⅓ cup chopped green onions
¼ cup Italian seasoned bread crumbs
3 tablespoons grated Parmesan cheese
1 pound ground beef
1 (1 pound) loaf Italian bread, cut into 1-inch cubes
1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
1 teaspoon Italian seasoning
¼ teaspoon freshly ground black pepper
2 cups shredded mozzarella cheese
3 cups spaghetti sauce
1 cup water
2 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Mix together onions, bread crumbs, Parmesan cheese and ground beef. Roll into 1 inch diameter balls, and place in a baking pan. Bake for 15 to 20 minutes, or until beef is no longer pink. Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Arrange the bread cubes in a single layer in an ungreased 9x13 inch baking dish. Mix together the cream cheese, mayonnaise, Italian seasoning and black pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup of the grated mozzarella cheese.
  • In a large bowl, mix together spaghetti sauce, water, and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in the baking pan. Sprinkle the remaining mozzarella cheese evenly over the top.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until heated through.

1 recipe mashed potatoes
2 cups mozzarella cheese (shredded)
2 tablespoon fresh parsley (chopped)

Steps:

  • Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
  • Prep oven: Preheat the oven to 350°F.
  • Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).
  • Assemble casserole: Layer the mashed potatoes in the bottom of your casserole dish. Arrange the meatballs on top of the mashed potatoes evenly.
  • Bake: Transfer the casserole dish to the oven and bake for 20 minutes or until heated through. Sprinkle with mozzarella cheese evenly over the meatballs and bake for another 10 minutes or until the cheese has melted and starts to brown.
  • Serve: Garnish with parsley and serve warm.

1 bag(s) frozen shredded potatoes with onions and pepers, thawed and drained
2 c cheddar cheese, shredded
1 c sour cream with chives and onion
1/2 Tbsp dried italian seasoning
1/2 tsp peppered seasoned salt
1 can(s) concensedd cream of celery soup
12 frozen cooked italian meatballs, thawed

Steps:

  • 1. Heat oven to 350. Spray 11x7 inch (2 quart) baking dish with nonstick cooking spray.
  • 2. In medium bowl, combine potatoes. 1 1/2 cups of the cheese, the sour cream, Italian seasoning, peppered seasoned salt and soup; mix well. Spread in sprayed dish. Cover tightly with foil. Bake for 30 minutes.
  • 3. Remove from oven. Uncover; arrange meatballs in rows over potatoes, pressing in slightly. Sprinkle with remaining 1/2 cup cheese. Return to oven and bake uncovered an additional 20-25 minutes or until golden brown and hot in center.

This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.

Breadcrumbs, 70 grams (⅗ cup)
Grated cheese, 70 grams
Egg, 1
Extra virgin olive oil, 60 ml (¼ cup)
Salt, as much as is needed
Pepper, as much as is needed

Steps:

  • In a bowl, collect the minced meat, the grated cheese and the breadcrumbs; add the egg (1) and a pinch of salt and pepper.
  • Mix the ingredients, possibly adding a drop of water (2), until the mixture is homogeneous and soft.
  • Using an ice cream dispenser, take out many small portions of dough (3).
  • Shape into small balls a little bigger than a walnut and set them aside as you go (4).
  • Wash the potatoes, peel them and cut them into cubes (5).

5-6 medium size Yukon Gold potatoes* (washed under called water (no need to peel))
2 teaspoon kosher salt (divided)
½ cup cherry tomatoes (sliced thinly)
½ cup peppers (sliced thinly)
3 cloves of garlic (minced)
½ cup of Italian parsley (chopped plus more as garnish at the end)
2 tablespoons butter (cut into small cubes)
½ cup tomato sauce
¼ cup water

Steps:

  • Pre-heat the oven to 450 F degrees.
  • Prep your Turkish meatballs as directed in the recipe. Roll them into balls. For a 10-inch plate that is 2-inches wide, you will need 21 meatballs.
  • Slice each potato into 1/2 -inch thick slices. Season each slice with 1 1/2 teaspoons of kosher salt.
  • Place a slice of potato in the palm of your hand and put a meatball on top. Shape the meatball in a way that will be similar to the size of the potato. Place it on a large plate and continue with the rest of the potato slices and meatballs.
  • Arrange the potato slices and meatballs like I did in the video above, starting from the outer corners and ending in the middle. For a 10-inch plate, you should have 17 meatballs+potatoes and 3-4 in the middle.
  • Garnish with cherry tomatoes, peppers, garlic, and parsley. Spread cubed butter on top.
  • Mix tomato sauce, water, and rest of the salt in a cup. Pour the mixture over the meatballs and potatoes.
  • Cover it first with parchment paper and then with aluminum foil. Bake in the preheated oven for 55 minutes. Then remove the parchment paper and aluminum foil and bake for another 20 minutes.
  • Sprinkle it with more parsley and serve.

