One-Pan Italian Garlic Lemon Chicken Bake-A Complete Meal image

A complete meal with delicious Italian flavors of garlic, lemon, oregano, fennel, and smoked paprika seasoning the chicken and potatoes. This dinner comes together quickly and it takes a minimum of prep work. Clean up is minimal since it only takes one pan. A great meal for a busy family.

Marinade/Sauce
4 chicken thighs or 8 chicken drumsticks or combination of both (we used 4 thighs)
1/2 cup fresh lemon juice
6 garlic cloves (minced)
2 tsp. Dijon mustard
1 Tbsp. honey
1 Tbsp. dried oregano
1 tsp. smoked paprika
1 Tbsp. olive oil
1/2 tsp. salt
black pepper q.b. (quanto basta to your taste)
Sauté/Bake
1 Tbsp. olive oil
3/4 cup chicken broth or stock
1/4 cup dry vermouth or dry white wine
4 small to medium potatoes quartered
2 onions (quartered)
1 large fennel bulb (sliced)
1 tsp. smoked paprika
8 oz. grape tomatoes (halved)
Salt and pepper
2 lemons (halved)
Fresh Italian parsley (for garnish (optional))

Steps:

  • Whisk the marinade ingredients together in a bowl. Put the mixture in a ziplock bag along with the thighs then place in refrigerator for 20 - 30 minutes.
  • Preheat oven to 350F/180C.
  • Heat 1 Tablespoon olive oil in Braiser or deep oven proof skillet. Sauté the thighs first bone side down for 2 minutes on medium-high then on skin side down for 2 minutes. If you're using legs it doesn't matter which side first. Lightly brown the outside. Pour the marinade into the braiser, then add the broth, potatoes, onions, and fennel. (Note 1)
  • Cover with lid or foil and bake for 20 minutes.
  • Remove cover, turn chicken so that the thigh skin is up. Add the tomatoes, sprinkle with the smoked paprika, salt and pepper. Turn up the oven to 400F/205C for an additional 25 minutes or until the potatoes and chicken are cooked. Internal temperature of the chicken should be 165F/75C. Keep an eye on the liquid so that it doesn't evaporate. Add a bit of water if needed.
  • Remove from oven and let rest for 5 minutes.
  • Garnish with Italian parsley leaves and two halved lemons that were panfried with a bit of oil.This makes them pretty and colorful.

1 cup vegetable oil, or as needed
½ cup wine vinegar
5 lemons, juiced
10 cloves crushed garlic

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange the chicken pieces in a 10x15-inch enameled roasting pan. In a large skillet over medium high heat, fry the potatoes in 1/2-inch-deep oil until golden brown, then put them in the pan with the chicken.
  • Combine the vinegar, lemon juice, garlic, oregano, parsley, onion, salt and pepper with the 1/2 cup reserved frying oil and pour this mixture over the chicken and potatoes.

Baby Potatoes With Skin Left On, Halved
1 ( 4-5 Pound) Roasting Chicken, Quartered
5 Tablespoons Freshly Squeezed Lemon Juice
2 Sprigs Fresh Rosemary
4 Large Cloves Of Garlic, Peeled And Halved
Salt & Pepper
1/4 Cup Olive Oil

Steps:

  • Chop the rosemary, and place it in a a large flat ovenproof dish with the olive oil, lemon juice, and garlic.
  • Place the chicken quarters in this dish, and turn the pieces to coat with the mixture.
  • Cover with plastic wrap, and let sit in the refrigerator for one to two hours.
  • Preheat the oven to 425 degrees F.
  • Place the dish with the chicken into the oven, and cook for 20 minutes.
  • Turn the chicken pieces, and add the potatoes if using into the pan with the chicken, coating them with the chicken's juices.
  • Reduce the heat to 375 degrees F., and cook an additional 50 minutes to an hour, or until the juices run clear when the chicken is pricked, and the potatoes are tender when pierced with a fork.
  • Serve hot on a platter with the roasted baby potatoes, garnished with fresh rosemary sprigs.

