Blood Orange Champagne Cocktail Food

CAMPARI AND BLOOD ORANGE COCKTAIL

Steps:

• Put ice cubes in a rocks glass. Add the Campari, blood orange juice, and a splash of soda (don't mix).Garnish with an orange slice and a mint sprig.

BLOOD ORANGE CHAMPAGNE COCKTAIL

Steps:

• Spoon 1 1/2 teaspoons crème de cassis into each of 8 Champagne flutes or other glasses. Add 3 tablespoons juice to each glass. Fill each glass with Champagne, then stir gently. Garnish cocktails with slices of blood orange, if desired.

BLOOD ORANGE & POMEGRANATE CHAMPAGNE COCKTAILS

Steps:

• Set out 4 champagne flutes - if they're chilled, all the better! Divide juices between each glass (about 1 tablespoon of each type of juice per glass). Add sugar, if using, and stir until dissolved. Fill the cups almost to the top with Prosecco. Pour slowly - there will be fizz! Drop in a few pomegranate arils and top with an orange slice. Serve.

BLOOD ORANGE & BASIL WINE SPRITZER

Steps:

• Add the blood orange segments, basil and sugar to the bottom of a glass. Using the bottom of a wooden spoon, smash the orange, basil and sugar together; this will help release the flavor of the basil. Add the sparkling wine, then the blood orange soda and stir to combine. Top up with ice. Garnish with a blood orange wheel and enjoy.

BLOOD ORANGE-CHAMPAGNE ICE CREAM FLOAT

Steps:

• Put the Champagne or sparkling wine in a small pan and simmer until reduced by a third. Add the caster sugar and stir until dissolved, then leave to cool. (It's worth making a much larger quantity of this syrup and storing it in the fridge to make other drinks.)
• Pour the vermouth, Campari, Champagne syrup, and soda water into a small shaker and shake for 10-15 seconds. Scoop the sorbet into a chilled float glass. Pour the liquid ingredients on top and garnish with the slice of orange.

• Pour 3 tablespoons juice in each champagne flute. Fill flutes with champagne, and serve.