6 -8 garlic cloves, minced (I use food processor & finely mince garlic, onion & eggplant)
1 very large eggplant (or 2 Medium Sized Eggplants, peel 1st then dice in food processor)

1 1/2-2 cups Italian seasoned breadcrumbs
1/2 cup fresh parsley, chopped (I mince this in food processor too)
2 eggs, beaten

Steps:

  • In food processor, prepare the ingredients that need to be minced or diced mentioned above.
  • In a large saucepan, heat oil & gently sauté garlic until golden brown.
  • Add diced eggplant & water - then cover & simmer under low heat until eggplant is VERY soft. Drain if watery when done then transfer to large bowl.
  • Combine eggplant, breadcrumbs, parsley, eggs and cheese in large bowl. Let stand for 20 minutes.

4 medium potatoes (cubed)
1 pound ground beef
3 tablespoons breadcrumbs
3 tablespoons milk
1 cup water
1 packet brown gravy mix
2 tablespoons butter
1/2 cup milk

Steps:

  • Fill a large pot halfway with water. Add the cubed potatoes and cook at a gentle boil until tender, about 15 minutes.
  • Meanwhile, add the breadcrumbs and milk to a bowl and allow to soak until it turns into a paste.
  • Combine the ground beef with the paste and mix together thoroughly with your hands.
  • Form evenly sized meatballs, around 1 1/4 inch in diameter, compacting the meat into a sturdy ball.
  • Add the meatballs to a large skillet over medium-high heat. Allow them to brown on one side before turning them over. Attempt to evenly brown the balls on each side. This process takes about 10 minutes.
  • When finished, remove the meatballs from the pan. Add water to the pan and whisk in the brown gravy mix. Simmer until slightly thickened.
  • When the potatoes have finished cooking, drain the water. Mash the potatoes with a masher or hand mixer. Add butter and milk and stir well to combine.

  • In a large mixing bowl, combine the vegetables, garlic, oregano, salt and pepper. Drizzle 2 extra virgin olive oil and toss to combine. Transfer the vegetables to a large lightly oiled sheet pan and spread them out.
  • In the same large bowl, combine the meat, onions, garlic, parsley, oregano, mint, Parmesan, bread crumbs and egg. Season with a big pinch of kosher salt and black pepper. This is a great simple dish that requires little preperation but has a delicious rustic feel to it. When served, the potatoes and tomatoes become slightly crispy but still tender while the sausage meatballs and basil give that flavoursome final touch.

Steps:

  • Preheat the oven to 200C and in a roasting tin, place the potato slices along the bottom of the tin, creating a single but overlapping layer then add the red onion chunks and season with salt and lots of black pepper.
  • Mix together the passata, hot water, garlic and sugar in a bowl and then pour the mixture over the potatoes and onion. Roast in the oven for 30 minutes.
  • Meanwhile, cut the sausages into bite size pieces and then peel the skin from each piece to create a meatball - if you're using veggie sausages just break them up into chunks. Scatter the meatballs and the chilli flakes (if you're using them) over the potatoes and onion and continue to cook in the oven for another 15 minutes.
  • Top the potato bake with the parmesan and basil leaves and then roast for a final 5 minutes. Serve immediately with warm crusty bread and/or a green leaf salad.

This Delicious Hearty Meatball Stew is made with the perfect meatballs in a rich tomato sauce filled with potatoes, carrots & spices. So good!

1/4-1/2 cup milk ((62-122 grams))
2-3 slices bread (crust removed)
1 pound ground beef (80% lean) ((1/2 kilo))
2 large eggs
1/2 cup freshly grated parmesan cheese ((50 grams))
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt (or to taste)
1-2 cloves garlic (minced)
1-2 tablespoons olive oil
2 tablespoons olive oil
1 shallot or small onion chopped
1-2 cloves garlic (minced)
4 medium potatoes (cubed medium/large)
2 medium carrots (chopped)
2 1/4 cups tomato puree (passata) ((500 grams))
3/4 cup water ((177 grams))
1/4-1/2 teaspoon salt
1-2 dashes black pepper or hot pepper flakes
1/2-1 teaspoon oregano
1 tablespoon fresh parsley minced

Steps:

  • In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
  • In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( a little smaller than the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides. Remove to a clean plate.
  • In a large pot add the oil, garlic and chopped shallot (or small onion), cook on medium heat until transparent 1-2 minutes. Then add the carrots, potatoes, tomato puree, water and spices, mix together, then add the meatballs, and gently stir to combine.
  • Bring to a boil, then lower the heat, place the lid on the pot but don't completely cover, continue to cook on low heat until thickened about 30 minutes, stirring occasionally. Sprinkle with chopped fresh parsley before serving. Enjoy!
