Here's what you need: warm water, active dry yeast, olive oil, all-purpose flour, salt, dried thyme, black pepper, fresh rosemary, mixed tomato, fresh rosemary, caramelized onion, garlic, mixed olive, parmesan cheese, mozzarella cheese, gorgonzola cheese

1 ½ cups warm water
1 pack active dry yeast
1 tablespoon olive oil
4 cups all-purpose flour
1 tablespoon salt
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon fresh rosemary
8 oz mixed tomato, to taste
fresh rosemary, to taste
⅔ cup caramelized onion, to taste
2 cloves garlic, minced
8 oz mixed olive, to taste
parmesan cheese, to taste
mozzarella cheese, to taste
4 oz gorgonzola cheese, to taste

Steps:

  • Stir yeast packet into water and allow yeast to bloom. (A light foam should appear on top of the water after about 5 minutes. This means the yeast is alive and active.)
  • Add olive oil to water and mix.
  • In a large bowl, mix flour, salt, pepper, and herbs together.
  • Once incorporated, create a small well in the middle and pour in the water/yeast/oil mixture.
  • Mix by hand, wetting your working hand before mixing so the dough doesn't stick to your fingers. The water and flour should come together and form a rough dough that pulls away from the sides of the bowl.
  • NOTE: If the dough is too sticky, add more flour in small increments, about 1 tablespoon at a time. If the dough is too dry, add more water, 1 tablespoon at a time.
  • Once the dough begins to come together, turn it out onto a lightly floured work surface and knead the dough until it forms a smooth ball.
  • Coat the bowl the dough was initially mixed in with about a tablespoon of olive oil and place the dough ball inside. Give it a few turns to coat the dough in the oil.
  • Cover and let the dough rise until it doubles in size about 1 hour.
  • While the dough rises, prepare a large baking sheet by generously coating it with olive oil.
  • Once the dough has risen, turn it out onto the prepared baking sheet and flatten it out into a large rectangle.
  • Using a knife or dough scraper, cut the dough into 4 evenly sized rectangles.
  • Press the rectangles flat and arrange them with each one pressed into a corner of the baking sheet.
  • Cover and let the dough rest for 20 to 30 minutes. Preheat the oven to 450˚F (230˚C) while the dough is resting.
  • Depending on the temperature of your kitchen and activeness of the yeast, the 4 rectangles should have risen to be about an 1-inch (2 ½ cm) thick.
  • Using your fingers, poke the the dough all over--creating small dimples across the surface.
  • Generously coat the tops of the dough rectangles one last time with olive oil (some oil will pool inside of the divots we made with our fingers. That's ok!) Use a basting brush to ensure all of the dough gets covered with olive oil.
  • Top the dough rectangles with your choice of toppings. (We did four different combinations, including tomatoes with fresh rosemary, caramelized onions and parmesan cheese, mixed olive with gorgonzola cheese, and 3-cheese using parmesan, mozzarella, and gorgonzola.)
  • Once finished with the toppings, liberally sprinkle the breads with a coarse salt.
  • Bake at 450˚F (230˚C) for 20-25 minutes until golden brown.
  • Allow the bread to cool for 10 minutes before cutting into equal pieces.
  • Enjoy!

Classic Focaccia Genovese is the mother to all flatbreads. It's about ½ inch thick, a little chewy but still soft inside with a delicious olive oil crust on top and on the bottom.

1 cup water (lukewarm)
2 ½ cup (13 oz) bread flour (+ more if needed)
1 tsp malt or honey
½ tsp dry yeast ((1 tsp if needed - see note 2))
½ tsp salt
2 tbsp Extra virgin olive oil (+ few more tbsp for the pan)
3 tbsp extra virgin olive oil
3 tbsp water
Sea salt flakes
1 quarter-sheet baking pan 9x13 inch

Steps:

  • In a mixer bowl add lukewarm water and yeast.Let sit for a few minutes until yeast is completely dissolved.
  • If you're using a stand mixer use dough hook attachment.Combine in a mixer bowl malt (or honey), flour, olive oil and salt. Give a quick stir with a spatula or a fork.
  • Start kneading on low speed. Once flour has been completely incorporated increase the speed and knead for about 10 minutes until the dough comes together around the kneading hook, becomes elastic and smooth.Add a bit more flour if needed.
  • Place the dough in a large bowl greased with extra virgin olive oil.Cover the bowl with a plastic wrap and kitchen towel.Let rise for 1.5 - 2 hours in a warm place (75-80F).Past that time the dough should double or even triple in size.
  • Pour extra virgin olive oil on a quarter-sheet (9x13 inch) baking pan.Let the dough come out from the bowl onto the pan. Turn it over to coat another side of the dough with olive oil.
  • Using your hands pat the dough down to fit the pan. Try to maintain the same thickness all over the pan.Cover with a lid if you have a lid that fits the pan or with linen towel and let rise for another 30-60 minutes or until it has doubled in size.In the meantime, prepare salamoia: beat quickly lukewarm water with extra virgin olive oil.Beat quickly lukewarm water with extra virgin olive oil for salamoia. Once your focaccia has doubled in size pour salamoia all over it.
  • Lightly oil your hands and using your fingers press down the dough to imprint typical dimples all over focaccia.Sprinkle with coarse sea salt or sea salt flakes.
  • Bake in a preheated to 450F oven for 15-20 minutes (preferably in the lower part of the oven).Once out of the oven brush your focaccia with extra virgin olive to taste.

