Steps:
- Preheat the oven to full whack.
- Lightly grease a small skillet pan or round baking dish with olive oil, then crack in the eggs.
- Halve, or quarter, the tomatoes and dot them around the eggs.
- Tear over the mozzarella and drizzle with a little more oil, then season with a little sea salt and black pepper.
- Bake in the oven for 7 to 10 minutes or until the whites are set but the yolks are still runny.
- Pick over a few marjoram or basil leaves, and tuck in. Delicious served with hot buttered toast.

ITALIAN BAKED EGGS

- Preheat the oven to 400°F. Place the baguette slices on a baking sheet; brush with the oil and top each with 2 pieces of the mozzarella. Bake until the cheese is bubbly and light golden brown, about 12 minutes.
- Meanwhile, heat a large ovenproof nonstick skillet over medium-high. Add the sausage and cook, stirring and breaking it apart with a wooden spoon, until almost cooked through 5 minutes. Add the onion and garlic and cook, stirring, until the onion is translucent, about 3 minutes. Stir in the tomatoes, oregano, and salt. Bring to a simmer and cook, occasionally stirring, until slightly thickened, about 3 minutes.
- Reduce oven temperature to 375°F.
- Break the eggs into the sauce, leaving space between them. Sprinkle with pepper. Transfer to oven and bake until the whites are set and the yolks are still soft, 7 to 9 minutes. Top with oregano. Serve in bowls with mozzarella toast.

ITALIAN SKILLET EGGS
Steps:
- Melt I Can't Believe It's Not Butter!® Spread in large skillet over medium heat and cook mushrooms, sitrring occasionally, until golden, about 5 minutes. Stir in spinach, cook unitl wilted, about 1 minute.
- Stir Pasta Sauce into skillet; heat through. Carefully break eggs into skillet, evenly spaced. Do Not Stir. Cover and cook over medium heat until egg whites have set and yolks reached desired doneness.
- Sprinkle with cheese and basil before serving.

- In a greased 8-in. square baking dish, layer half of each of the following: bread, basil, tomatoes, bacon and cheese. Repeat layers., In a small bowl, whisk eggs, milk, garlic, salt and pepper. - Heat a skillet over medium heat; cook and stir salami, artichokes, tomatoes, and mushrooms until heated through, about 4 minutes. Transfer salami mixture to baking dish.

- In a baking oven tray (a pretty one would help) place the warm Pomodoro sauce and break down the eggs add salt and pepper