1 (3 1/2-pound) chicken, flattened
Kosher salt
1/3 cup good olive oil
2 teaspoons grated lemon zest (2 lemons)
1/3 cup freshly squeezed lemon juice
1 tablespoon minced garlic (3 cloves)
1 tablespoon minced fresh rosemary leaves
Freshly ground black pepper
1 lemon, halved

Steps:

  • Sprinkle the chicken with 1 teaspoon salt on each side. Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and 2 teaspoons pepper in a small measuring cup. Place the chicken in a ceramic or glass dish just large enough to hold it flat. Pour the lemon marinade over the chicken, turning it in the dish. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. Turn the chicken 2 or 3 times while marinating.
  • When ready to grill, prepare a hot charcoal fire on 1 side of a grill (or turn a gas grill on low heat). Spread 1/4 of the coals across the other side of the grill. Place the chicken on the cooler side, skin side up, and weigh it down with the dish you used for marinating. Cook for 12 to 15 minutes, until the underside is golden brown. Turn the chicken skin side down, weight again with the dish, and cook for another 12 to 15 minutes, until the skin is golden brown and the chicken is cooked through. Place the lemon halves on the cool side of the grill, cut side down for the last 10 minutes of cooking. Remove the chicken to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut in quarters, sprinkle with salt, and serve with the grilled lemon halves.

1 (5 to 6-pound) whole roasting chicken, neck and giblets discarded
Salt and freshly ground black pepper
1 orange, quartered
1 lemon, quartered
1 head garlic, halved crosswise, plus 3 garlic cloves, chopped
2 (14-ounce) cans reduced-sodium chicken broth
1/4 cup frozen orange juice concentrate, thawed
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 tablespoon chopped fresh oregano leaves
Kitchen string or butcher twine

Steps:

  • Position the rack in the center of the oven and preheat to 400 degrees F.
  • Pat the chicken dry and sprinkle the cavity with salt and pepper. Stuff the cavity with the orange, lemon, and garlic halves. Tie the chicken legs together with kitchen string to help hold its shape. Sprinkle the chicken with salt and pepper.
  • Place a rack in a large roasting pan. Place the chicken, breast side up, on the rack in the pan. Roast the chicken for 1 hour, basting occasionally and adding some chicken broth to the pan, if necessary, to prevent the pan drippings from burning. Whisk the orange juice, lemon juice, oil, oregano, and chopped garlic in a medium bowl to blend. Brush some of the juice mixture over the chicken, after it has baked 1 hour. Continue roasting the chicken until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170 degrees F, basting occasionally with the juice mixture and adding broth to the pan, about 45 minutes longer. Transfer the chicken to a platter. Tent with foil while making the sauce (do not clean the pan).
  • Place the same roasting pan over medium-low heat. Whisk in any remaining broth and simmer until the sauce is reduced to 1 cup, stirring often, about 3 minutes. Strain into a 2-cup glass measuring cup and discard the solids. Spoon the fat from the top of the sauce. Serve the chicken with the pan sauce.

1 pkt. SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix
3/4 cup KRAFT Shredded Italian* Five Cheese Blend
1/4 cup KRAFT Seasoned Grated Parmesan Cheese Rosemary & Garlic
6 small boneless skinless chicken breasts (1-1/2 lb.)
2 cups cherry tomatoes
2-1/2 cups penne pasta, uncooked
2 lemons, divided
1/2 cup fat-free reduced-sodium chicken broth
1 Tbsp. butter
1 Tbsp. chopped fresh parsley

Steps:

  • Heat oven to 375ºF.
  • Spray rimmed baking sheet with cooking spray. Combine coating mix and cheeses in shaker bag. Remove 1/4 cup coating mixture; reserve for later use.
  • Moisten chicken with water. Add, 1 piece at a time, to remaining coating mixture in bag; close bag, then shake gently to evenly coat chicken. Place on one side of prepared baking sheet. Top with any remaining coating mixture. Spread tomatoes onto other side of baking sheet.

Olive oil, garlic and herbs. Three simple ingredients that taste great together on just about anything. Here they are combined with chicken and potatoes. I used thighs in this but feel free to used legs or breasts. It looks like a lot of steps, but it's really easy to put together. For a complete meal, add some veggies such as sliced carrots, zucchini, peppers, etc. Makes for easy cleanup too!

