1 cup freshly brewed coffee
1/2 cup water or milk
3/4 cup unsweetened Dutch-process cocoa
3 cups all-purpose flour
3 1/4 cups granulated sugar
3/4 teaspoon baking powder
3/4 teaspoon fine salt
1/2 teaspoon baking soda
3/4 cup sour cream
3 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
Confectioners' sugar, for dusting
6 ounces semisweet chocolate, finely chopped
1/2 cup canned unsweetened coconut milk
1 to 2 tablespoons corn syrup
1 1/2 cups unsweetened coconut chips or shredded coconut, lightly toasted

Steps:

  • Preheat the oven to 350 degrees F. Line the large muffin tins with large cupcake liners.
  • Put the butter, coffee, water, and cocoa in a microwave-safe bowl, cover with plastic wrap, and microwave on HIGH until the butter melts, about 2 minutes. Whisk to combine.
  • Meanwhile, whisk the flour, granulated sugar, baking powder, salt, and baking soda in a large bowl. Beat the sour cream with the egg and vanilla in a small bowl. Whisk the hot cocoa mixture into the dry ingredients. Stir in the sour cream mixture just to combine; don't overmix. Divide the batter evenly between the prepared muffin tins, filling each one about 3/4 of the way full (about 2/3 cup per cupcake). Bake cupcakes until a toothpick inserted in the center of the cake comes out clean, about 30 minutes.
  • Cool the cupcakes completely in the tin on a rack. Remove from liners and return cakes to a rack.
  • For the glaze: Put chocolate in a medium bowl. Bring coconut milk and corn syrup to a boil, stirring constantly, then pour it over the chocolate. Let the mixture stand for 10 minutes, then stir until smooth. Spread 1 tablespoon warm glaze evenly over each cake, then scatter the coconut over the top.

1/4 cup shredded sweetened coconut
8 ounces imported bittersweet chocolate chips (recommended: Ghirdelli)
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter, cut into cubes
3 eggs
3 egg yolks
3 tablespoons coconut extract
1/4 cup sugar
5 tablespoons all-purpose flour
Powdered sugar, for decorating

Steps:

  • Preheat oven to 325 degrees F, butter and flour 6 (6-ounce) custard cups. Toast coconut: Spread coconut on a nongreased baking sheet and put in oven until lightly brown and fragrant (about 10 minutes). Remove from the oven and reserve. Put 6 ounces of the chocolate and the butter and 1 tablespoon of the coconut extract in a double broiler being careful not to let the bowl that the chocolate mixture is in come in contact with the boiling water. Stir until all of the chocolate is melted and the mixture is smooth and glossy, take off heat and let cool slightly (about 2 to 3 minutes). Use an electric mixer with the whisk attachment to beat the eggs, yolks, sugar, and remaining 2 tablespoons of coconut extract at low-medium speed for 2 to 3 minutes. Increase speed to high and beat until the egg mixture becomes pale and thick (about 5 to 8 additional minutes). Reduce speed back to its lowest setting (we don't want a cloud of flour in our kitchen!). Gradually sift in the flour while mixing, add the chocolate mixture to the egg mixture and beat again until completely incorporated and mixture is thick and glossy being careful not to overmix (about 5 minutes). Carefully fold in toasted coconut. Fill each prepared custard cup about half way, place a few of the remaining chocolate chips into each custard cup. Top off each with remaining batter. Place all custard cups on a baking dish that is at least 1/2-inch deep (in case of any spills). Bake cakes until edges are set and center is still slightly jiggly (about 12 minutes). Let cool slightly making sure you don't cool the cakes too much, they're best served warm. Carefully run a knife around the edges to loosen the cake and invert the cake onto individual plate. Dust with powdered sugar and more toasted coconut flakes, if desired.

1 stick (½ cup) unsalted butter, plus more for buttering the ramekins
6 ounces bittersweet chocolate, chopped, best quality such as Ghirardelli
2 large eggs
2 large egg yolks
¼ cup plus 2 tablespoons light brown sugar, packed
1 teaspoon vanilla extract
Pinch of salt
3 tablespoons all purpose flour
Confectioners sugar, vanilla ice cream or sweetened whipped cream, and berries

Steps:

  • Preheat the oven to 450°F and set an oven rack in the middle position. Generously butter six 6-ounce ramekins (really be generous, and do not substitute non-stick cooking spray). Set the ramekins on a baking sheet.
  • Melt the butter in a medium bowl in the microwave. Immediately add the chopped chocolate and stir until the chocolate is completely smooth and melted. If a few chunks remain, place the bowl back in the microwave for 20 seconds, then stir again. Repeat if necessary. Set aside.
  • In the bowl of an electric mixer fitted with the paddle or beaters, beat the eggs, egg yolks, brown sugar, vanilla and salt at high speed until thickened and pale, about 4 minutes. Add the melted chocolate mixture and flour to the egg mixture and fold with a rubber spatula until just combined (the chocolate sinks to the bottom so be sure to scrape it up into the batter).
  • Spoon the batter evenly into the prepared ramekins and bake for 10 minutes, until the cakes are set and puffed over the edges of the ramekins. Let the cakes cool in the ramekins for 1 to 2 minutes; then, holding the hot ramekins with a dish towel, carefully invert the cakes onto dessert plates. They should pop right out, but you can run a thin-bladed knife around the edges if necessary. Serve immediately. (It's important not to let the cakes sit after baking, as the centers will continue to cook.)
  • Make-Ahead Instructions: The batter can be spooned into the ramekins, covered and refrigerated for several hours before baking. Take them out of the fridge about 30 minutes before baking so they come to room temperature.

6 tablespoons butter, unsalted
1/4 cups sugar
2 eggs
1/4 cup all-purpose flour
Fresh raspberries

Chocolate sauce, recipe follows
1 cup whole milk
10 1/2 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
2 tablespoons unsalted butter
1/3 cup sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • In the top of a double boiler, melt the chocolate, then add the butter and sugar until just melted. Add eggs and whisk until well combined; add flour and mix only until combined. Do not overmix or the cake will be rubbery. Lightly grease four 4-ounce disposable aluminum cups, muffin molds, or ramekins with vegetable baking spray. Distribute batter among the four molds. Place molds on a sheet pan and bake for 10 to 12 minutes. Do not overbake.
  • For the Chocolate Sauce: Pour the milk into a 2-quart heavy-bottomed saucepan, place over medium-high heat, and bring to a boil. When it boils, remove the milk from the heat and make a ganache by adding the chopped chocolate. Whisk well, stirring into the edge of the saucepan to combine. The ganache should be homogenous and smooth. Set the ganache aside.
  • In a 1-quart heavy-bottomed saucepan, combine the heavy cream, butter, and sugar. Place the saucepan over medium-high heat and bring to a boil, stirring occasionally. The butter should be completely melted and the sugar completely dissolved. Once the mixture has come to a boil, pour it into the warm ganache. Place the sauce over medium-high heat and bring to a boil, stirring constantly with a whisk. As the chocolate sauce cooks, it will begin to thicken slightly. When it reaches a boil, remove it from the heat, and pour it into a clean, dry bowl. Cover by placing plastic wrap directly on top of the sauce to prevent a skin from forming. Let the chocolate sauce cool to room temperature before storing in the refrigerator. When cold, the sauce will become thick enough to be scooped with a spoon.
  • Invert molds onto individual serving plates. If you would like to decorate the plate, do so with fresh raspberries or fruit or chocolate sauce, and serve immediately.
  • The sauce can be reheated whenever needed. If using a microwave, simply place the chocolate sauce in a microwaveable bowl and heat it at medium-high power in 30-second intervals until it becomes liquid. On the stovetop, place in a heavy-bottomed saucepan over medium heat and stir occasionally until it becomes liquid. If you store it in a squeeze bottle, you can easily drizzle it over a dessert or decorate a plate. It will keep in the refrigerator for up to three weeks. It can also be frozen for up to two months if stored in an airtight container. Thaw in the refrigerator and heat as described above until liquid.

11 tablespoons unsalted butter, cut in large pieces
3 large eggs
3 large egg yolks
1/4 cup plus 2 tablespoons white granulated sugar
5 tablespoons all-purpose flour, sifted

Steps:

  • Preheat the oven to 325 degrees.
  • Butter and flour six 6-ounce custard cups.
  • Place 5 1/2 ounces of the chocolate and the butter in a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Cool slightly.
  • Using a standard electric mixer with the whisk attachment, beat the eggs, yolks and sugar at medium-high speed until they are pale and thick, about 10 minutes.
  • Reduce the speed, and gradually mix in the flour.
  • Add the chocolate mixture to the flour mixture, and continue to beat until thick and glossy, about 5 minutes.
  • Divide half of the mixture among the prepared custard cups. Divide the remaining 2 ounces of coarsely chopped chocolate among them, placing the chunks in the very center of the chocolate mixture (there should be about 1 tablespoon of chopped chocolate per custard cup). Then top with the rest of the chocolate batter.
  • Bake until the cake is set around the edges but the center jiggles slightly when the cup is moved, about 12 minutes. Cool slightly (no more than 5 minutes).
  • Run a sharp knife around the edges of the cups. Turn the cakes out onto plates, and serve.