My version of Italian flatbread, brushed with olive oil and flavored with grated Parmesan cheese, galic salt bread heavenly. Cut it into squares and top with Prosciutto Panino rolled in Mozzarella cheese and toasted under the broiler for 5 min.... oh my, this is dangerously good! It is so easy to make. Can't wait to have this with a bowl of soup or top with Pizza topping, or to just dip in garlic olive oil. This comes from a bread machine cookbook with instructions to layer ingredients liquid first. Yummers! :) Family Favorite! (Cooking time does not include dough cycle or rising)

3/4 cup plus 3 tbsp. water, 90-100 'F
3 cups bread flour
2 tablespoons dry milk
3 1/2 tablespoons sugar
1 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
1 1/2 teaspoons bread, machine or 1 1/2 teaspoons fast rise yeast
2 tablespoons olive oil
2 tablespoons grated parmesan cheese
3 teaspoons italian seasoning (grinder)
1 1/4 teaspoons garlic salt (to taste)

Steps:

  • BREAD DOUGH CYCLE:.
  • Add lukewarm water to pan.
  • Add bread flour, dry milk, sugar and salt to pan. Tap pan to settle dry ingredients, then level ingredients, pushing some of the mixture into corners. Place butter into corners of pan.
  • Make a well in center of dry ingredients; add yeast, lock pan into bread maker.
  • Program for DOUGH. Start bread maker. When done, remove pan from bread maker. Place dough onto floured surface. Let rest 15 minutes.
  • Knead dough about 1 minute. Roll dough into a rectangle to fit a jelly roll pan or large cookie sheet, about 15x10 inches. Place on greased pan and press dough evenly into pan forming an edge. Cover and let rise in warm, draft-free place for 20-30 minutes until slightly risen. With handle/end of wooden spoon, make indentations in dough at every inch. Brush dough with olive oil, then sprinkle with Parmesan cheese, Italian Seasoning (Grinder) and garlic salt.
  • Bake in preheated 400' F oven for 12 minutes or until nicely browned. Cool slightly and cut into squares for serving. Can be served warm or cooled.
  • Sit back and enjoy the raves ;).

Make a simple, homemade version of this classic Italian bread. Serve our rosemary focaccia alongside pasta dishes or enjoy with green salads

500g strong bread flour , plus extra for dusting
7g dried fast action yeast
2 tsp fine sea salt
5 tbsp olive oil , plus extra for the tin and to serve
1 tsp flaky sea salt
¼ small bunch of rosemary , sprigs picked

Steps:

  • Tip the flour into a large mixing bowl. Mix the yeast into one side of the flour, and the fine salt into the other side. Then mix everything together, this initial seperation prevents the salt from killing the yeast.
  • Make a well in the middle of the flour and add 2 tbsp oil and 350-400ml lukewarm water, adding it gradually until you have a slightly sticky dough (you may not need all the water). Sprinkle the work surface with flour and tip the dough onto it, scraping around the sides of the bowl. Knead for 5-10 mins until your dough is soft and less sticky. Put the dough into a clean bowl, cover with a tea towel and leave to prove for 1 hr until doubled in size.
  • Oil a rectangle, shallow tin (25 x 35cm). Tip the dough onto the work surface, then stretch it to fill the tin. Cover with a tea towel and leave to prove for another 35-45 mins.
  • Heat the oven to 220C/200C fan/gas 7. Press your fingers into the dough to make dimples. Mix together 1½ tbsp olive oil, 1 tbsp water and the flaky salt and drizzle over the bread. Push sprigs of rosemary into the dimples in the dough.
  • Bake for 20 mins until golden. Whilst the bread is still hot, drizzle over 1-2 tbsp olive oil. Cut into squares and serve warm or cold with extra olive oil, if you like.

3 ½ cups all-purpose flour
1 teaspoon white sugar
1 teaspoon salt
1 tablespoon active dry yeast
1 cup water
2 tablespoons vegetable oil
1 egg
3 tablespoons olive oil
1 teaspoon dried rosemary, crushed

Steps:

  • Combine 1 cup flour, sugar, salt, and yeast. Mix well. Heat water and vegetable oil until warm, and add to yeast mixture along with the egg. Blend with an electric mixer at low speed until moistened. Beat for 2 additional minutes. Stir in 1 3/4 cup flour while beating, until dough pulls away from side of bowl.
  • Knead in 3/4 cup flour on floured surface. Cover dough with a bowl, and let sit for 5 minutes. Place dough on a greased baking sheet. Roll out to 12 inch circle. Cover with greased plastic wrap and a cloth towel. Place in a warm place for 30 minutes.
  • Uncover dough, and poke holes in it with a spoon handle at 1 inch intervals. Drizzle olive oil on dough, and sprinkle with crushed rosemary.
  • Bake at 400 degrees F (205 degrees C) for 17 to 27 minutes, until just golden. Remove from baking sheet, and cool on rack.
