Easy Instant Pot Lentil Curry with Indian flavors, not too spicy, healthy and vegan! One pot recipe with brown lentils or green lentils.

1 1/2 cups lentils (green or brown )
1/2 tablespoon coconut oil
1 cup plus 1 tablespoon water (divided)
1 small shallot (finely chopped)
3 tablespoons minced fresh ginger
2 tablespoons minced garlic (about 6 cloves)
1 tablespoon curry powder (plus 1 teaspoon )
1/2 tablespoon coconut sugar ( or brown sugar)
1 teaspoon kosher salt
3/4 teaspoon ground turmeric
1/8 to 1/4 teaspoon cayenne pepper (use more for more spice or omit if sensitive to spice)
1 can light coconut milk (about 14 ounces)
2 tablespoons freshly squeezed lemon juice (about 1/2 large lemon)
Cooked brown rice (for serving)
Chopped fresh cilantro (for serving)

Steps:

  • Rinse and drain the lentils, then set aside. Set the Instant Pot to sauté and add the coconut oil. Once the oil has melted, add 1 tablespoon water, the shallot, ginger, and garlic. Cook, stirring often, until very fragrant and the shallot is soft, about 2 minutes. Add the curry powder, coconut sugar, salt, turmeric, and cayenne and stir vigorously. Stand back and try not to breath in any of the steam coming from the pot (it's spicy!). Add the lentils, coconut milk, and 1 cup of water. Stir to coat the lentils completely with the liquid.
  • Hit cancel to stop the sauté function, seal the lid, then set to cook on HIGH pressure for 15 minutes. (It will take about 8 minutes for the pressure to build, then the timer will begin.) Once the timer has stopped, let the pressure release naturally for 10 minutes, then vent to release the pressure completely. Open the lid and stir in the lemon juice. Taste and adjust the seasoning as desired. If the curry is too thick, add a bit more water to loosen as needed. Serve hot with rice, sprinkled with cilantro.

My idea of comfort food. I eat these all the time, either as a side dish for fish or (my favorite way) with a poached egg on top.

1 1/2 cups brown lentils
2 tablespoons olive oil
4 slices bacon, chopped (optional)
4 garlic cloves (sliced)
1 carrot (small dice)
2 celery ribs (small dice)
1 -2 shallot (fine dice)
1 teaspoon sage
1/2 teaspoon ground celery seed
1 -2 teaspoon cumin
cayenne (to taste)
1 -2 cup vegetable stock (or chicken)
1 lemon
1/4 cup fresh parsley (chopped)
salt and pepper

Steps:

  • Rinse lentils and then par-boil them with water to cover and a good sprinklng of salt (simmer hard about 25 minutes). Drain.
  • Meanwhile, in a braising pan, saute vegetables and garlic in the olive oil (cooking bacon first if using it) for 5 minutes.
  • Stir in dried herbs and spices and 1 cup of stock. Bring to a simmer.
  • Add the lentils to the vegetables and stock, and simmer, stirring occasionally until the lentils are cooked, (10-20 minutes more) adding more stock as needed.
  • Check seasoning, adding salt and pepper, to taste. Garnish with fresh squeezed lemon juice and parsley (I chose these because I serve the lentils with fish most often).

½ onion, finely diced
1 carrot, peeled and diced
1 stalk celery, diced
2 cloves garlic, minced
2 teaspoons ground cumin
½ teaspoon ground coriander

¼ teaspoon fennel seeds

1 tablespoon tomato paste
4 cups vegetable broth
3 cups water
1 ¼ cups green lentils
1 small yellow squash, diced
1 cube vegetable bouillon
1 lemon, juiced
1 cup chopped kale, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Warm olive oil for 3 minutes. Add onion, carrot, celery, and garlic. Cook until onion is soft and translucent, 4 to 5 minutes. Season with cumin, coriander, turmeric, salt, white pepper, fennel, and chile powder. Cook for 2 more minutes. Stir in tomato paste.
  • Pour in broth and water. Stir in lentils and squash. Crumble bouillon cube over the top and mix well, scraping the bottom of the pan to remove any browned bits. Cancel Saute Mode.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Open valve to vent remaining steam, about 5 minutes. Unlock and remove the lid.
  • Mix in lemon juice and toss kale leaves just on top of the soup. Replace lid and allow kale to steam for about 5 minutes. Remove lid and adjust seasonings, if desired, before serving.
