INSTANT POT FISH FROM FROZEN
This Instant Pot steamed white fish recipe is the easiest way to cook fish. Not only is it easy, but it comes out tender, flaky, and perfect in less than 15 minutes. Oh and did I mention that you can cook cod, tilapia, or halibut this way from frozen? No need to plan ahead or defrost it before cooking.

Steps:
- Pour 1 c water into Instant Pot bowl. Place trivet or (Instant Pot safe) steamer basket in bowl. Place frozen fish filet on trivet. Sprinkle with a pinch of salt and pepper. Place 1 tsp butter on top of fish, and cover fish with 3 slices of lemon.
- Replace lid, set vent to SEALING. Set to MANUAL, high pressure, and adjust time to 8 minutes if less than 1 in thick, or 12 for 1-2 in thick.
- Once timer goes off, QUICK RELEASE pressure and remove. Check temperature with instant read thermometer. Temperature in middle of fish should be at least 145 degrees. Serve with rice or herb couscous.
INSTANT POT TILAPIA WITH VEGETABLES

Steps:
- Wash and pat dry tilapia fillets and cut lengthwise each fillet.
- In a medium bowl, mix tilapia fillet with dried basil, olive oil, salt, and pepper. Let it marinate for 15 minutes.
- Add a cup of water to the instant pot and place the trivet. Add the marinated tilapia fillets over the trivet and close the instant pot lid. Switch on the "Pressure cook/ Manual mode" at high and set timer for 3 minutes. Turn the pressure knob to sealing position.
- Once cooking is done, quickly release pressure by carefully turning the knob to 'vent' position. Once all the pressure was released, carefully remove the lid.
- Add the sliced vegetables such as broccoli florets, zucchini, yellow squash, and carrots over the cooked tilapia fillets. Sprinkle the vegetables with salt. Close and secure the instant pot lid again to its position and turn the pressure knob to sealing position. Pressure cook for '0' minutes.
- Once cooked, quick release the pressure by carefully turning the knob to 'vent' position. Remove the instant pot lid and carefully transfer the cooked vegetables and tilapia fillets into a serving plate.
- Serve the tilapia fillets, cooked vegetables along with your favorite sides or sauce.
GARLIC ALFREDO TILAPIA
My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

- Preheat an oven to 425 degrees F (220 degrees C).
- Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
- Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Pour the sauce over the fish to serve. Sprinkle with additional Creole seasoning if desired.
