1 cup chopped yellow onion
1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
1 can (8 oz each) Hunt's® Tomato Sauce
2 tablespoons balsamic vinegar
1/3 cup grated Parmesan cheese
1/4 cup Italian-style bread crumbs
1 egg, beaten
4 tilapia fillets, thawed if frozen (4 fillets = 1 lb)
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Heat 1 tablespoon oil in medium saucepan over medium-high heat. Add onion; cook 3 to 4 minutes or until tender. Add undrained tomatoes, sauce and vinegar. Bring to a boil; reduce heat and simmer 10 minutes, stirring occasionally.
  • Meanwhile, combine cheese and bread crumbs in shallow dish. Place egg in another shallow dish.
  • Sprinkle fish with salt and pepper. Heat remaining 2 tablespoons oil in 12-inch nonstick skillet over medium-high heat. Dip each fillet in egg, coating both sides. Coat with cheese mixture; place in skillet. Cook 2 to 3 minutes on each side or until fish flakes easily with fork (145°F). Serve tomato mixture over fish.

Steps:

  • Preheat the oven to 400ºF. Place the tilapia pieces on a baking sheet coated with cooking spray. Sprinkle the fish with salt and pepper and set aside.
  • In a mixing bowl, combine the bread crumbs, parsley, garlic, and butter.
  • Divide the breadcrumb mixture between the fish pieces and coat them evenly. (Press the breadcrumbs with your hands or the back of a spoon slightly, to make sure they are covering the fish nicely.)
  • Now, the only step left is to bake these beauties. You'll need to bake the fillets for about 15-20 minutes, depending on how thick they are. I would suggest keeping an eye on the fish during the last 3 minutes, as the breadcrumbs can easily burn.

Steps:

  • Position a rack in the center of the oven and heat the oven to 200°F. Line a baking sheet with paper towels and set aside.
  • In a small bowl, stir together the mayonnaise, red onion, relish, parsley, capers, and lemon juice. Cover and refrigerate.

¼ cup Olive oil - approximately
1/3 cup Italian seasoned bread crumbs
1 cup Panko bread crumbs
¼ tsp. garlic powder

½ cup Parmesan cheese - fresh grated
1/8 tsp. sea salt - or to taste
1/8 tsp. fresh ground pepper - or to taste
Fresh lemon juice - juice of 2 lemons - about 3 Tbs.

Steps:

  • Preheat oven to 425 degrees F. Place cooking rack in the center of the oven. Get two pie plates or shallow casserole dishes or bowls and place them next to each other Line a baking sheet with parchment paper or foil - keep this near the pie plates Place lemon juice in one pie plate In the other pie plate, add the salt, pepper, Italian and Panko bread crumbs, Italian seasoning, onion powder, garlic powder and Parmesan cheese. Mix thoroughly. Place one piece of tilapia into the lemon juice and coat each side Move it to the bread crumb mixture and pat the bread crumbs onto each side of the fish, until it's well coated. Move the tilapia to the baking sheet. Repeat with the other fillet. Bake the tilapia for about 18-20 minutes or brown and crispy on top. I put mine under the broiler for about 1 minute after baking, just to get them a little extra crispy. Be careful though, because they can go from brown to burnt in a few seconds under the broiler. Fish is cooked through when internal temperature is 140 degrees F. Serve with some extra lemon juice squeezed over top and a few grates of lemon zest. Delicious accompanied by my Lemon Garlic Aioli Recipe. I added a little horseradish to the aioli to bump up the flavor, but that's optional.
