couple of hours before. Using fresh, compressed yeast, it rises in an hour. Stretchy, chewy, and so full of flavor, there's no need to order out. This dough works for calzone as well as focaccia, and the recipe doubles perfectly!

- Preheat the oven to the lowest setting possible.
- Combine 4 cups flour and salt in the bowl of a stand mixer fitted with the dough hook attachment; turn mixer on low speed. Crumble yeast into small pieces and add to the flour. Slowly pour in water. Scrape the sides to make sure all flour is incorporated and mix until dough begins to pull away from the sides and form a ball. Drizzle in oil and mix until fully incorporated.
- Knead on low speed for 5 or 6 minutes, adding 1 to 2 tablespoons extra flour if needed. Remove dough from the bowl and use your hands to form a ball. Return dough to the bowl and score the top with an "x." Cover with a damp cloth.
- Turn oven off and place dough in the oven to rise for at least 1 hour, or up to 8 hours.
- Remove dough from the oven and reattach the bowl to the stand mixer. Uncover and punch down dough. Knead on low speed for 5 minutes.
- Meanwhile, place a pizza stone or tray on the bottom oven rack and preheat oven to 450 degrees F (230 degrees C).
- Cut dough into 4 equal pieces and roll each one into ball. Dust with flour if needed. Place balls on a sheet pan and cover with a damp cloth. Roll out each ball into a 9-inch circle and top with desired toppings (no more than 1 cup sauce per pizza).
- Place pizza on the pizza stone in the preheated oven. Immediately lower the temperature to 410 degrees F (210 degrees C) and bake for 10 to 12 minutes; actual length of time will depend on your toppings. Repeat to make remaining pizzas.

- How to make the dough:
- Mix flour and salt in a bowl. In a food processor fitted with a metal blade, pour the mixture. Combine the warm water and sugar in a measuring cup. Sprinkle the yeast over the warm water. Let stand until foamy in appearance, about 5 minutes. Pour the water and oil into the food processor. Process until the mixture becomes a ball.
- Remove the dough from the food processor and put on lightly floured surface. Slightly knead until smooth. Put in a greased bowl and let rise in a warm place (about 45 minutes).
- Punch down the dough and let rise for another 45 minutes.
- Divide the dough into 6 equal pieces. Roll each piece on a clean surface, with a bit of flour if necessary, to a 6-inch circle.
- Meantime, dust 2 sheet pans lightly with cornmeal. Place the dough disks on the prepared sheet pans and top with sauce and toppings.
- preheat oven to 500F. Now, youâre ready to do the toppings.
- Brush dough with tomato paste the add sundried tomatoes. Distribute evenly all topping ingredients except cheese. Put a dash of salt and pepper.
- Add cheese. Bake for 12 - 15 minutes.

If you are a soup person like me, you're always on the lookout for new things to try. Well, here's a new one on me too! It's a delicious way of low-carb pizza eating. The noodles are a great sub in for the crust, especially if you use whole wheat noodles. Fortunately, I don't have to worry about that. If you're not low-carb'n it, whip up some bread sticks or garlic bread to serve along side this. Oh, if sausage or any of the other "pizza toppings" aren't to your liking, sub in your favorite pizza toppings such as pepperoni.

This is a quick go to soup on a chilly day. It's quick, it's easy, and it tastes great. My husband who tends to be a picky eater (Yuck) was not too sure about it at first. Now it is his favorite. It doesn't get any easier than this.

- Bring broth and one cup water to a boil in a large saucepan.
- Add pasta and meatballs.

- Brown the sausage until not longer pink about 8 minutes.
- Drain well in a colander and pat off excess grease with paper towel.
- Place into the crock pot.

- 1. Pour 3 quarts of water into a large pot. Then add Italian sausage links, and boil for at least 10 minutes.
- 2. Remove links from pot, onto a platter and cut on the diagonal, and set aside.
- 3. Add the chopped celery, onions, bell pepper, & minced garlic to water and bring to a boil.
- 4. Add rotini noodles to boiling water, along with pasta sauce, diced tomatoes, mushrooms, pepperoni, sliced sausages, oregano, basil, & sugar, and cook till noodles are al dente, about 8 to 10 minutes. Stir to prevent sticking.
- 5. Let simmer and add both shredded cheeses and stir till cheeses are melted.
- 6. Serve with tossed Garden salad, and Tomato Cheese Bread, see recipe for Rose Mary's Tomato Cheese Bread Squares.
- 7. NOTE: I used the same water that I boiled the sausages in to make the soup, because I wanted to maintain the full flavor of the Italian sausages in the soup.If you use the water, please skim off excess fat first or. You may drain water if you like but replace the same amount with fresh water & proceed with recipe..
