3 slices bacon
1/3 cup chopped Romaine lettuce
1/3 cup coarse soft bread crumbs
2 Tablespoons grated Parmesan cheese
2 teaspoons olive oil
2 medium Roma tomatoes
Freshly ground black pepper
Mayonnaise

Steps:

  • 1. Preheat oven to 400. In a large skillet cook bacon over medium heat until crisp. Drain on paper towels;chop. 2. In Medium bowl, combine bacon, lettuce, crumbs, cheese and olive oil. Mix well. Set aside. Halve roma tomatoes lengthwise. Scoop out insides leaving a 1/4 inch shell. Sprinkle black pepper on each tomato half. Brush with some of the mayonnaise. Mound the bacon mixture in tomatoes; transfer to baking pan. 3. Roast tomatoes, uncovered, for 10 to 12 minutes or until tomatoes start to wilt. How to make the ultimate BLT Sandwich! Everything from toasted bread, perfectly cooked bacon, thick slices of tomato and avocado, and of course our 3-ingredient sandwich sauce that makes this the best BLT recipe you'll try.

8 slices of bread (cut 1/2" thick)
12 slices bacon
2 large ripe tomatoes (thickly sliced)
4 green lettuce leaves (rinsed and spun dry)
1 large avocado (or 2 small avocados pitted, peeled and sliced.)
salt and black pepper (to taste)
1/2 cup real mayonnaise
2 Tbsp sour cream
2 tsp yellow mustard

Steps:

  • Preheat oven to 400˚F. Place bacon on a foil-lined baking sheet in a single layer. Bake 18 to 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool.
  • In a small bowl, combine sauce ingredients and set aside.
  • Lightly butter both sides of the toast and toast on a dry griddle or skillet over medium-high heat just until golden brown.
  • Arrange 4 slices of bread on a cutting board and spread 1 Tbsp of sauce over each toast. Add lettuce then tomato, bacon, avocado. Sprinkle salt and pepper over the avocado.
  • Spread 1 Tbsp sauce over the remaining toasted bread and place over the sandwich, sauce side down. Cut in half if desired and serve.

Magazine says this is 98 calories per serving with 8 grams of fat. You could reduce that by using turkey bacon and low fat mayo.

Steps:

  • Hollow out 4 tomatoes, . Season with salt and pepper and invert to drain. Cook 2 bacon slices with 1 garlic clove; chop, then toss with 1/2 cup chopped lettuce, 1/2 cup chopped stale bread cubes, 2 tablespoons mayonnaise and salt and pepper. Stuff into the tomatoes, then brush with the bacon drippings. Bake 20 to 30 minutes at 425 degrees F.

This cake is so moist and you don't even use oil or butter. We got the recipe from a lady at church. It is easy to make and is always a hit. Whenever we take it to a pot-luck, we don't get to bring any home. We only bring home an empty cake tray.

1 (4 1/2 ounce) package instant chocolate pudding mix
1 (18 ounce) package devil's food cake mix
1 (12 ounce) package chocolate chips
1 3/4 cups milk
2 eggs
1/2 cup margarine
2 cups confectioners' sugar
1 ounce unsweetened chocolate (melted)
1 ounce semisweet chocolate (melted)
1 teaspoon vanilla

Steps:

  • Cake.
  • Combine pudding mix, cake mix, chips, chips, milk and eggs.
  • Mix by hand until well-blended--about 2 minutes.
  • Pour into a greased and floured bundt pan.
  • Bake at 350 degrees for 50 to 55 minutes, or until cake springs back when lightly pressed with finger.
  • Cool 15 minutes in pan, then remove.
  • Continue cooling.
  • Frosting.
  • Melt margarine in medium saucepan.
  • Remove from heat.
  • Stir in sugar and chocolate.
  • Add vanilla.
  • Stir enough hot water (3-4 Tablespoons) to make desired consistency.
  • Drizzle over cake.
