EGG TARTS
Egg custard tarts, or don tot as I grew up calling them, are my sister's favorite. She literally screams when the egg custard tart cart comes rolling by at dim sum; it's kind of embarrassing, but also hilarious. I love them too, especially when I can manage to save room after all of the steamed buns. What's so lovely about these is that even though they're a dessert, they're not overly sweet, which allows room for the eggy flavor to really shine. They're smooth, silky and really comforting.

- For the tart crust: Combine the flour and salt in a medium mixing bowl and whisk together. Add the butter and coconut oil and rub between your fingers until nickel-size flakes of fat are evenly dispersed into the flour. Add the cold water and gently mix into a shaggy mass. Turn out onto a piece of plastic wrap, press together into a disc, wrap tightly and refrigerate for at least 1 hour.
- Spray a muffin tin with 2 1/2-inch-diameter cavities with cooking spray. On a lightly floured countertop, roll out the dough to 1/8 inch thick. Cut rounds with a 3 1/2-inch cutter or bowl. Press the rounds into the greased muffin tin and refrigerate until firm, 30 minutes to 1 hour.
- For the filling: Preheat the oven to 400 degrees F.
- While the crust is chilling, bring the sugar, salt and 1/3 cup water to a boil in a small saucepan. Let cool to warmish. In a measuring cup (or something with a spout), beat together the whole eggs and yolk. Add the warm sugar syrup and whisk to combine. Add the cream and almond extract and whisk to combine. Strain the filling through a mesh sieve.
- Pour the filling into the prepared shells (they should be about 85% filled). Bake until the filling has puffed up and set and the crust is golden, 30 to 35 minutes. Let cool slightly before removing from the muffin tin and eating. The egg puff will fall, but it's ok. These will keep in the refrigerator for a couple of days.
INDIVIDUAL PEACH TARTS
This is a delicious little dessert for that special company you are entertaining - love the poached peaches!!

- POACHED PEACHES: In a medium saucepan, combine sugar and 2 cups water. Bring to a simmer over medium-high, and cook, stirring occasionally, until sugar dissolved. Add lemon juice and peaches.
- Simmer until peaches are tender when pierced with the tip of a knife, about 10 minutes.
- Remove saucepan from heat, and let peaches cool in the poaching liquid. Usin a slotted spoon, remove peaches from poaching liquid, peel, discarding skins.
- Slice peach halves into 6 wedges each. Transfer peaches and poaching liquid to a bowl. Cover; Refrigerate until chilled.
- DIRECTIONS: Preheat oven to 375°F On a lightly floured surface, roll out dough 1/8-inch thick. using a 5-inch cutter, cut twelve rounds, re-rolling the dough as needed. Brush off excess flour, and gently fit rounds into 3 1/2 -inch tart pans with removable bottoms.
- Trim edges with scissors, a paring knife or rolling pin. Place tart pans on baking sheet . Chill for 30 minutes.
- Using a slotted spoon, remove peaches form poaching liquid. Reserve poaching liquid for another use. Arrange three peach wedges in each tart shell.
- In medium bowl, whisk together egg and sugar until thick and pale yellow. Add the flour and salt and whisk until smooth. Whisk in the cream and cognac.
- Spoon custard around peaches in tart shells. Sprinkle lightly with sugar.
- Bake until the custard is puffed and golden, about 35 minutes. Transfer to a wire rack to cool. Serve at room temperature.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Combine baking mix, butter and boiling water. Divide biscuit mixture between muffin cups. Spread covering bottom and up the sides a little. Sprinkle sausage and onions.
- Stir together eggs and cream. Pour equal amounts of egg mixture into muffin cups. Cover with Swiss cheese.
- Bake in preheated oven for 25 minutes, until eggs are set.

CUSTARD TARTS

- Heat the oven to 180C/160C fan/gas 4. Take a sheet of shortcrust pastry and use a 10cm cookie cutter to cut 12 circles into the pastry. Press each circle into the holes of a cupcake tray. Scrunch up squares of baking paper, then use to line each of the pastry cases. Fill each with baking beans or uncooked rice, pressing them in a little, and bake for 10 mins. Remove the beans/rice and the baking paper and bake for 5 mins more, until the base is starting to colour slightly. Remove from the oven and reduce the temperature to 140C/120C fan/gas 1.
- Bring the cream, milk, vanilla bean paste and a small grating of nutmeg to the boil. Beat the egg yolks with the sugar until pale, then pour the hot milk and cream over, beating as you go. Strain custard into a jug, allow to settle for a few mins, then skim off any froth.
- Pour the custard into each of the tart cases, filling them as high as you can. Grate over a little more nutmeg on each, then carefully place back into the oven and bake for 15-20 mins, until the tarts look set with a slight wobble. Remove and cool, serve with a little more nutmeg freshly grated over the top.

- On a floured surface, roll out the dough to a e-inch thickness and cut out 8 5-inch circles of the dough. Transfer circles to a large parchment-lined cookie sheet and refrigerate until chilled. Ease the chilled circles into 8 individual 4-inch-wide buttered tart pans; trim the edges with a paring knife. Chill.
- To make the almond cream, cream the butter in the bowl of an electric mixer. Beat in the sugar until smooth. Add the almond flour, rum and egg, beating well after each addition. Spoon a thin layer of the almond cream in the bottom of each chilled tart. Heat the oven to 375 degrees. Bake the tarts until the almond cream is lightly browned and the pastry is crisp, about 10 minutes. Remove the pans' outer rings and cool the tart shells.
- For the chocolate filling, combine the chocolate, espresso and corn syrup in a medium bowl. Place the heavy cream in a small saucepan and bring just to a boil. Pour the cream over the chocolate mixture and stir gently in the same direction (do not beat), until the chocolate is melted and the mixture is smooth. Stir in the butter until it is melted.
- Pour the mixture into a cup with a spout and fill the tarts to the rims. Use a knife tip to pop surface bubbles. Clean the knife and use it to cut out and lift fragments of gold leaf, and place one in the center of each tart. Let the tarts set, about 1 hour. Serve or store in an airtight tin up to 2 days.

- In a food processor, add flour, cubed butter, confectioners' sugar and salt. Pulse mix on and off for one minute, until the consistency of the flour mixture turns into small breadcrumbs.
- Drizzle ice water into the mixture (ice water is the key here). Close the lid and continue to pulse mix on and off for another one minute. Squeeze the crumbs together with your hands. If they stick together, the dough is ready.
- Transfer the crumb-like dough into a large ziploc bag. Squeeze the dough using your hands and bring all the loose crumbs together until it turns into a nice and smooth dough ball. You can use disposable gloves to make it easier.
- Flatten the dough ball into a 1/4-inch thick rectangle on a lightly floured surface using a rolling pin. Use a 2-inch round cookie cutter (or rim of a glass) and cut out equal pieces of dough. Re-roll any scraps and repeat. You should be able to get about 24 pieces.

- Cook sausages according to package directions. Set aside to drain and cool. Once cooled slice into thin coins.
- Mix eggs and milk or cream until combined. Add can of drained green chilis, salt, cumin, garlic and pepper. Sir to combine. Set aside.
- Roll out pie dough so it is a little more thin. Using a 4.5 inch to 5 inch biscuit cutter. Cut out twelve circles. Spray muffin tin with cooking spray. Place the dough into each muffin slot forming to inside of tin. Pour in egg mixture to about 1/2 full. The sausage and cheese will be divided between each tart. One half of each sausage and a large pinch of cheese works well.
