SPICY ITALIAN CHICKEN CASSEROLE image

Juicy chicken with crispy skin in a spicy tomato sauce with bell peppers, olives and capers. Inspired by Mario Batali's Sicilian Chicken (but more sauce!). Feel free to dial back the spiciness. Made on the stove, this is a hearty dinner on the table in 30 minutes. Recipe VIDEO below.

Number Of Ingredients 14

5 chicken thighs , skin on, bone in (about 200g / 7 oz each) (Note 1 for breast)
Salt and pepper
2 tsp olive oil
2 garlic cloves (, minced)
1 medium onion (, finely chopped)
1 EACH red and green capsicum / bell pepper (, sliced)
½ cup / 125 ml white or red wine (any is fine, I use dry white) (Note 2 for subs)
800 g / 28 oz can crushed tomato
¾ cup / 185 ml water (, swilled in empty tomato can)
1 tsp red pepper flakes ((chilli flakes), adjust to taste)
3/4 cup black olives (, pitted (or 1/3 cup sliced))
2 tbsp baby capers
Salt and pepper to taste
¼ cup finely chopped parsley

Steps:

  • Use a small knife to prick 5 or so gashes into the skin of the chicken. Sprinkle each side with salt and pepper.
  • Place chicken skin side down in a cold large non stick skillet, then turn stove onto medium high. As it heats up, the fat under the skin will start to melt through the holes in the skin.
  • Cook for 4 - 5 minutes or until the skin is golden and crispy. Turn the chicken and cook the other side for 3 minutes.
  • Remove chicken onto a plate, discard fat (don't scrape the pan) then return to the stove.
  • Add oil, garlic and onion. Cook for 1 minute, then add capsicum. Cook for 2 minutes then add wine. Bring to a simmer and stir, scraping the pan to get those golden bits mixed in.
  • Once most of the wine is evaporated and it doesn't smell winey anymore, add the tomato, water and pepper flakes. Stir, bring to a simmer, adjust heat so it's bubbling energetically but not rapidly (and not slowly).
  • After 5 minutes (or so), stir through olives and capers. Taste the sauce and add salt and pepper.
  • Then place chicken into the sauce, being careful not to submerge the skin. Cook for another 5 minutes.
  • Sprinkle over parsley. Serve with crusty bread, or use half the sauce to toss through / pour over pasta and the other half to serve with chicken (see photos in post).

BAKED ITALIAN CHICKEN WITH POTATOES



Baked Italian Chicken with Potatoes image

Turn every day ingredients into something special! The chicken does not need to be marinated because this recipe makes a wonderful sauce, but if you do then it will be even more tasty. I like to par boil the potatoes because I really love how it sucks up the flavour of the Italian Dressing. But you can skip this step if you prefer to cook it all in the oven - refer to Note 4 for steps.

4 - 5 chicken thigh fillets (, skin on and bone in (about 6oz/200g each))
1/2 tbsp olive oil
1 tin (14oz/400g) crushed tomatoes
1 1/2 cups cherry tomatos
3 (around 1.5lb/ 750g in total) medium size potatoes (, peeled and cut into bite size pieces)
1/2 cup mozzarella cheese (, grated (or any other good melting cheese))
Salt and pepper
1/2 tbsp each dried rosemary and thyme ((OR oregano) leaves (or 2 tbsp fresh))
2 garlic cloves (, minced)
3 tbsp red wine or white wine vinegar ((Note 1))
3 tbsp extra virgin olive oil
1/2 tsp salt
Black pepper
Basil leaves ((optional))

Steps:

  • Preheat oven to 350F/180C.
  • Mix together Italian Dressing ingredients.
  • Boil or microwave the potatoes until slightly undercooked - about 5 minutes boiling / 5 minutes on high in a steamer in the microwave. Use a fork to rough the potatoes up a bit - this allows the potatoes to absorb more of the dressing flavour - and sprinkle with a pinch of salt and pepper.
  • Meanwhile, season the chicken on both sides with salt and pepper. Heat 1/2 tbsp olive oil in large oven proof skillet over high heat.
  • Add chicken and brown well on both sides - around 5 minutes each side.
  • Remove skillet from heat, and pour off the excess fat.
  • Place potatoes around the chicken and pour over the crushed tomatoes. Season with a pinch of salt and pepper and drizzle the Italian Dressing all over.
  • Place cherry tomatoes on top and bake for 25 - 30 minutes or until chicken is cooked through.
  • Remove from oven and sprinkle on cheese, then bake for a further 5 minutes until the cheese is melted and golden.
  • Let stand for 5 to 10 minutes before serving. Garnish with basil leaves if you wish.

