I came up with my own version of Iowa MaidRites which also are called 'loose meat' sandwiches. Very versatile, leftover beef can be used for spaghetti or taco filling, or it can be frozen for later use.

4 pounds ground beef
1 (1 ounce) envelope dry onion soup mix
1 ½ (10.5 ounce) cans condensed French onion soup
16 hamburger buns, split

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Cook and stir until evenly browned, crumbling even more as it cooks. Drain off the grease. Stir in the onion soup mix and French onion soup. Cover, and simmer over low heat for about 2 hours, or you may transfer to a slow cooker for this part.
  • To serve, spoon onto hamburger buns like a sloppy Joe.

2 pounds lean ground beef (uncooked)
1 cup warm water
3/4 T dried minced onion
1 1/2 T packed light brown sugar
3/4 teaspoon low sodium beef base
3/4 teaspoon low sodium chicken base
1 1/2 T apple cider vinegar
1 1/2 T Worcestershire sauce
3/4 T low sodium soy sauce
8 hamburger buns

Steps:

  • Set your slow cooker to high.
  • Add your beef to the slow cooker, chop well.
  • Add all other ingredients and stir to combine until beef is completely covered and mixed in.
  • Cover and cook on high for one hour.
  • Uncover after 1 hour of cook time and break up meat to small pieces.
  • Turn on low and continue cooking on high for 2 ½ - 3 hours with the lid off
  • Continue to stir occasionally and break up any chunks of beef.
  • Serve a heaping spoonful on a warm bun and top with ketchup, pickles, mustard and other burger toppings.

This was a big winner in our work pot lucks,I was requested to bring it all the time and its easy easy to throw in a crock pot also. It may not be an Authentic Maidrite...but everyone who has tried them seem to agree they are pretty darn good.

3 lbs ground beef, fried and fat drained off
1 (10 1/2 ounce) can French onion soup
1.5 (1 1/4 ounce) envelopes Lipton Onion Soup Mix
hamburger bun

Steps:

  • After frying hamburger and draining it, mix in all the soup mixes and simmer to blend flavors,about an hour would do.
  • Ladle on top of hamburger buns and treat them like you would a sloppy joe.
  • Any left over meat is great for taco and burrito filler.

1 small Onion , chopped
1 Beef bouillon cube
1 Chicken bouillon cube
1-1/2 cups Water
2 tablespoons Brown sugar
2 tablespoons Apple Cider Vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Soy sauce
Large hamburger buns
Pickles
Mustard

Steps:

  • Add the first nine ingredients to the crock pot. Stir together to combine ingredients and break up the ground beef. Cook on high for 4 hours. Stir occasionally to combine ingredients as they cook and to keep the beef from clumping together. The smell that emerges from the crock pot each time you stir it is to die for! Serve on hamburger buns...don't be shy, the messier it is the more authentic the sandwich! Serve with condiments of your choice but remember the traditional condiments are pickles and mustard which I highly recommend. Enjoy!!!

Traditional Maid-Rites from Marshalltown Iowa were served with only yellow mustard, pickle and onion. Ketchup was taken off the counters because the 'hobos' would take the ketchup to make tomato soup back when the restaurant first started. (A history lesson, who knew.) Here's the copycat version of maid-rites.

1 lb ground beef (at least 15% fat) or 1 lb ground chuck (at least 15% fat)
1 cup water
1/4 cup beef broth
1/4 teaspoon salt
4 plain hamburger buns
yellow mustard
onion, minced
dill pickle, sliced

Steps:

  • Brown beef; use potato masher to help get beef into small pieces.
  • Drain excess fat as soon as pink is gone.
  • Add 1 cup water and 1/4 cup beef broth.
  • Simmer the meat uncovered for 1 hour or until liquid is gone, stirring every 10 minutes or so.
  • When liquid is gone, put meat on a bun and top with mustard, onion and dill pickle.
  • Enjoy.
