- Preheat oven to 400 degrees F (205 degrees C).
- Mix together onions, bread crumbs, Parmesan cheese and ground beef. Roll into 1 inch diameter balls, and place in a baking pan. Bake for 15 to 20 minutes, or until beef is no longer pink. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Arrange the bread cubes in a single layer in an ungreased 9x13 inch baking dish. Mix together the cream cheese, mayonnaise, Italian seasoning and black pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup of the grated mozzarella cheese.
- In a large bowl, mix together spaghetti sauce, water, and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in the baking pan. Sprinkle the remaining mozzarella cheese evenly over the top.
- Bake at 350 degrees F (175 degrees C) for 30 minutes, or until heated through.

- Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
- Prep oven: Preheat the oven to 350°F.
- Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).
- Assemble casserole: Layer the mashed potatoes in the bottom of your casserole dish. Arrange the meatballs on top of the mashed potatoes evenly.
- Bake: Transfer the casserole dish to the oven and bake for 20 minutes or until heated through. Sprinkle with mozzarella cheese evenly over the meatballs and bake for another 10 minutes or until the cheese has melted and starts to brown.
- Serve: Garnish with parsley and serve warm.

- 1. Heat oven to 350. Spray 11x7 inch (2 quart) baking dish with nonstick cooking spray.
- 2. In medium bowl, combine potatoes. 1 1/2 cups of the cheese, the sour cream, Italian seasoning, peppered seasoned salt and soup; mix well. Spread in sprayed dish. Cover tightly with foil. Bake for 30 minutes.
- 3. Remove from oven. Uncover; arrange meatballs in rows over potatoes, pressing in slightly. Sprinkle with remaining 1/2 cup cheese. Return to oven and bake uncovered an additional 20-25 minutes or until golden brown and hot in center.

- In a bowl, collect the minced meat, the grated cheese and the breadcrumbs; add the egg (1) and a pinch of salt and pepper.
- Mix the ingredients, possibly adding a drop of water (2), until the mixture is homogeneous and soft.
- Using an ice cream dispenser, take out many small portions of dough (3).
- Shape into small balls a little bigger than a walnut and set them aside as you go (4).
- Wash the potatoes, peel them and cut them into cubes (5).

- Pre-heat the oven to 450 F degrees.
- Prep your Turkish meatballs as directed in the recipe. Roll them into balls. For a 10-inch plate that is 2-inches wide, you will need 21 meatballs.
- Slice each potato into 1/2 -inch thick slices. Season each slice with 1 1/2 teaspoons of kosher salt.
- Place a slice of potato in the palm of your hand and put a meatball on top. Shape the meatball in a way that will be similar to the size of the potato. Place it on a large plate and continue with the rest of the potato slices and meatballs.
- Arrange the potato slices and meatballs like I did in the video above, starting from the outer corners and ending in the middle. For a 10-inch plate, you should have 17 meatballs+potatoes and 3-4 in the middle.
- Garnish with cherry tomatoes, peppers, garlic, and parsley. Spread cubed butter on top.
- Mix tomato sauce, water, and rest of the salt in a cup. Pour the mixture over the meatballs and potatoes.
- Cover it first with parchment paper and then with aluminum foil. Bake in the preheated oven for 55 minutes. Then remove the parchment paper and aluminum foil and bake for another 20 minutes.
- Sprinkle it with more parsley and serve.

- In a large mixing bowl, combine the vegetables, garlic, oregano, salt and pepper. Drizzle 2 extra virgin olive oil and toss to combine. Transfer the vegetables to a large lightly oiled sheet pan and spread them out.

- Preheat the oven to 200C and in a roasting tin, place the potato slices along the bottom of the tin, creating a single but overlapping layer then add the red onion chunks and season with salt and lots of black pepper.
- Mix together the passata, hot water, garlic and sugar in a bowl and then pour the mixture over the potatoes and onion. Roast in the oven for 30 minutes.
- Meanwhile, cut the sausages into bite size pieces and then peel the skin from each piece to create a meatball - if you're using veggie sausages just break them up into chunks. Scatter the meatballs and the chilli flakes (if you're using them) over the potatoes and onion and continue to cook in the oven for another 15 minutes.

- In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
- In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( a little smaller than the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides. Remove to a clean plate.
- In a large pot add the oil, garlic and chopped shallot (or small onion), cook on medium heat until transparent 1-2 minutes. Then add the carrots, potatoes, tomato puree, water and spices, mix together, then add the meatballs, and gently stir to combine.
- Bring to a boil, then lower the heat, place the lid on the pot but don't completely cover, continue to cook on low heat until thickened about 30 minutes, stirring occasionally. Sprinkle with chopped fresh parsley before serving. Enjoy!
