FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES



Festival-Style Grilled Italian Sausage Sandwiches image

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

Here's what you need: canola oil, Kroger® Brand Mild Italian Sausages, medium yellow onion, Kroger® Brand Mini Sweet Peppers, water, kosher salt, freshly ground black pepper, flour tortillas, shredded mozzarella cheese, fresh parsley, long skewers

2 tablespoons canola oil, divided
5 Kroger® Brand Mild Italian Sausages
1 medium yellow onion, sliced
2 cups Kroger® Brand Mini Sweet Peppers, sliced
¼ cup water
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
5 flour tortillas, 8 in (20 cm)
2 cups shredded mozzarella cheese
1 tablespoon fresh parsley, for garnish
10 long skewers

Steps:

  • Preheat a gas grill to medium heat.
  • Lightly oil the grates of the grill with canola oil. Add the Kroger® Brand Mild Italian Sausages and close the lid. Cook for 8-10 minutes covered, turning frequently to brown on all sides until sausage juices run clear. Remove from the grill and set aside.
  • Heat a tablespoon of canola oil in a skillet over high heat. Add the onion, Kroger® Brand Mini Sweet Peppers, and water, and season with the salt and pepper. Sauté for 8-10 minutes, or until the vegetables are caramelized.
  • Lay the flour tortillas on a cutting board and sprinkle evenly with the shredded mozzarella cheese. Top with the pepper mixture, then place a sausage on top of each tortilla. Tightly roll up.
  • Wipe the pan with a damp paper towel. Set the pan over medium-high heat, then add the pepper and sausage wraps, seam-side down. (Depending on the size of the pan, you may need to work in batches.) Cook for 3-4 minutes, or until the tortillas are golden brown, pressing down slightly to seal. Flip and cook on the other side for another 3 minutes, until golden brown and the cheese is melted.
  • Transfer the wraps to a cutting board and use a serrated knife to trim the ends. Then cut each wrap into 6 pieces.
  • Skewer 3 pieces of wrap onto each skewer. Garnish with parsley.
  • Enjoy!

1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 small white onion, sliced into petals
1 small red onion, sliced into petals
1 tablespoon olive oil
½ teaspoon dried Italian seasoning
1 pinch salt and ground black pepper to taste
5 (4 ounce) links hot Italian sausage links

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine bell peppers and onions in a large bowl. Add olive oil, Italian seasoning, salt, and pepper. Stir to combine. Using a toothpick, poke 4 holes into each sausage to prevent them from exploding on the grill.
  • Place vegetables in a grill basket and cook for 2 minutes. Add sausage directly to the grate and grill for 4 minutes. Flip sausage over, stir vegetables, and grill for 4 minutes more.

4 large green peppers, thinly sliced
1/2 cup chopped onion
2 tablespoons olive oil
4 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 can (12 ounces) tomato paste
1 cup water
1 tablespoon sugar
2 teaspoons dried basil
1 teaspoon salt
1 teaspoon dried oregano
20 uncooked Italian sausage links
20 sandwich buns
Shredded part-skim mozzarella cheese, optional

Steps:

  • In a large saucepan, saute peppers and onion in oil until crisp-tender. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, tomato paste, water, sugar, basil, salt and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. , Meanwhile, grill sausages, covered, over medium heat for 10-16 minutes or until a thermometer reads 160°, turning occasionally. Steps:

  • Heat a cast iron skillet over medium-high heat. Add sausage and cook, flipping every few minutes, until golden brown and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 10 minutes.

2 Italian turkey sausage links
1 medium zucchini, cut into 1-inch slices
1 medium summer squash, cut into 1-inch slices
1/2 medium bell pepper, sliced
1/2 medium onion, cut into wedges
6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
1/2 cup mushroom, quartered (optional)
4 -6 garlic cloves, peeled
2 tablespoons olive oil
2 teaspoons dried oregano
2 teaspoons dried parsley flakes
1 teaspoon paprika
salt and pepper

Steps:

  • Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
  • Mix together the vegetables, oil and seasonings.
  • Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
  • Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
  • Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.
  • Enjoy!

6 large egg whites

1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, cook sausage, pepper, onion and tomato over medium heat until meat is no longer pink and vegetables are tender, breaking up sausage into crumbles; drain and return to pan., In a small bowl, whisk eggs and egg whites until blended.
