Steps:
- Heat the oil in a large casserole or saucepan over a medium heat. Add the celery and carrots and cook, stirring, for 7-8 minutes. Add the leeks, cook for 3-4 minutes, then stir in the garlic and wine. Let the wine cook out and reduce for a few minutes.
- Tip in the tomatoes and lemon zest and season well. Add the stock, bring to the boil, then simmer fairly rapidly for 30-35 minutes, stirring occasionally or until the vegetables are just tender and the liquid has reduced and thickened.
- Stir in the beans (add a dash of hot water, if necessary) and cook for 5 minutes. Remove from the heat and stir in the oregano or thyme and the lemon juice. It's worth re-checking the seasoning now. Spoon the casserole into bowls and garnish with fresh oregano or thyme leaves.

Steps:
- Preheat the oven to 425 degrees F. Sprinkle the chicken with salt and pepper. Heat the oil in a large oven-proof skillet over medium-high heat. Add the chicken, skin side down, and cook, until browned on both sides, about 4 minutes per side. Transfer the chicken to a plate.
- Reduce the heat to medium, add the onion, garlic and red pepper flakes and cook until the onions are soft, about 7 minutes. Add the tomato paste and stir until it coats the onions and is a shade darker, about 1 minute. Pour in the wine and scrape up any brown bits on the bottom of the skillet. Add the broth, beans, tomatoes and oregano and bring to a boil. Nestle the chicken in the skillet along with any juices from the plate. Transfer the skillet to the oven and bake until the chicken is cooked through, about 25 minutes.
- Transfer the chicken thighs to a platter. Stir the cheese into the bean mixture and season with salt and pepper and garnish with fresh oregano if using. Serve with the chicken and extra parmesan cheese for topping.
ITALIAN ARTICHOKE-GREEN BEAN CASSEROLE
My mother and I made a few small changes to a recipe we found in a cookbook to create this comforting side dish. We increased the vegetable count and tossed in some seasonings to take the flavor up a notch. It's definitely not your average green bean casserole. -Denise Klibert, Shreveport, Louisiana

ITALIAN CASSEROLE
This was a recipe of my Aunt Ethel's -- egg noodles in a tomato, ground beef sauce. She said, 'It is so good, don't change a thing!' And she was right.

ITALIAN BEAN AND BISCUIT CASSEROLE
TRUE comfort food that's easy, inexpensive and sure to please everyone. This is my Italian take on beef and bean casserole (thanks to the RSC ingredients). This recipe is ready in 30 minutes and the result is a creamy stew-like casserole with a biscuit topping. Feel free to make it as spicy as you like by using hot Italian Sausage or adding more red pepper flakes.

Steps:
- Brown sausage and onion in a pan for about 5 minutes. Add garlic and cook for 1 more minute. (I used a low fat sausage, so I had no grease left in the pan...however if you DO have more than a tsp or so of grease in the bottom of the pan, go ahead and remove some of it.).
- Add the rest of the ingredients, stir, cover, lower heat to medium and cook for about 5 minutes or until hot.
- In the meanwhile, preheat the oven to 400 degrees.
- Pour the beans into a greased baking dish and then top with the biscuits.
- Bake casserole at 400 degrees for 7-10 minutes (until biscuits are cooked to your liking).
- Spoon the biscuit topped casserole into individual serving bowls and enjoy!

- Pre-heat oven to 350F (180 C), lightly butter a small 8 x 6 inch (20 x 15 cm) baking dish and sprinkle with 2 tablespoons of bead crumbs.
- Chop the onion and fry in 1 1/2 tablespoons of olive oil until lightly golden, remove and place in a large bowl.
- In a medium pot add peeled potatoes (whole), cover with water and boil until tender, remove from water with a slotted spoon. Either mash or pass through a potato ricer (which is what I did) into the bowl containing the cooked onion.
- Clean and trim the green beans, cut into 1/4 inch (.6cm) size pieces and set aside. Once the potatoes are cooked and removed from the water add the chopped green beans and cook just until tender (they should still have a bite to them). Then drain well and place in the large bowl with the potato and onion.
