Irish Soda Bread with Raisins image

Love Irish soda bread with raisins with a good cup of tea or coffee. You can add an egg wash to the top of the bread and then sprinkle with sugar before baking, if desired.

8 cups all-purpose flour
¾ cup white sugar, or more to taste
2 tablespoons baking powder
2 ½ teaspoons baking soda
1 teaspoon salt
2 ¼ cups buttermilk
1 cup butter, softened
2 eggs
1 ½ cups raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix flour, sugar, baking powder, baking soda, and salt together in a bowl. Add buttermilk, butter, and eggs. Knead together with your hands or use an electric mixer; add raisins. Split dough in half and form into 2 loaves. Place on the prepared baking sheet.
  • Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 45 minutes.

3 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 large egg, room temperature
2 cups 2% milk, room temperature
1/2 cup butter, melted
1-1/2 cups raisins
2 tablespoons caraway seeds, optional

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, sugar, baking powder and salt. In a small bowl, whisk egg, milk and butter. Stir into dry ingredients just until moistened. Fold in raisins and, if desired, caraway seeds. , Transfer to a greased 9-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Remove from pan onto a wire rack. Serve warm.

Veda is a Northern Irish bread made from malted flour. It can only be bought in Northern Ireland (usually) so this recipe is a lifesaver if you love it but don't live there! The bread is fairly soft, dark and chewy. Best eaten toasted with butter (and maybe cheese) for me but I've heard lots of different ways of eating it.

  • This recipe works perfectly in a bread maker following a standard white loaf programme (small size if you have the option). For a bread maker, add ingredients in the following order: Water, salt, oil, barley malt extract, flours, yeast
  • It has also been used to make bread the old fashioned, manual way - essentially, follow the usual bread making process to combine all the ingredients, knead, prove, etc, cooking for a similar amount of time to a white loaf.

sunflower oil, for greasing
150ml hot black tea
175g malt extract, plus extra for glazing (see tip)
85g dark muscovado sugar
300g mixed dried fruit
2 large eggs, beaten
250g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line the base and ends of two greased 450g/1lb non-stick loaf tins with strips of baking parchment.
  • Pour the hot tea into a mixing bowl with the malt, sugar and dried fruit. Stir well, then add the eggs.
  • Tip in the flour, then quickly stir in the baking powder and bicarbonate of soda and pour into the prepared tins. Bake for 50 mins until firm and well risen. While still warm, brush with a little more malt to glaze and leave to cool.
  • Remove from the tins. If you can bear not to eat it straight away, it gets more sticky after wrapping and keeping for 2-5 days. Serve sliced and buttered, if you like.

Ahhhh... high school memories! One certain Mr. Brown was my maths teacher and had a great sense of humour. Which was just as well. You see, it was during his tenure at Lanark Grammar School that a British baking company (sorry, I've forgotten their name) introduced their delicious malty brown bread which they marketed under the brand name "Hovis" and they launched the product with TV commercials that proclaimed, simply, "Don't say brown - say 'Hovis'". Yep, you guessed it. From that day forth, our beloved teacher was known and addressed as Hovis. So here's a copycat recipe, in his memory.

6 ounces self rising flour
2 tablespoons malt drink powder (such as horlicks or similar)
1 ounce soft light brown sugar or 1 ounce caster sugar
3 ounces sultanas or 3 ounces mixed dried fruit
2 tablespoons golden syrup
5 fluid ounces milk

Steps:

  • Preheat oven to 350°F and grease a 1-pound loaf tin well.
  • Place all the ingredients in a large bowl and mix well together to form a thick batter.
  • Turn the mixture into the tin and bake in the oven for 50-60 minutes or until a skewer inserted in the centre comes out clean.
  • Turn out and leave to cool on a wire rack.
  • Serve sliced, spread with butter.
