1-1/2 pounds bulk Italian sausage
1-1/2 pounds ground beef
1 cup chopped onion
1 cup chopped green pepper
2 cans (15 ounces each) tomato sauce
2 cans (6 ounces each) tomato paste
1/2 cup water
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon garlic powder
2 cans (8-3/4 ounces each) whole kernel corn, drained
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 package (16 ounces) wide noodles, cooked and drained
8 ounces cheddar cheese, cut into strips

Steps:

  • In a Dutch oven over medium heat, cook sausage, beef, onion and green pepper until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water and seasonings; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Add corn and olives. Cover and simmer for 5 minutes. Stir in noodles. , Pour into two greased 13-in. x 9-in. baking dishes. Top with cheese. Cover and bake at 350° for 25-30 minutes or until heated through.

1 Tablespoon olive oil or cooking spray
1 pound uncooked Italian sausage, casings removed
1 teaspoon Italian seasoning
1 teaspoon fresh rosemary, finely chopped
1 small onion, diced
2 red bell peppers, seeds removed, diced
2 cups fresh spinach
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 dozen large eggs
1/2 cup full-fat milk
1/3 cup ricotta cheese
1/3 cup finely grated Parmesan cheese

Steps:

  • Generously grease a 9×13 casserole dish. Set aside until needed.
  • Place a large skillet over medium heat. Add a Tablespoon of olive oil or spray with nonstick cooking spray. Add the sausage to the skillet and, using a spatula, break the sausage up into small chunks. Add in the Italian seasoning and rosemary and continue cooking until the sausage is golden brown and no pink remains. Using a slotted spoon, transfer the sausage to a clean plate and set aside. Discard of remaining grease and return the pan to the burner.
  • Add a little more olive oil to the pan. Then add the onions and peppers and cook until they begin to soften, about 6 minutes. Stir in the spinach, garlic, salt, and pepper and continue cooking for another 2 minutes. Add in the sausage and stir to combine. Remove pan from heat and set aside until needed.
  • In a large mixing bowl, whisk together the eggs, milk, ricotta, and Parmesan cheese.
  • Spread half of the sausage and veggie mixture in the bottom of the prepared casserole dish. Top with the egg mixture, then top with the remaining sausage and veggies. Shake the pan lightly back and forth to gently mix the ingredients.
  • Cover casserole and refrigerate overnight, or place the baking dish in the oven and bake at once.

1/4 cup finely chopped onion

Steps:

  • In a large bowl, mix sugar, yeast, salt, pepper and 2-1/2 cups flour. In a small saucepan, heat water and butter to 120°-130°; stir into dry ingredients. Stir in 3/4 cup cheese, onion and remaining flour, forming a soft dough. Cover with plastic wrap and let rest 10 minutes., Shape dough into a ball; place in a greased 2-qt. round baking dish. Cover with a kitchen towel; let rise in a warm place until doubled, about 20 minutes. Preheat oven to 350°., Bake 40-45 minutes or until golden brown. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Cool in baking dish 5 minutes before removing to a wire rack to cool., Freeze option: Securely wrap and freeze cooled loaf in heavy-duty foil. 1 cup celery (diced)
1 clove garlic (minced)
3 tablespoons olive oil
2 zucchini (sliced)
2 tomatoes (diced)
1 green pepper (or red, yellow or orange pepper, diced)
salt and pepper to taste
1/2 cup bread crumbs
1/2 cup parmesan cheese (grated)

Steps:

  • Preheat oven to 350ºF.
  • Sauté the onion, celery and garlic in the oil until they are soft. Add the zucchini, tomatoes and green pepper, and brown them lightly. Season with salt and pepper. Place the vegetable mixture with all of the juices in a casserole dish, and sprinkle the top with the crumbs and parmesan cheese.
  • Bake at 350ºF for 30 minutes.

¾ pound lean ground beef
1 onion, chopped
1 (28 ounce) can whole peeled tomatoes, chopped
1 (6 ounce) can tomato paste
1 teaspoon salt
1 tablespoon dried parsley
½ teaspoon garlic salt
black pepper to taste
8 ounces wide egg noodles
1 (12 ounce) package process sharp cheddar cheese singles

Steps:

  • In large skillet, brown ground beef and onion. Stir in tomatoes, tomato paste, salt, parsley, garlic salt and pepper, and simmer over low heat for 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a 2 quart casserole dish, combine noodles and meat mixture. Top with cheese slices and bake for 15 to 20 minutes, or until cheese is melted.

2 cups diced bell peppers and onions
1 (8 oz) tube Crescent Rolls
8 slices ham
15 slices salami
8 eggs
salt and pepper to taste
1 cup shredded cheese (mozzarella, provolone or Italian blend)

Steps:

  • Preheat oven to 350 degrees F. Generously coat a 9×13 baking dish with nonstick cooking spray.
  • Add olive oil to a large skillet over high heat. When it just starts to smoke, carefully add bell peppers and onions and cook, stirring occasionally, until they are soft and slightly blackened around the edges. Remove to a plate and set aside.
  • In the prepared dish, layer crescent rolls, ham, and salami. Beat the eggs with the salt and pepper and pour on top. Top with peppers and onions and cheese.
  • Bake at 350 for 30 minutes.

11 1/4 ounces frozen garlic bread, slices thawed and cubed
2 medium tomatoes, ripe, coarsely chopped
1 1/3 cups French's French fried onions
6 eggs
1 cup milk
2 cups mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1 teaspoon italian seasoning

Steps:

  • Preheat oven to 350°F.
  • In a greased, shallow 3 quart baking dish add the cubed garlic bread. Top the bread with tomatoes and 2/3 cup french fried onions.
  • In a large bowl add the eggs and milk, beat well. Stir in one cup of mozzarella cheese, parmesan cheese and the seasoning.
  • Pour mixture over bread cubes and stir gently to coat well.
  • Bake for approximately 25 minutes or until custard is just set.
  • Sprinkle with remaining mozzarella cheese and onions.
  • Bake an additional five minutes or until cheese melts and onions are golden brown.
