They serve this dip at the more elite Italian restaurants and I think I have finally mastered it! It tastes great with French bread and makes a good salad dressing too! Try it next time you have some Italian food!

- Pour the olive oil onto a salad plate. Use a garlic press to press the garlic cloves onto five different spots on the plate. Drizzle the balsamic vinegar over the oil and garlic. Sprinkle with Parmesan cheese and oregano. Season with black pepper.

this is so wonderful with an italian menu. a restaraunt in our town serves this. last year on my birthday i asked the waitress if i could take some home with me-they normally don't let you take it home. well anyway i figured out what was in it and it is great!!

2-SECOND ITALIAN BREAD OLIVE OIL DIP
Know how at some Italian restaurants they give you the option of both butter and a dish with herbed olive when they bring out the bread? I found that I actually prefer the olive oil dip to butter in terms of both taste and ease to use; I don't have to wait for olive oil to melt! Plus, olive oil is monounsaturated fat that's better for you while butter is saturated fat that isn't. I use Recipe #391627, feel free to use another mix or storebought seasoning-- tastes just like the kind in restaurants to enjoy with focaccia or crusty Italian bread.

- Grab an entire bulb of garlic and slice a little less than 1/4 of the top off, just enough to expose the cloves. Drizzle with olive oil and seal into a pinched pouch of aluminum foil. Roast anywhere from 40-60 minutes, depending on your oven and patience. Once the house starts to smell like heaven, resist the urge to dive in to the oven and spread the entire thing on toast. Better yet, roast a second bulb so you can do exactly that!
- Alternatively, you can roast the garlic ahead of time and store in the fridge for up to four days, and simply whip this up whenever you're ready for some serious dippage. I typically roast a few bulbs and use the golden cloves in recipes throughout the week.
- Once the garlic is ready, the cloves should practically be bursting from the bulb. Remove anywhere from half the cloves to all the cloves in the entire head of garlic and blend together with the olive oil using a food processor or blender.

- Remove dough from refrigerator and allow to rest on counter for 30 minutes. Place pizza stone on oven rack in the lowest position. Preheat oven to 450 degrees allowing stone to heat for at least 30 minutes before place pizza on stone.
- Roll dough with rolling pin on a floured surface till you have an 8-9 inch pie. Cover pizza paddle with a thin layer of corn meal and place dough on paddle. Pierce dough with fork several times over entire surface to prevent bubbling. Brush with olive oil and sprinkle with ½ -3/4 cup Parmesan cheese. Then sprinkle with 1 ½ T rosemary. Place a couple of pinches of flaked sea salt between thumb and forefinger and sprinkle over dough. Use paddle to place dough on preheated pizza stone and bake for 7-9 minutes (or until crispy and slightly golden). Remove from oven; allow to rest for one minute. Slice and serve with olive oil and balsamic or tomato topping.
- Place tip of paddle toward the back of the pizza stone. Then use sort of a jerky back and forth motion to slide the pizza off paddle and onto the stone. This can take a little finesse, but you'll get it.
- Cut your tomatoes in half and scoop out seeds. Dice tomatoes. Place tomatoes in bowl and sprinkle with garlic, salt, pepper, and roasted pine nuts. Drizzle with olive oil and a little balsamic, stir a little. Add Parmesan just before serving. Place on top of flatbread and prepare to be happy.
