2 tbsp double cream
150ml freshly brewed black coffee
50ml Irish whiskey
½ - 1 tsp brown sugar
pinch freshly grated nutmeg

Steps:

  • Lightly whip the cream just so it's very slightly thickened, then set aside.
  • Pour the hot coffee into a mug or heatproof glass, then add the whiskey and sugar. Stir until the sugar has dissolved. Gently float the cream on the top and sprinkle the nutmeg over the cream. Serve hot.

1/4 cup whiskey, preferably Irish
2 cups hot freshly brewed coffee

Steps:

  • Whip the cream and brown sugar in a medium bowl with a whisk until soft peaks form.
  • Divide the whiskey between 2 mugs and top with the hot coffee. Spoon the whipped cream over top and serve hot.

1 cup freshly brewed hot coffee
1 tablespoon brown sugar
1 jigger Irish whiskey (1 1/2 ounces or 3 tablespoons)
Heavy cream, slightly whipped

Steps:

  • Fill footed mug or a mug with hot water to preheat it, then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved. Blend in Irish whiskey. Top with a collar of the whipped heavy cream by pouring gently over back of spoon. Serve hot.

TRADITIONAL IRISH COFFEE

In 1942, a man named Joe Sheridan invented Irish coffee at his restaurant at Foynes Airport, near today's Shannon Airport. The drink was created to relieve the Irish damp chill for passengers flying to the United States. Stanton Delaplane, a writer for the San Francisco Chronicle, tried Irish coffee at Shannon shortly after the war. He enjoyed it so much that he brought the recipe home. The first Irish coffee in the United States was served at Buena Vista Cafe on November 10, 1952. Soon after, more Irish coffee was being consumed in San Francisco than Ireland. This drink might be responsible for single-handedly saving Irish whiskey. Irish coffee consists of coffee, sugar, Irish whiskey, and soft whipped cream. The drink traditionally does not have a maraschino cherry or green creme de menthe on top.

4 -5 ounces hot coffee
soft whipped cream

Steps:

  • Place whiskey and sugar in a warm coffee mug. Stir the mixture until the sugar is dissolved. Pour hot coffee into the mug, the layer a dollop of soft whipped cream on top.
  • You can adjust the amount of sugar to your liking. To make soft whipped cream yourself, take heavy cream and whip it just until it thickens. You do not want to whip the cream to the point where it forms peaks. Slainte!

2 ounces Irish whiskey
About 1 cup hot black coffee
Softly whipped unsweetened heavy cream, for topping
5 drops creme de menthe

Steps:

  • Put the sugar cube into a glass coffee mug and add the whiskey. Fill the mug nearly to the top with coffee. Using a spoon, gently ladle a 3/4-inch-thick layer of cream over the top of the coffee. Garnish with the creme de menthe and serve immediately.

Inspiration: The Buena Vista Cafe, San Francisco, California, 1952. There are those who wish us to believe the unlikely fact that Irish coffee was invented at Shannon Airport in the 1940s. Obviously, for any of us who have been to any airport, we know that nothing creative has ever occurred in such a place. A competing tale has it that Jonathan Swift invented the Irish coffee in 1705 through the simple genius of adding whiskey to his coffee and cream. Earlier the same day he had invented the Irish toasted cheese, Irish biscuit, Irish hat stand, and Irish stack of envelopes by inadvertently pouring whiskey onto those household items as well. Regardless of its original production, the drink did not come into its own until its appearance in San Francisco at the Buena Vista Cafe, where it became a permanent favorite of locals and tourists alike. We always knew we wanted an Irish coffee on the menu at the Dead Rabbit, as it is perhaps the best-known Irish-American classic, and this recipe was designed under the guidance of Dale "King Cocktail" DeGroff. It's a deceptively simple approach. One secret: Buy ridiculously expensive heavy cream from your favorite local dairy. Another tip: When preparing this classic, be careful not to slip on the Irish floor.

1/2 ounce Demerara Sugar Syrup, recipe follows
1 1/2 ounces Powers Gold Label Irish Whiskey
4 ounces hot filtered coffee
1 ounce whipped heavy cream, for garnish
Fresh nutmeg, grated, for garnish
2 cups granulated Demerara sugar
2 cups water

Steps:

  • Add all the ingredients, except the garnish, to an Irish coffee glass. Float an inch of whipped cream on top. Garnish with freshly grated nutmeg.
  • Combine the sugar and water in a medium saucepan over medium heat, but do not boil. Slowly stir to dissolve the sugar. When the syrup has thickened, remove from the heat. Use a funnel to pour into bottles. The syrup will keep for 2 to 3 weeks in the refrigerator.

FLAMING IRISH COFFEE

This is a delicious blend for an after dinner coffee drink. Its also a bit of a sideshow with the flame during the preparation!

1 teaspoon Bacardi 151 rum
1/2 ounce Irish Mist liqueur
1/2 ounce Kahlua, liquer
1/2 ounce Baileys Irish Cream, liquer
1/4 onuce hazelnut-flavored liqueur
3 tablespoons sugar
whipped cream
water
hot coffee

Steps:

  • In a small plate pour 3 tablespoons of sugar in the center.
  • In a separate plate pour 1/4 cup of water.
  • Take a large wine glass that is fairly sturdy. DO NOT use a thin or expensive glass as it's possible that it could break from the heat.
  • Turn wine glass upside down and dip it in the water plate to wet the rim.
  • Immediately dip it in the sugar plate to coat the rim of the glass with sugar.
  • Set glass upright on countertop.
  • Pour a small splash ( about a teaspoon ) of Bacardi 151 into the wine glass.
  • Pick up glass and swirl the Bacardi 151 around to coat the inside of the glass. Put the glass down again.
  • Light a match in one hand and pick the glass up with the other hand. Carefully tip the glass at a 45 degree angle and bring lit match to the mouth of the glass. It will ignite quickly.
  • Turn the glass so that the fire evenly carmellizes the sugar on the rim of the glass. Do this for about 20-30 seconds.
  • Put glass down on countertop and cover with a plate to extinguish the flame.
  • Pour in 4 liquors and fill the remainder of the glass with coffee up to about a quarter inch from the top.
  • Top off with whipped cream.
  • Enjoy the best coffee drink that you have ever had!
