- Remove membranes from the back of ribs, if needed.
- Rubs seasonings over both sides of ribs.
- Place wire trivet rack in the bottom of the instant pot.
- Add water, apple juice (or apple cider vinegar) and liquid smoke (optional, but recommended for that great smokey flavor).
- Place the ribs upright, with the meat side facing out. If you're using one large rack of ribs, then circle them around the pot.
- Secure lid and close vent.
- Press "manual" or "pressure cook" and cook on high pressure for 25 minutes.
- When the timer beeps, allow the pressure to naturally release for 15 min, then turn the valve to quick release.
- Carefully remove ribs to a large, foil-lined baking sheet and slather them in BBQ sauce.
- Optional: broil them in the oven for 2-3 minutes to caramelize the bbq sauce.

- Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.
- Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place ribs on the foil. Top with barbeque sauce.
- Broil ribs until sauce is bubbling, about 3 minutes.

- Generously season the ribs with salt and pepper.
- Pour the apple cider vinegar and 1 ½ cups of water in the base of the Instant Pot.

- Rinse the ribs and pat them dry. If your ribs still have the thin, shiny membrane on the back, remove it. (This is easy, don't worry!) Flip the ribs over, meat-side down. Wiggle a dull knife (such as a butter knife) between the membrane and the ribs to loosen it. With a paper towel, grip the membrane and pull it away, then discard.
- In a small bowl, stir together the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne. Rub it all over the ribs, generously coating all of the sides.
- Place the trivet (or rack) in the bottom of a 6-quart or larger Instant Pot. Pour in the water, apple cider vinegar, and liquid smoke. Place the ribs inside the pot, standing them on the trivet on their side and wrapping the rack around the inside of the pot like a circle.
- Cover and seal the Instant Pot. For baby back ribs: Cook on high (manual) pressure for 23 minutes (if you are making multiple racks and your ribs are super meaty, increase to 25 minutes). Allow the pressure to release naturally for 5 minutes, then vent to release the remaining pressure. For spare ribs: Cook on high for 35 minutes. Allow the pressure to naturally release completely (about 15 minutes). You will know it is released when the pin drops.
- Towards the end of the ribs' cook time, place a rack in the upper third of your oven and set it to broil. Line a large baking sheet with aluminum foil. Transfer the cooked ribs to the foil, then brush liberally with barbecue sauce. Place under the broiler just until the sauce begins to caramelized, about 2 minutes. Do not walk away to make sure the ribs don't burn.

- For the spice rub: In a small bowl, combine the brown sugar, smoked paprika, garlic powder, dry mustard, salt, black pepper and cayenne.
- For the ribs: Remove the membrane from the underside of the ribs. Rub the spice mixture all over. Set aside for 30 minutes, or up to 8 hours (in the refrigerator).
- Add the Dr Pepper to the Instant Pot and place the trivet (that came with the Instant Pot) over top. Arrange the ribs on the trivet in concentric circles with the meaty side facing out.
- Cover the Instant Pot and seal to close. Select HIGH PRESSURE and set the timer for 25 minutes. When the timer is up, let the pressure naturally release for 10 minutes, then manually release. Remove the ribs and transfer to a sheet tray, meat-side-up, to let cool slightly.
- Set the Instant Pot to SAUTE. Cook the liquid to reduce by one-half, about 15 minutes. Add the ketchup, vinegar, brown sugar, soy sauce and black pepper, and whisk well to combine. Cook for 10 to 15 minutes, whisking frequently, until thickened like BBQ sauce.
- Heat a broiler to high heat. Brush the tops with the BBQ sauce sauce and broil for 4 minutes to slightly caramelize. Brush all over with more sauce and serve immediately.
INSTANT POT COLA-BRAISED SHORT RIBS

- Combine the paprika, chili powder, onion powder, garlic powder, cumin, 1 tablespoon salt and 2 teaspoons pepper in a large bowl. Add the short ribs to the bowl, rub the spice mixture all over and allow to rest for 10 minutes.
- Set a 6-quart Instant Pot® to high saute (see Cook's Note) and add 2 tablespoons of the oil once it is hot. Working in batches, sear all 4 sides of each short rib, about 2 minutes per side. Set the short ribs aside on a plate.
- With the pot still on high saute, add the remaining 1 tablespoon oil. Add the onions and cook, stirring occasionally with a wooden spoon to scrape up bits on the bottom, until softened, about 3 minutes. Add the tomato paste and garlic and cook until the tomato paste is deeply toasted, 1 to 2 minutes. Add the cola, Worcestershire sauce, bay leaves and 1/2 cup of the beef broth and stir to combine. Put the ribs back into the pot along with any juices on the plate and turn to coat with the liquid. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 45 minutes.
- After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Careful of any remaining steam, unlock and remove the lid and transfer the short ribs to a large plate.
- Use a ladle to skim any excess fat off the top of the liquid and then turn the pot back to high saute. While the liquid begins to simmer, combine the remaining 2 tablespoons of beef broth with the cornstarch in a small bowl to make a slurry. Whisk in the slurry and cook, whisking intermittently, until the sauce is reduced and thickened to a syrup-like consistency, 15 to 20 minutes. Season the sauce with salt and transfer the short ribs back to the pot to coat with the sauce. Serve the short ribs hot with the sauce over mashed potatoes, polenta or rice, if using.
INSTANT POT RIBS

Using a homemade dry rub and BBQ sauce (or store bought), and your favorite cut of ribs, you'll get flavourful, saucy, ribs in a fraction of the time of your traditional ribs. - In a small bowl, add chili powder, smoked paprika, onion powder, pepper, salt and whisk with a fork.
- In Instant Pot, add 1 cup water and place trivet inside.
- Remove membrane from the back of the ribs by sliding butter knife or spoon handle under. If slippery, use paper towel to pull off membrane. Some ribs might not have it.
- Sprinkle each side of ribs with spice mixture. Don't rub as a lot of seasonings will end up sticking to your fingers.
- Place ribs in Instant Pot, on their side and curling in a circle. Close the lid, set pressure valve to Sealing and press Pressure Cook on High or Manual for 25 minutes.
- While ribs are cooking, combine water, tomato paste, applesauce, molasses, apple cider vinegar, honey, onion and garlic powders, mustard, liquid smoke and cayenne pepper in a small pot and stir. Bring to a boil and cook half covered on low heat for 10 minutes. Set aside.
- After 25 minute cook time is over, let pressure in wait for 15 minutes and then turn valve to Venting to release remaining pressure.
- Preheat broiler to 500 degrees F and position oven rack in the middle. Also prep baking sheet by lining with parchment paper or silicone baking mat for broiling.
- Ribs will be very tender. Open the lid, remove ribs carefully using silicone end tongs and place on baking sheet. They probably will fall apart in half, no worries. So tender!
- Brush top and sides with generous amount of BBQ sauce and broil for 4-5 minutes. Cut with serrated knife between bones.
- Serve ribs traditionally with mashed potatoes and corn on the cob. The day I tested this recipe, I also made fresh and crunchy Asian chopped salad. This exotic coleslaw went so well with ribs!
