ITALIAN BURGERS WITH ROASTED TOMATOES AND CARAMELIZED ONIONS
Food Network Magazine asked readers: Can you make a better burger than Bobby Flay's Spanish Burger with Pickled Shallots? Tons of you tried to beat the chef's prosciutto-and-shallot-topped Spanish burger with your own elaborate creations - here is one of the winners.

- Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
- Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
- Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
- Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. Cover and cook until the cheese is melted and the burgers are done, 3 to 4 more minutes for medium.
- Lightly toast the buns on the grill. Spread the aioli on the top and bottom buns. Sandwich with the burgers, roasted tomatoes, caramelized onions and arugula.

- Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
- Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
- Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
- Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.
NATASHA'S CHICKEN BURGERS
Natasha is my eldest daughter, and her eyes light up when I announce we're having these for dinner. While my husband and I eat 1 or 2 each, she easily finishes at least 3! The onion can be finely chopped, but with three kids, we prefer grating it so as to hide it. I usually serve these with mashed potatoes and Caesar salad for a very comforting meal! Extra-lean ground chicken can be substituted with ground turkey with great results.

- Mix ground chicken, 1/4 cup bread crumbs, onion, egg, garlic, salt, and black pepper in a bowl. Moisten hands and shape chicken mixture, 2 tablespoons at a time, into flat, oval-shaped patties.
- Spread remaining 1/4 cup bread crumbs into a shallow dish. Roll patties in bread crumbs to coat.
- Heat olive oil in a large skillet over medium-high heat.

- Heat oven to 200C/180C fan/gas 6. Cut the polenta into thick chips and rub all over with a little oil. Spread out over a baking sheet and cook for 20 mins until golden. Cut each chicken breast in half, lightly flatten using a rolling pin or heavy can, then rub all over with oil. Spread the breadcrumbs and Parmesan out on a plate, then dip in the chicken to coat.
- Place the chicken on another baking sheet and cook for 10-12 mins until just crisp and cooked through. Place a mozzarella slice on top and return to the oven until starting to melt. Pile the burgers onto buns with some salad leaves, tomatoes and a dollop of pesto. Serve with the polenta chips.

- In a medium bowl, combine ground chicken, Parmesan cheese, breadcrumbs, 1/4 cup marinara sauce, onion, garlic, and parsley. Season with salt and pepper and stir with a large spoon (or mix w/ your hands) until evenly mixed. Form the mixture into 4 patties.
- In a large skillet over medium-high heat, heat oil. Place patties in the skillet and cook until golden brown on one side, 4 to 5 minutes. Alternatively, grill the burgers for 4 minutes per side or until no longer pink.
- Flip the patties, then immediately pour remaining marinara around them in the pan. Bring marinara to a simmer, reducing heat if the sauce is bubbling too rapidly. Top each patty with mozzarella, then cover pan and cook until cheese melts and chicken burger is cooked through, 8 to 10 minutes more.
- While the chicken is finishing cooking, gently toast buttered hamburger buns in a 350°F oven until buns are warmed through and lightly crispy, about 5 minutes.
- To assemble the burgers, spoon extra sauce from the skillet onto the bottom halves of the burger buns and place burgers on top. Garnish with basil and top with remaining bun halves. Serve immediately and enjoy!

- Combine all the burger patty ingredients in a bowl and stir well to combine. Shape into 4 equally divided patties. Allow the patties to rest in the refrigerator at least 1 hour before grilling. You may make up to a day in advance.
- Heat your grill (gas or charcoal) to between 350-375 F. Grill the patties 4-5 minutes per side until a golden crust forms. Add the cheese slices in the last minute of cooking to melt.
- Toast the buns on the grill if desired over indirect heat, then place the patties with the melted cheese on the buns.
- Top with fresh basil and sliced tomato and enjoy!

- Mix ground chicken, herbs, tomatoes, onions, oatmeal and egg. Shape into four rectangles about ¾ inch (2 cm) thick. With the back of a teaspoon, make a depression in the center of each burger. This helps cook the center of the burger more quickly.
- Preheat barbecue to medium heat. Put burgers and red pepper on the grill.
- Cook burgers for about 7-9 minutes per side or until a thermometer inserted in the thickest part reads 165°F (74°C).
- Grill pepper until skin is blackened on all sides. Remove pepper from the grill and cool slightly. Peel off skin, remove stem and seeds, and cut pepper in four.
- Heat garlic bread according to package instructions and cut four slices slightly wider than the burgers. Serve burgers on garlic bread, topped with roasted red pepper and Asiago cheese.

Nice flavors. I normally do not have to use an egg and breadcrumbs for these burgers. If your ground chicken is very dry or crumbly add an egg and a 1/4 cup of breadcrumbs. Nice served on a bun with lettuce, stir-fried beansprouts, teaspoon of soy sauce and sesame seeds. As a topping we use sour cream.