4 small boneless, skinless chicken breasts ((6 to 8 ounces each))
1 teaspoon kosher salt (divided)
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
2 teaspoons Italian seasoning
1 1/2 teaspoons garlic powder
1/2 teaspoon black pepper
1 pint cherry tomatoes (left whole)
1 medium zucchini (or yellow summer squash)
2 cups green beans ((about 6 ounces))
1/3 cup freshly grated Parmesan cheese
2 to 3 tablespoons fresh parsley (chopped)

Steps:

  • Cover a large cutting board with a sheet of plastic wrap, lay the chicken on top, then stretch a second sheet of plastic wrap across the top. Lightly pound the chicken breasts to an even 1/2-inch thickness (this will help them cook more quickly and evenly). Uncover the chicken and discard the plastic.
  • Sprinkle the chicken with 1/2 teaspoon kosher salt and place in a large ziptop bag.
  • In a large measuring cup or mixing bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, garlic powder, black pepper, and remaining 1/2 teaspoon salt.
  • Pour half of the mixture into the ziptop bag (watch for spills). Seal the bag, removing as much air as possible. Gently "squish" and turn the bag so that the chicken is evenly coated with the marinade, then lay the bag flat in a baking dish to catch any drips. Place in the refrigerator to marinade for 30 minutes or up to 8 hours.
  • While the chicken marinates, prepare the vegetables. Leave the tomatoes whole. Cut the zucchini into 3/4 inch dice (you can leave the peels on). Trim the ends off of the green beans. As you cut, place the vegetables in a second ziptop bag. Pour in the remaining balsamic mixture, seal, and place in the refrigerator with the chicken.
  • When you are ready to cook, preheat your oven to 425 degrees F. Remove the chicken and veggies from the refrigerator and let stand at room temperature while the oven heats.
  • Generously coat a large, rimmed baking dish with nonstick spray or line with parchment paper or a silicone baking mat. Arrange the veggies around the edges of the pan and place the chicken in the center. The veggies can overlap a little, but make sure the chicken is not sitting on top of them.
  • Bake for 15 to 20 minutes, until the chicken reaches an internal temperature of 165 degrees F. The cooking time will vary based on the size of your chicken and how thinly you have pounded it (see note). Sprinkle with the Parmesan and parsley. Enjoy hot.

14 oz. (400 g) half can of a 28 oz. (800 g) can whole peeled tomatoes

1 cup diced onion (1/2 onion)
3 cloves garlic, minced
10 fresh Italian basil leaves, chopped
salt to taste
1 teaspoon brown sugar
1 tablespoon chopped Italian parsley for garnishing

Steps:

  • Rinse the chicken thighs with water and pat dry with paper towels. Season with salt and black pepper on both sides of the chicken. Puree the tomatoes in a food processor.
  • Heat up the Xtreme braiser on high heat. When it's fully heated, arrange the chicken thighs, skin side down first. Brown both sides of the chicken. Remove the chicken from the braiser, save the juice that seeps out from the chicken.
  • Turn the heat to medium and add the olive oil to the braiser. Saute the onion and garlic, for a couple of minutes or until the diced onion becomes soft. Add the tomato puree and basil, stir to combine well. Transfer the chicken and the juice into the braiser, cover the braiser with its lid and simmer on low heat, for about 15-20 minutes, or until the chicken becomes tender. Steps:

  • Lightly pound the chicken breasts to an even thickness. Sprinkle with 3/4 teaspoon salt and 1/4 teaspoon pepper. In a large, heavy-bottomed skillet, heat 1 tablespoon olive oil over medium high. Once hot, add the chicken breasts, top-side down, and let cook undisturbed for 4 minutes, until lightly browned. Flip and cook an additional 4 minutes. This is my favorite Italian Braised Chicken recipe. The chicken thighs are first seared until the skin is crispy then they're gently simmered in a delicious tomato and olive sauce. The chicken becomes super flavorful and tender. This is a healthy dinner recipe you don't want to miss.

2 teaspoons olive oil
8 chicken thighs (skin on or off, your choice)
Salt and pepper (for seasoning the chicken)
1 medium onion (finely minced)
4 cloves garlic (chopped)
4 tablespoons tomato paste
28 ounce can diced tomatoes
1 cup coarsely chopped olives
2 tablespoons each: capers and balsamic vinegar
1 teaspoon each: chopped rosemary and oregano
A pinch of red pepper flakes
Optional: 1 teaspoon honey (omit for Whole30)
Salt and pepper (to taste)

Steps:

