- In a skillet, brown chicken in oil. Pour off fat.
- Add juice from pineapple, broth, vinegar, sugar, soy sauce and garlic. Cover and cook over low heat for 30 minutes.

- Combine cornstarch and water, and gradually stir into the sauce. Cook, stirring, until thickened.

- Stir lime juice, honey, soy sauce, olive oil, garlic, and cumin together in a bowl; pour into a resealable plastic bag, add chicken, coat chicken with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 1 hour to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken thighs from the marinade and shake to remove excess moisture. Discard remaining marinade.
- Cook the chicken thighs until no longer pink at the bone and the juices run clear, 6 to 8 minutes per side. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

ISLAND CHICKEN
Steps:
- Preheat grill or cast iron grill pan to medium-high heat.
- Remove any excess fat from chicken and rinse under cold water. Pat dry with paper towels. Use a pastry brush to brush with olive oil and season with 1 1/2 teaspoons jerk seasoning and salt, if desired. Set aside.
- Drain pineapple slices and reserve juice. Season both sides of pineapple slices with 1/2 teaspoon of jerk seasoning; set aside.
- In small saucepan, bring reserved pineapple juice, remaining 1/4 teaspoon jerk seasoning, and brown sugar to a boil over high heat. Reduce liquid by 1/2, about 5 minutes. Remove from heat and set aside.
- Just before grilling, oil grate. Place chicken breasts on grate and grill for 4 to 5 minutes per side or until cooked through. Remove to platter and tent with foil.
- Place pineapple slices on grate and grill for 1 to 2 minutes per side until grill marks appear and pineapple is heated through.
- Serve chicken breasts with pineapple slices and warm sauce.
- NOTE: Chicken may also be broiled 4 to 6 inches from heat source for 6 to 8 minutes per side. Broil pineapple 1 to 2 minutes per side.

I found this dish in Essence magazine from February of 2006. My husband's family is from Jamaica and I haven't quite mastered curry, but this is a simple curried chicken recipe with a lot of flavor in a short amount of time.

Steps:
- In a bowl with slated water, rinse chicken.
- In a small bowl, mix 1 tbs. of curry powder and other seasonings.
- Dry chicken; season with spice mix.
- In skillet, heat oil until hot; reduce heat and let cool 2 minutes.
- Add remainimg curry powder; move pot in circular motion until curry is golden brown, about 7 seconds.
- Add chicken; brown on both sides, about 2 minutes each.
- Add 1.4 Celsius water; cover with lid; cook 10 minutes on low heat.
- Add remaining water; cook 15 minutes.
- Add onion and potatoes.
- Cook covered 20 minutes.
- Gravy will thicken slightly.

- Season the chicken with salt and pepper. Spray a serving dish with Pam cooking spray.
- Combine the other ingredients except chicken in a bowl. Whisk until the marinade is well mixed.

- I used a bone in chicken breast which I got the strips from, but you're free to use boneless chicken breast if you'd like to save on time. Remember to wash the strips with the juice of a lime or lemon and cool water, then drain dry.
- Chop (finely) the scallions, thyme and parsley. Then add it to the bowl with the cracker crumbs and give it a good stir. I know this step is a bit strange to my Caribbean readers as we're seasoning the bread crumbs and not the chicken as we would traditionally do.
- Cut the chicken into 1/4 inch strips (don't fuss with being even), wash, drain and set aside. Crack both eggs into another bowl and toss in the black pepper and salt and give it a whisk. We now have the chicken cut into pieces, the seasoned crumbs and eggs. It's time to set up a batter and frying station. We'll need the veg oil in a deep pan (I used a small wok so the oil doesn't splatter onto the stove while frying) on med/high heat, a plate with the flour, the seasoned crumbs, the chicken strips, egg wash and have a paper towel lined plate or basket to drain off the excess oil when the chicken strips are done cooking.
- Take a piece of chicken and dust it in the flour, then into the eggs (make sure it's covered in the eggs mix) and drain off the excess egg and roll in the seasoned bread crumbs. Do about 4-5 of these so once you start adding to the hot oil, you'll have a few to go in at the same time.
- Your oil should be hot by now, so gently place each strip inches Flip after a couple minutes and keep an eye on them. If you find that they're browning too fast, turn your heat down a bit. It takes about 5-7 minutes to fully cook and have that lovely golden brown color. Drain on the paper towels and continue until all the chicken strips are cooked. Sprinkle (while hot) with a little sea salt (not mentioned in the ingredient list).

