Chicken breasts marinated in Italian-style salad dressing, then baked! It is the easiest and most delicious meal ever and my husband thinks I slave all day to make it!

- To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).
- Preheat oven to 350 degrees F (175 degrees C).
- Remove chicken from bag, discarding remaining marinade. Place chicken in a lightly greased 9x13 inch baking dish and bake at 350 degrees F (175 degrees C) for 1 hour, or until chicken is cooked through and juices run clear. Note: Turn chicken occasionally while baking.

ITALIAN SEVEN-LAYER DIP

- Preheat the oven to 350 degrees F.
- For the crostini: Lay the baguette slices on a baking sheet. Brush with the oil and then sprinkle with the salt, garlic powder and some fresh pepper. Bake for 15 minutes, rotating the pan halfway through. Remove the crostini from the oven and set aside. Turn the oven to broil.
- For the dip: In medium bowl, combine the ricotta with salt and pepper to taste. Mix until fully combined, then transfer to an 8-by-8-inch pan, spreading the mixture evenly across the bottom. Set aside.
- In a large pan with a lid, heat the oil over medium heat. Add the onions, and sweat for 3 to 5 minutes. Add the halved grape tomatoes, chicken stock and garlic and bring to a boil; cover and reduce the heat to low. Cook until the tomatoes have softened and the mixture has thickened, about 15 minutes.
- While the tomatoes are cooking, add the sausage to a saute pan over high heat. Break up sausage with a wooden spoon and cook it through. When the sausage is finished, spoon it directly over the ricotta and spread it out evenly.
- When the tomatoes are done, spoon them over the sausage layer. Top the tomato layer with the sliced pepperoncini, marinated artichokes and roasted peppers. Place the halved ciliegine on top.
- Place the dip under the broiler and broil on high heat until the cheese has browned slightly, 2 to 3 minutes.
- Remove the dip from the broiler and top with the basil. Serve immediately with the crostini.

- Heat 2 tablespoons olive oil in a skillet over medium heat and cook onion, stirring often, until soft and translucent, about 5 minutes. Transfer to a pot.
- Combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Toss chicken thighs in the flour mixture until evenly coated.
- Heat remaining 2 tablespoons olive oil in the skillet over medium heat, add chicken thighs, and brown on one side, without turning, for 5 minutes. Turn and cook until browned on the other side, about 5 minutes more. Transfer browned chicken thighs to the pot.
- Pour white wine into the skillet; bring to a boil. Stir to loosen all the browned bits of chicken and flavors in the skillet pour into the pot. Add diced tomatoes, tomato paste, and sugar; season with salt and pepper. Add as much chicken stock as needed to cover the chicken. Cover pot and simmer over medium heat, stirring occasionally, until chicken is no longer pink in the center, about 45 minutes.
- Stir in olives, parsley, and basil. Stir to heat through.

Steps:
- 1. Pre-heat oven to 350 degrees. Boil chicken in large pot.
- 2. When done, shred chicken with 2 forks. Reserve chicken stock in case dip is too thick. (can add a little stock)
- 3. Take basil and tarragon and rub between hands to let the flavors come out.
- 4. Take the shredded chicken and mix with the salad dressing and reserved stock. Add the spices and mix well. Salt and pepper to taste. Mix well.
- 5. In a large pot, heat chicken mixture on medium heat. Add the cream cheese and melt.
- 6. Next, add 2 cups mozzarella and melt.
- 7. Transfer to a casserole dish sprayed with non-stick cooking spray.
- 8. Add the remaining 1 cup of mozzarella cheese on top of the chicken mixture.
- 9. Bake at 350* for 20 minutes increase the temp to 400* and bake for 10 minutes to make golden brown. Serve with corn chips, tortilla chips or any other chip or crackers.
- 10. Note: Can double recipe and place in a slow cooker. Still add part of mozzarella cheese on top. Heat on low.
ITALIAN LAYERED DIP
Steps:
- Let cream cheese and goat cheese soften at room temperature. Mix cheeses together with minced garlic. Line a casserole dish with plastic wrap. Put 1/3 of the cheese mixture in the dish, spreading it evenly to the sides. Next, layer ingredients in the following order: the sun-dried tomatoes, 1/3 cheese mixture, pesto, and remaining cheese in the same manner. Cover with plastic wrap and chill for at least 1 hour.
- To serve, turn upside down on a platter. Serve with crackers.

- Set up a line of 3 bowls or wide plates. Place 1/2 cup of grated Parmesan in a large plate or bowl. In the second medium bowl, whisk the egg. In the third bowl mix together bread crumbs, Italian seasoning, garlic powder, salt, and pepper.
- Bread the Chicken: Dip chicken breasts in the Parmesan bowl first, and coat on both sides. Then, transfer coated chicken and dip in egg bowl on both sides. Last, dip both sides of chicken in bread crumbs mixture in the third bowl. Evenly coat and pack breadcrumbs lightly with your hand. Shake off any excess breading and repeat with the remaining chicken.
- Sear the Chicken: Heat olive oil in a large cast iron skillet or pan and brown chicken for 3 minutes on each side, fora total of 6 minutes for both sides. I browned 2 chickens at a time.
- Bake Chicken: Preheat oven at 375 F. Lay browned chicken in the same oven proof cast iron skillet (or a baking dish). Layer chicken with mozzarella slices. Then add marinara sauce over top. Scatter shredded Mozzarella and remaining 1/2 cup of Parmesan on top of Marinara. Bake for 30 minutes until sauce is bubbling, about 30 minutes.