8 chicken thighs
3 tablespoons olive oil
4 garlic cloves, minced
2 teaspoons lemon juice

  • Preheat oven to 190C/375°F.
  • Line a roasting tin with foil.
  • Cut off any excess skin from the chicken leaving just a covering on top. Rinse chicken and toss into a large bowl. Let chicken sit for a minute and then drain any excess water from the bowl. Do this once or twice.
  • Drizzle 3 tablespoons olive oil over chicken.
  • Add garlic, lemon juice, parsley, basil, thyme, rosemary, chili peppers, salt and pepper.
  • Using clean hands, toss the chicken in the oil/garlic/herb mixture to thoroughly coat.
  • Wash your hands.
  • Lay the chicken pieces in the roasting tin, skin side down, leaving any excess oil/garlic/herb mixture in the bowl.
  • Cut up potatoes (do NOT peel) into large chunks and toss into the bowl with the remaining oil/garlic/herb mixture.
  • Add additional 2-3 tablespoons olive oil and toss (with hands) to coat.
  • Place potato chunks around chicken in pan and drizzle any remaining oil mixture over chicken and potatoes.
  • Bake for 25 minutes.
  • Remove from oven and turn chicken over and toss around the potatoes.
  • Return to oven and bake an additional 20-25 minutes until potatoes are tender.
  • Serve and enjoy!

This is a recipe I made up once when I was experimenting in the kitchen. I had no idea how it would turn out. I just put some flavours together that I felt would work. Thankfully it turned out beautifully and it is a family favourite.

6 large chicken thighs
1 large lemon cut into lots of 8 small wedges
10 cloves of garlic unpeeled and whole
1 tsp paprika
2 pinches of salt and pepper
100g butter or margarine cut into cubes / broken into tsb size pieces
2 tbs olive oil or oil of your choice
4 tbs lemon juice
1kg New Potatoes

Steps:

  • Pre-heat the oven at 200 DC. Put a pot of cold water on the stove and place the new potatoes into the pot with a sprinkle of salt. Cook the new potatoes for 10 minutes. Now put the potatoes into a small roasting tin and sprinkle over some salt and pepper. Add 50g of the butter to the potatoes. Do not cover the potatoes with a lid or foil, leave the tin open so the potatoes can get crispy. Put the potatoes a side and begin to prepare the chicken.
  • Rub each chicken piece in the oil and then place the chicken and remaining oil into a large roasting tin. Add the lemon juice to the roasting tin. Now sprinkle the salt, pepper, and paprika evenly over the chicken. Add the lemon wedges and garlic into the roasting tin spread these in between the chicken pieces.
  • Once you have added the garlic and lemon you can add the other 50g of butter spread the butter cubes / pieces around the tin and in between the chicken pieces. Either put a lid onto the roasting tin or cover the top with tin foil. Place both the chicken roasting tin and the potato roasting tin into the oven; cook both the chicken and the potatoes for 1 hour to 1h 30 mins depending on your oven.
  • It is important to not cook the chicken and potatoes in the same roasting tin otherwise everything will taste of lemon, garlic and paprika. By cooking the potatoes in a separate roasting tin, it helps to break down the flavours. 30 minutes before the end of the cooking time for the chicken, remove the tin foil and place the chicken back into the oven.
  • This dish goes very well with a glass of white wine and a bit of crispy garden salad on the side though this is optional.

LEMON GARLIC CHICKEN

In a small bowl, combine cornstarch and remaining broth until smooth. Stir into skillet. Bring to a boil; cook and stir for 1 minute or until thickened. Spoon sauce over chicken.

1 whole chicken (about 3 to 3-1/2 pounds)
2 teaspoons dried Italian seasoning

3 tablespoons olive oil, divided
2 tablespoons melted butter

Steps:

  • In a small bowl combine the Italian seasoning with seasoned salt, black pepper, mustard powder and garlic powder.
  • Mix 2 tablespoons olive oil with 2 tablespoons melted butter and the juice of 2 whole lemons (you may save the lemon skins and add to the cavity of the chicken if desired or discard).
  • Wash the chicken thoroughly under cold water then pat dry.
  • Place the chicken onto a rack that is fitted into a greased baking pan.
  • Rub about 1 tablespoon or a little more of olive oil over the dry chicken.
  • Sprinkle the inside cavity of the chicken with about 1 teaspoon seasoning mix.
  • Place the lemon halves and onion inside the cavity (along with the lemon skins if desired).
  • Tie the legs together with cotton butcher's string.
  • Rub the outside of the chicken with the remaining spice mix (at this point you may cover the chicken with plastic wrap and refrigerate for up to 24 hours).
