IRISH SODA BREAD

Steps:
- Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
- With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
- Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
- Cool on a baking rack. Serve warm or at room temperature.

You can use regular but the black tops this. These black seed is also known as Black Cumin, Habbatul Baraka (the Blessed Seed), and by its botanical name "Nigella Sativa".

- Preheat oven to 350 degrees.
- Pump up dried fruit:.
- Place raisins and cranberries in a glass bowl 1/4 cup pour water or whiskey (gives it a real Irish kick) over it.
- Cover with plastic wrap or paper towel and microwave it for 1 minute. Let sit to cool.
- Add salt, baking powder, sugar, and flour to food processor and pulse 3 times to sift.
- Add the buttermilk, butter and eggs and mix till it comes to a doughy ball.
- Mix in seeds and drained raisins, and cranberries. You may need to do this step by hand.
- Don`t worry if you can knead the dough into a ball it still will be very good. At times my dough is moist because of moisture in the air.
- Place the dough into a well buttered pan using hands well floured shaping the dough.
- (I like cast iron skillet 8-9 inches). Pat down in center for even baking.
- Mark a cross on top and brush with more melted butter.
- Bake in 350 Degree oven for 50-60 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. - Preheat oven to 375 degrees Fahrenheit.
- Add the flour, baking soda, baking powder, cornstarch, sugar and salt to a large bowl; mix well.
- Add all of the buttermilk at once; stir until soft dough forms.
- It might be a little lumpy, but don't worry about it at this point.
- Pour contents of bowl out onto the counter.
- Knead for a minute or so until blended.
- Divide dough into two portions.
- Shape each portion into a round loaf with lightly flattened tops.

TRADITIONAL IRISH SODA BREAD
This makes a fairly dense, rustic (ugly, even) loaf of bread that is tasty and not sweet. It is crusty and rough on the outside, chewy inside. Nummy hot with lots of butter! - Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray.

- Preheat oven to 40 degrees F; line a sheet pan with parchment paper.
- In a medium bowl, whisk together buttermilk, egg, and baking soda; set aside.
- Fit a food processor with the metal blade, and process the flour, sugar, baking powder, and salt until just combined, about 5 seconds; add butter and process until the mixture resembles coarse cornmeal, another 15 to 20 seconds.
- Transfer mixture to a large bowl and stir in raisins and caraway; make a well in the center of the dough and pour in the buttermilk mixture.
- Combine, with a rubber spatula or wooden spoon, until a wet dough forms; divide in two equal portions.
- On a floured work surface, form each portion into a round loaf, about 5 inches in diameter (actually it will be a gloppy mess).
- Place each round on the prepared baking sheet, leaving several inches between loaves and sides of pan to allow for spreading.
- Using a sharp knife or a pastry cutter, cut each round into 5 equal wedges (known as scoring); sprinkle with flour to give the loaves a "rustic" look.

- 1. Preheat oven to 350*F.
- 2. Pour raisins into medium size bowl,cover with water,and microwave on high for 5 minutes. Remove from microwave and set aside to cool. then drain completely. Leave till ready to use.
- 3. Lightly spray a jelly roll size pan,baking sheet or 2 cast iron skillets with nonstick cooking spray. Set aside.
- 4. Sift flour, sugar,salt, baking powder, baking soda together in a large bowl,& then pour into a food processor that has been fitted with a metal blade. Secure lid of processor.
- 5. Add the cold butter and pulse 8 to 12 times or until mixture resembles course crumbs.
- 6. Add the two beaten eggs and buttermilk,and process until dough comes together about a minute or two.
- 7. Dust work surface with the remaining 1 1/2 cups of flour; turn out the dough onto work surface.
- 8. Add the plump raisins and optional caraway seeds if using, knead with floured hands till raisins are incorporated into the dough, and then divide the dough into two equal portions, and shape into two round breads.
- 9. Transfer to prepared baking pan or skillet.Brush loaves with egg wash, till covered completely.Then with a serrated knife cut an X in top of each loaf.
- 10. Bake in preheated 350*F. oven for 45 to 50 minutes or until top is golden brown and a skewer inserted in the center comes out clean. The bread should sound hallow when tapped on the bottom with a knife. Remove from oven and let cool on wire rack for 15 minutes. Slice and serve warm with additional butter.
- 11. Makes 2 loaves.Just a word of caution if you do not have a large capacity food processor, you may want to make half the recipe at a time, or finish in a mixer with a dough hook. Electric knife works really well for slicing. Plumping the raisins adds moisture to the bread.

- Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
- Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
- Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.
