2 pounds small red potatoes scrubbed and quartered
1 pound bacon, chopped
2 tablespoons red wine vinegar
3/4 cup mayonnaise
3 tablespoons whole-grain mustard
6 scallions, chopped in 1/4-inch segments
1 red onion, diced
2 tablespoons sugar
Salt and pepper
2 hard boiled eggs, chopped

Steps:

  • Place potatoes in cold water in a medium saucepan. Bring to a boil and turn down the heat to medium, letting them cook until fork tender, about 15 minutes. In a skillet, saute bacon on low heat until crispy. Place bacon on a paper towel and discard the grease. Drain the potatoes, but DO NOT rinse them under cold water. Rather let them cool for about 6 to 8 minutes on a sheet pan. In a small bowl combine vinegar, mayonnaise, mustard, scallions, onion, sugar, and salt and pepper. Transfer potatoes to a mixing bowl and sprinkle bacon and hard boiled eggs over them. Then fold mayonnaise mixture into the potatoes and serve at room temperature.

Chopped celery, sweet onion and hard boiled eggs add texture and flavor. The mayonnaise, mixed with the crumbled potato and egg yolk resuts in a creamy, dreamy salad. For the really - really best potato salad, make this an hour or two before serving, cover, let stand at room temp. - then add the mayonnaise and mix.

2 lbs baking potatoes
2 tablespoons red wine vinegar
3 stalks roughly chopped celery
1/2 medium sweet onion, diced (vidalia)
3 hard-boiled eggs, roughly chopped
salt & fresh ground pepper
1 1/2 cups mayonnaise
chilled lettuce leaf
2 -3 hard-boiled eggs, sliced
paprika

Steps:

  • Boil, steam, or pressure cook potatoes until tender, drain and place on paper towels and slice in half.
  • While still warm, peel and cut 1/2 of the potatoes into 1 1/2 inch chunks (which will crumble/break apart), sprinkle with 1 tbls of vinegar, repeat with remaining potatoes and vinegar.
  • Add celery, onion, egg, salt, pepper and mayonnaise.
  • To serve: Line a serving platter with lettuce leaves, add potato salad, top with egg slices and dust with paprika.

2/3 cup finely chopped sweet pickle
1/2 cup finely diced celery heart
1/3 cup minced red bell pepper
4 teaspoons reconstituted onions
1 1/2 cups extra thick real mayonnaise
1 tablespoon confectioners' sugar
2 teaspoons prepared yellow mustard
3/4 teaspoon mustard powder
3/4 teaspoon iodized salt
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1 1/2 tablespoons sweet pickle juice
2 1/2 teaspoons distilled white vinegar

Steps:

  • RECONSTITUTE 4 teaspoons minced onion flakes in enough very hot water to saturate completely; LET rest.
  • PREP remaining vegetables to specifications.
  • COOK potatoes in a pot of lightly salted, gently boiling water for about 7 minutes, until tender but firm to the bite); DRAIN in a large colander placed in sink; RINSE with cold water and allow to drain again.
  • INTO a large bowl with an (accompanying cover or lid), add the dressing ingredients EXCEPT for the sweet pickle juice and white vinegar). Note: drain excess water from onions before adding).
  • WHISK mixture well then add vegetables (EXCEPT potatoes) and fold gently until just blended.
  • GENTLY fold in drained potatoes until well-blended.
  • COMBINE the sweet pickle juice with vinegar then sprinkle over salad.
  • FOLD mixture gently until creamy, without over-mixing.
  • COVER and refrigerate for at least 2 hours.
  • SERVE and enjoy.

1/2 teaspoon celery seed

3 cups cubed cooked corned beef
3 cups chopped cabbage
1/2 cup chopped radishes, optional
3/4 cup mayonnaise
1/3 cup dill pickle relish
1/4 cup sliced green onions
4 teaspoons milk
3/4 teaspoon Dijon mustard, optional

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain; cool slightly. 1/4 cup chopped dill pickle

  • Cover potatoes in lightly salted water and boil until tender. Drain, peel and cube. Combine vinegar, sugar, celery seed, mustard seed and 1/2 teaspoon salt; drizzle over still-warm potatoes. 4 large eggs hard boiled chopped
1/2 cup(s) celery ribs chopped
1/4 cup(s) sweet relish
2 tablespoon(s) prepared mustard
1/2 teaspoon(s) salt and pepper
1/4 cup(s) thousand island dressing
1/2 cup(s) mayonnaise dressing
2 tablespoon(s) sugar
2 tablespoon(s) pimentoes
1 teaspoon(s) paprika

Steps:

  • Bring a large pot of water to boil. Add peeled potatoes and cook until tender and firm about 20 mins. Drain and chop into squares.
  • Place eggs in a saucepan and cover with water. Bring water to a boil for 12 to 15 mins.Remove from water, peel and chop.
  • In a large bowl add the potatoes, eggs, celery, sweet relish, mustard,pimentoes, mayonnaise,thousand island dressing and sugar,salt and pepper, Mix well sprinkle paprika on top (egg on top optional),put in fridgerator till ready to serve.