- Add chicken and flour to bag and shake to coat evenly. Discard any excess flour.
- Heat olive oil in non-stick skillet. Add chicken pieces and brown on both sides. This step can be skipped but it is worth the extra time as it adds colour and flavour to the dish.
- Puree a can of diced tomatoes and add to slow cooker. Finely dice onion, red pepper and fresh pineapple. Stir into tomatoes with remaining sauce ingredients. Top with browned chicken pieces, meaty side up, and cover with sauce. Cover and cook on low heat 4-6 hours (High 2-3 hours).

ISLAND FRY CHICKEN WITH GINGER GRAVY

- For the all-purpose seasoning blend: Stir together the cayenne, garlic powder, onion powder, salt, pepper, rosemary and thyme in a bowl.
- For the chicken: Season chicken with 2 tablespoons all-purpose seasoning and allow to marinate, refrigerated, for 24 hours.
- For the dredge: Bring oil to 350 degrees F in a deep-fryer.
- Stir together the flour, salt and pepper in a bowl and dip the chicken in the mixture to coat. Fry until golden brown, about 20 minutes. Set aside and keep warm.
- For the gravy: Blend the ginger in a blender with 1/2 cup water. Set aside.
- Add olive oil, garlic and onions to a saucepan on medium heat and saute until translucent and soft. Add stewed tomatoes and continue to cook for 5 minutes. Add chicken stock, 1 1/2 tablespoons all-purpose seasoning blend, thyme, bay leaf, Scotch bonnet pepper and 1 cup blended ginger (save the remainder for another use) and simmer for 30 minutes.
- Blend the flour with 1/4 cup water in a small bowl. Strain the gravy, then add flour mixture to thicken. Finish gravy with butter over low heat. Plate chicken with rice and peas, then spoon gravy over chicken and rice. Enjoy!

- 1. In a large bowl combine chicken breasts, jalepeno, green onions, garlic, tomatoes, coconut milk, soy sauce, teriyaki sauce, thyme, leeks, and salt and pepper. Let marinate for about an hour.
- 2. In a medium dutch oven, warm olive oil. Add chicken breasts and brown on each side (about 3 minutes per side). Remove breasts and chop into small chunks.
- 3. Add chicken back to the dutch oven and pour marinade over top. Add in bouillon, red onion, carrots, red wine, and sriracha sauce. Bring to a boil, then let simmer for about 30 minutes.

This recipe was given to chef Keith Famie by one of the locals from Bora-Bora. It really showcases the flavor of Polynesia. This is a nice change of pace from your regular roasted chicken. - Preheat your oven to 400 degrees F.
- Glaze:.
- In a saucepan over medium heat, whisk the soy sauce, brown sugar, pineapple juice, ginger, garlic, honey and orange zest together. Reduce the glaze by one-third and then cool to room temperature.

- Put the chicken on a wire reack iwth a drip pan underneath. Season outside and inside the chicken with salt and pepper, to taste, then put in the oven.
- Roast the chicken for about 15 mintues, then turn the temp down to 350 degrees F. Roast an additional 20 minutes. Brush the glaze on the chicken and return to the oven for an additional 15 minutes. (If you have a larger chicken you may need to increase the time so the chicken fully cooks.).
- Remove chicken from the oven and sprinkle the shredded coconut over the whole chicken. Place back in the oven for about 5 minutes, or until the coconut is toasted.
- Remove the chicken form the oven and let rest for about 5 minutes. Carve and serve!

- In a medium bowl, combine warm water with yeast, 2 Tablspoons of the sugar, and oil. Let it sit until foamy and frothy- about 10 minutes. In the bowl of a stand mixer, combine flour, cornstarch, baking powder, and salt. Pour the wet ingredients into the dry ingredients bowl. Start the mixer on low to slowly incorporate all the ingredients and then switch to medium-high speed and knead for 4 minutes(set a timer!). The dough should be smooth and no longer stick to the mixing bowl. Take it out and shape it into a ball on the counter, giving it an extra knead with your hands if necessary so the dough is completely smooth. Place it back into the mixing bowl, cover it, and let it rise till doubled in size, about an hour and a half. I've left it for 2 1/2 hours and that was great too! When the dough is ready it will make webs as you pull it away from the bowl.
- [Make the filling while the bao dough is resting. The chicken can also be made a day before but wait to shred it till the day of] Add sugar, water, shoyu, ginger, garlic, and red pepper flakes to a pot over medium heat. Bring to a boil and carefully add the skinned chicken of your choice. Cover and cook on medium-low for one hour, flipping occasionally. When the chicken is done it should be falling off the bone and the color rich brown on all sides. Shred the meat from the bones, set it aside.
- Combine all ingredients for the slaw in a large bowl and toss to combine. This can be made up to a day beforehand.
- Add mayo, mustard, shoyu, and lemon juice to a small bowl and whisk with a fork until combined. Transfer some of the sauce to a ziplock bag and zip the top. When ready to use we'll snip the corner off the bag to get the perfect drizzle.
