HEALTHY DONUTS WITH BANANA AND CHOCOLATE CHIPS
These Healthy Donuts with Banana and Chocolate Chips are an easy, homemade snack for kids or treat for brunch. Whether you're clean eating or just looking for a treat that's baked instead of fried, these healthy donuts are the perfect DIY. - Preheat oven to 350 degrees F.
- Before you start, you might need to warm up your egg if it's cold from the fridge. Put it in a small bowl and cover with warm-hot water. Let it sit for a few minutes and repeat.
- If you're using frozen bananas, defrost them and mash with a fork.
- In a large bowl, combine bananas, egg, yogurt, honey and vanilla. Whisk well to mix.
- In a medium-sized bowl, combine flour, oats, baking soda and salt. Mix well. Add to wet ingredients and use a large spatula to mix gently until *just* combined. If you overmix the batter the donuts will be tough.
- Fold in chocolate chips.
- Spray donut pan with non-stick spray and spoon batter into each donut well. I used around 2 tablespoons of batter for each donut. Don't overfill - they will rise.
- Bake in preheated oven for about 20 minutes, or until a toothpick inserted in the centre of a donut comes out clean.
- Cool on a wire rack. These donuts freeze well.

- Melt the 2 tablespoons shortening in a small saucepan. Set aside to cool slightly but remain liquid.
- In a standing mixer fitted with the paddle attachment, beat the sugar and melted shortening together on medium speed. Add the egg and beat well. Add the evaporated milk and vanilla, continue beating until the mixture is light, about 2 minutes.
- Sift the flour, baking powder, nutmeg, mace, and salt into a medium bowl. Add the flour mixture to the egg mixture on low speed until just combined. The texture of the dough will be soft and loose. Turn dough out of the bowl onto a large piece of plastic wrap and wrap it well. Refrigerate for 4 hours or overnight.
- Roll the chilled dough out on a very lightly dusted workspace until it's about 1/2-inch thick. Dip the edges of a 2-inch round cutter in flour and cut the dough into discs. Place cut dough on a parchment-lined baking sheet.
- Heat about 2-inches of shortening in a large, heavy-bottomed pot over medium heat until a deep-fry thermometer reads 375 degrees F. Line a large plate with paper towels.
- Working in batches, fry the doughnuts, turning once, until they are golden brown, about 2 minutes. Transfer the doughnuts from the oil with a slotted spoon or skimmer to the prepared pan. Cool. Repeat with remaining dough, taking care the oil comes back to the correct temperature between each batch.
- For jelly filled doughnuts: Fill a pastry bag fitted with a plain tip with raspberry jam. Let the donut cool slightly. Make a small opening with the pastry tip and gently fill each donut with some of the jam. Dust with sugar as desired. Serve warm or at room temperature.
- For sugared doughnuts, roll the doughnuts in sugar or cinnamon sugar while they are still warm. For confectioners' sugared covered doughnuts allow the doughnuts to cool completely before rolling in the confectioners' sugar.

- Preheat oven to 350°F. Spray a 24-cup mini muffin pan generously with non-stick cooking spray.
- In a large bowl, melt the butter and let cool slightly. Whisk in the sugar then the eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until just combined. Gently stir in the chocolate chips.
- Fill each prepared muffin cup almost full with batter. Garnish the top of the batter with some mini chocolate chips, if desired.
- Bake muffins for 12-15 minutes or until golden brown and a toothpick inserted comes out clean. Let the muffins cool in the pan for 5 minutes before removing to a wire rack to cool completely.

- Directions 1. Preheat the oven to 325F 2. Using your electric mixer with the whisk attachment, add the mashed banana, sugar and greek yogurt. Mix until incorporated. 3. Add melted butter, eggs and vanilla extra and mix. 4. Add flour, baking powder, baking soda and salt to the batter and mix until just incorporated. Do not over mix! 5. Using a spatula, fold in the chocolate chips. 6. Scoop the batter into a zip lock bag and seal shut. You may need to paint melted butter on top of each doughnut before dipping the doughnuts in the sugar mixture to allow them to stick. Both options work perfectly. 9. Bake for 12 to 15 minutes. Remove from the pan and allow to cool before eating.

- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside. Whisk the egg and brown sugar together in a medium bowl until smooth. Whisk in the butter, mashed banana, vanilla, and buttermilk until smooth and combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon the batter into the donut cavities– I highly recommend using a large zipped-top bag for ease. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling 2 ∕ 3 –3 ∕ 4 of the way full. (See the photo in my chocolate frosted donuts post for a visual.)
- Bake for 9–10 minutes or until the edges are lightly browned. Allow to cool for about two minutes and transfer to a wire rack set on a large piece of parchment paper or on a large baking sheet. Bake the remaining donut batter (there is usually enough batter for 2-3 more donuts) and once baked, transfer to the wire rack. Allow donuts to cool down until you can handle them.
