2 tablespoons olive oil
coarse kosher salt
ground black pepper
garlic powder
dried parsley

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Rub potatoes with olive oil and season with salt, pepper, garlic powder, and parsley. Place potatoes in the air fryer basket.
  • Cook in the preheated air fryer until potatoes are soft, 40 to 50 minutes, depending on potato size.
  • Slice potatoes lengthwise. Pinch both sides of each potato, using your hands and forcing potatoes to open up, until the fluffy insides come up. Place 1 tablespoon of butter into each potato.

1 cup cottage cheese
2 eggs, beaten
¼ cup crumbled feta cheese
2 tablespoons all-purpose flour
2 tablespoons butter, melted
1 clove garlic, minced, or more to taste
1 ½ teaspoons onion powder
⅛ teaspoon ground nutmeg

Steps:

  • Preheat an air fryer to 375 degrees F (190 degrees C). Grease an 8-inch pie pan with cooking spray and set aside.
  • Combine spinach, cottage cheese, eggs, feta cheese, flour, butter, garlic, onion powder, and nutmeg in a bowl. Stir until all ingredients are well incorporated. Pour into the prepared pie pan.

2 14.5-ounce cans artichoke hearts in water, drained
1/2 cup all-purpose flour
2 large eggs
1 cup panko
1 teaspoon grated lemon zest
1 teaspoon dried oregano
1/2 teaspoon kosher salt
Olive oil cooking spray, for frying
1/4 cup mayonnaise
1 small clove garlic, grated
2 teaspoons fresh lemon juice
2 teaspoons extra-virgin olive oil
1/4 teaspoon kosher salt

Steps:

  • Make the artichokes: Preheat an air fryer to 360˚ F. Pat the artichoke hearts dry. Halve lengthwise. Put the flour in a shallow bowl; lightly beat the eggs in a second bowl. Whisk the panko, lemon zest, oregano and kosher salt in a third bowl. Coat the artichokes in the flour, then the egg, then the panko mixture.
  • Lightly coat the artichokes with cooking spray and arrange sprayed-side down in the air fryer basket in an even layer. Cook 7 minutes. Spray the tops with more olive oil, flip and cook until golden brown, 7 more minutes.
  • Make the dipping sauce: Whisk the mayonnaise, garlic, lemon juice, olive oil and salt in a small bowl. Serve with the artichokes.

  • Scrub the potatoes, then pat dry with kitchen paper. Transfer to a plate, drizzle over the oil and rub it into the skins using your hands so the potatoes are well-coated. Season with salt and pepper - the salt will help the skins crisp up.

4 cups coarsely chopped spinach
1 cup mayonnaise
1/2 cup sour cream
1 (8 ounce) can water chestnuts, drained and chopped

1/2 teaspoon salt
1/2 cup grated parmesan cheese

Steps:
