ISRAELI VEGETABLE SALAD
Steps:
- For the hummus, place the chickpeas, tahini, 3/4 cup of the lemon juice, the garlic, cumin, Sriracha, 2 tablespoons olive oil, 1 tablespoon salt, and 1 teaspoon black pepper in the bowl of a food processor fitted with the steel blade and process until the mixture is completely smooth. If the hummus is too thick, add a few tablespoons of warm water until it is creamy but still thick and spreadable.
- In a large bowl, combine the cucumber, tomatoes, bell pepper, and red onion. Add 1/3 cup olive oil, the remaining 1/4 cup lemon juice, 2 teaspoons salt, and 1 teaspoon black pepper and combine.
- Spoon the hummus onto a large (12-by-16-inch) serving platter, spreading it out with a raised edge. With a slotted spoon, mound the vegetable salad on the hummus, leaving the edges of the hummus visible. Sprinkle the vegetables and hummus with the mint and extra salt. Drizzle with olive oil and serve at room temperature with pita bread.

Adapted from Food & Wine. This is a great way to use up leftover cooked couscous. The dressing can be whisked together in a bowl, but is especially easy to make in a food processor-chop the parsley leaves in the processor first, then add the other ingredients and process until smooth.

- Combine the parsley, hummus, white wine vinegar, and water and mix until smooth and well combined.
- In a medium bowl, combine the cooked couscous and the vinaigrette, stirring to ensure that the pasta is well coated.
- Stir in the pomegranate seeds and pistachios, reserving some of each for garnish.
- Crumble the cheese over, top with the remaining seeds and nuts and serve.

- Place the couscous in a shallow bowl, then pour over 200ml boiling water. Cover the bowl with cling film, then leave for 5 mins until the couscous has swelled up and absorbed all of the water. Ruffle with a fork to separate the grains, then stir through the pomegranate seeds and herbs.
- Make a dressing by mixing together the orange juice, white wine vinegar and olive oil, then stir into the couscous. Season well with salt and serve.

- In a 2 quart saucepan, bring vegetable stock to a boil. Add the couscous, cover, reduce the heat to a simmer, and cook until tender, 10-15 minutes. Drain off any remaining water and allow to cool to room temperature.
- In a small pan, toast pine nuts over medium heat, shaking the pan frequently, until lightly browned and fragrant, about 5 minutes.
- In a large bowl, combine cooked couscous, spinach, grape tomatoes, lemon zest, pistachio pesto, pine nuts, and salt and pepper to taste. Serve at room temperature or refrigerate until ready to serve. Garnish with fresh parsley if desired.

- Cook the couscous as per the instructions on the packet. I found it strange for couscous that mine instructed me to cook it in a pan of water until tender, but still with a little bite as if it were a pasta, but it worked!
- Meanwhile, chop and lightly toast the pistachios in a dry frying pan over a medium heat. Be sure to keep an eye on them and keep tossing, as they turn and burn quickly! Also chop the herbs and pick the seeds from the pomegranate. (You can buy little tubs of pre-prepared pomegranate, but I feel 5-10 minutes of my life in the kitchen is worth the money I’ve saved as they are a little pricy in British supermarkets as the tubs are tiny. If you can get big tubs like the ones I could when I was living in California where you live, go ahead you lucky thing!)
- Drain and rinse the couscous to remove excess starch that might make it sticky. In a large bowl stir in the oil, molasses and a good few grinds of salt and pepper until well coated. Add the rest of the ingredients, mix well and season to taste. Serve at room temperature.