  • Set your oven to 400 degrees.
  • Heat the oil in a large, ovenproof pan over medium-high heat. Add the chicken thighs to the pan, skin side up. Season the chicken skin with a pinch of salt and a little pepper on each piece. Once some of the fat has been released into the pan, flip the chicken over and cook until the skin is brown and crispy, about 7-8 minutes. If using skinless thighs, cook them until the meat starts to brown. Remove the chicken from the pan. (While the chicken is cooking, prep the rest of the ingredients.)
  • Pour out all but a few teaspoons of the oil. Add the onion to the pan and let it cook until soft, about 3-4 minutes. Add the garlic and cook for 1 minute more. Add the tomato paste to the pan and let it cook until it has darkened slightly and is fragrant smelling, about 3 minutes.
  • Add all the remaining ingredients to the pan and stir well. Season to taste with sea salt and black pepper. Nestle the chicken back into the pan, skin side up. Pop the chicken into the oven and let it cook for 40 minutes. Remove the chicken from the oven and serve it right away.

Green Tops From 4 Scallion Onions
5 Tablespoons Olive Oil
8 Medium Sized Chicken Thighs, or One (3 pound) Chicken Cut Into Pieces
1 Small Onion, Peeled and Finely Diced
5 Cloves Garlic, Peeled and Minced
1 Red Chili Pepper, Finely Minced
3/4 Cup Dry White Wine
1 1/2 Cups Chopped Tomatoes
1 Teaspoon Oregano
1/4 Cup Chopped Fresh Parsley
Sea Salt and Pepper to Taste

Steps:

  • Heat the olive oil in a heavy bottom pan, and once hot, brown half the chicken pieces on each side until golden brown over medium high heat, about 3 to 4 minutes each side.
  • Brown the rest of the chicken pieces and then move all to a plate.
  • Add the chopped onion to the pan, and cook over medium heat until soft and translucent, about 4 minutes.
  • Add the garlic and chili pepper to the pan and cook another minute or two until fragrant.
  • Add the wine to the pan and turn the heat up to high.
  • Use a fork to scrape up any brown bits off the bottom of the pan, and cook until the wine has reduced by 1/3 volume.
  • Return the chicken pieces to the pan along with the tomatoes, dried oregano, and parsley.
  • Season with salt and pepper and bring the mixture to a boil.
  • Reduce the heat to a simmer, cover, and cook for about an hour.
  • Remove the cover, and cook an additional 15 to 20.
  • At this point, the sauce should have thickened and the chicken should be so tender it falls off the bone.
  • Alternately, instead of cooking the chicken on the stovetop, you could place the pot with the chicken and sauce in an oven preheated to 350 degrees F. and cook for an hour and a half, then uncover and cook an additional 15 minutes or until the sauce has thickened.
  • To serve, place the chicken on a warmed platter and spoon the sauce over top.
  • Sprinkle with the chopped onions and serve immediately.

Steps:

  • Preheat oven to 350° F.
  • In a 9x13 baking dish, mix together onion, bell pepper, rice, and Red Gold tomatoes. Stir to combine. Add chicken thighs, pushing them down into the tomato mixture.
  • Cover tightly with foil and bake for one hour and 15 minutes.
  • Uncover, stir, cover tightly again and bake for 30-50 more minutes or until rice is tender.
  • Uncover, add cheese, and bake for 10 more minutes or until cheese is melted and bubbly.
  • Serve immediately.

This delicious tomato baked chicken recipe is a tasty way to cook your chicken thighs or cut of chicken meat. It's such a quick and easy family meal

8 large chicken thighs
350g basil, Parmesan and cherry tomato ready-made sauce
1 punnet of button mushrooms
4tbsp of freshly chopped basil
350ml chicken stock
500g baby potatoes
40ml olive oil
100g-200g mozzarella cheese, optional

Steps:

  • Preheat your oven to 180ºC/350ºF/Gas 4. Colour the chicken in a frying pan of hot oil and then place into a baking dish along with the basil, Parmesan and cherry tomato sauce, whole button mushrooms and half of the basil. Add the chicken stock.
  • Place the dish in the oven and cook for 25 mins. While the chicken is cooking, boil the baby potatoes until cooked.
  • Drain and serve the potatoes on a plate, placing the chicken on top of them. Finish by sprinkling the other half of the basil, drizzling the olive oil over the top and add cheese if using it.

  • Heat 2 tbsp olive oil in a large cast iron skillet with a lid like this one. Brown the chicken cutlets on both sides (3 minutes or so). Transfer the chicken cutlets to a plate for now.
  • In the same skillet, add more olive oil if needed. Add the mushrooms and saute briefly on medium-high (about 1 minute or so). Then add the tomatoes, garlic, the remaining 1/2 tbsp oregano, 1/2 tsp salt, and 1/2 tsp pepper, and 2 tsp flour. Cook for another 3 minutes or so, stirring regularly.
  • Now add the white wine, cook briefly to reduce just a little; then add the lemon juice and chicken broth.