A delicious and fun recipe that can be made up to a week prior to the actual baking of them (great for a dinner party). I will say that my first attempt was a failure, but my second attempt turned out beautifully. Lots of fun for a busy get-together to make 'ahead of time'. Serve with a scoop of vanilla ice cream you have your cake & ice cream with a wonderful chocolate syrup! This is a recipe that I got from a PBS television program (but I cannot remember what the name of the show was). Enjoy.

6 eggs
1 1/2 cups granulated sugar
1 1/4 cups chopped bittersweet chocolate (at least 72%)
11 tablespoons softened butter (plus more for greasing molds)
1 1/4 cups cake flour
powdered sugar (for dusting tops)

Steps:

  • Heat oven to 425*F.
  • Set up a double boiler (a saucepan filled half way with water and a larger metal bowl or glass bowl that snugly fits on top of the saucepan. Be sure water is not touching the bottom of the bowl). Heat the water to a simmer. Place the butter and bittersweet chocolate in the metal or glass bowl. Melt the butter and chocolate. Stir continuously to combine and set aside to cool a bit.
  • With an electric mixer with a whisk attachment, whip the eggs and sugar to ribbon stage (you can do this by hand too with a wire whisk). Slowly add the chocolate and butter mixture to the egg mixture and combine.
  • Add the cake flour and combine.
  • Pour into 8 well greased 4 oz tins that have a smaller bottom than the top rim. (Use and smear soft butter, all over the bottom and sides. It is VERY important to make sure that all areas are covered completely with butter). Fill to just below the rim. It is recommended to chill them at least 1 hour if planning to make them immediately. (But at this point, you can put the tins in the fridge for a week before baking).
  • Bake in a 425*F degree oven for 8 minutes +/-, checking to see if the outer edge has set (and has risen a little bit above the rim) and the middle is still squishy. You do not want to over bake these cakes.
  • Let the cakes set up for about 2 minutes and then un-mold onto a plate. Be careful not to rip the outer cake when turning over and placing on plates. Sprinkle with powdered sugar if desired. Serve immediately with vanilla ice cream, whipped cream or serve plain. YUM!

1/4 cup heavy cream
4 ounces chocolate, baking bar Bittersweet (60% Cacao)

2 eggs
2 egg yolks
1/3 cup sugar
1/2 teaspoon vanilla extract
1/4 cup cake flour

Steps:

  • Directions.
  • To make centers, melt 2 ounces of chocolate (1/2 a baking bar) and cream in double boiler. Whisk gently to blend. Refrigerate about 2 hours or until firm. Form into 6 balls; refrigerate until needed.
  • To make cake, heat oven to 400°F Spray six 4-ounce ramekins or custard cups with cooking spray. Melt 4 ounces of chocolate (1 baking bar) and butter in double boiler; whisk gently to blend. With an electric mixer, whisk eggs, yolks, sugar, and vanilla on high speed about 5 minutes or until thick and light. Fold melted chocolate mixture and flour into egg mixture just until combined. Spoon cake batter into ramekins. Place a chocolate ball in the middle of each ramekin.
  • Bake about 15 minutes or until cake is firm to the touch. Let it sit out of the oven for about 5 minutes. Run a small, sharp knife around inside of each ramekin, place a plate on top, invert and remove ramekin. Garnish with raspberries and a dollop of whipped cream.

CHOCOLATE ITALIAN SOUFFLE CAKES

3 tablespoons heavy cream
1 tablespoon unsalted butter
2 tablespoons Amaretto (or Grand Marnier or Raspberry liqueur)
8 fresh raspberries, perfect
5 ounces bittersweet chocolate chips
10 tablespoons unsalted butter, cut into small pieces
3 eggs, at room temperature
3 egg yolks, at room temperature
1/2 cup sugar
5 tablespoons all-purpose flour
1 teaspoon all-purpose flour
whipped cream (optional)
ice cream (optional)

Steps:

  • TRUFFLES: Combine the chocolate, cream, and butter in a small heatproof bowl, set over simmering water, and let melt.
  • When almost melted, remove from the heat and stir the mixture until smooth. Stir in flavoring of your choice and refrigerate until thick enough to mound on a spoon, stirring occasionally, about 30 minutes.
  • Line a baking tray with waxed or parchment paper. Scrape the chocolate mixture into pastry bag fitted with a #3 plain tip. Pipe eight 1-inch mounds onto the prepared tray.
  • Place 1 raspberry in center of each chocolate mound and pipe a little more of the chocolate mixture to enclose completely. Refrigerate until firm, about 15 minutes.

  • On low speed, add in the chocolate mixture just until combined. Remove the bowl and fold in the flour, using a rubber spatula.
  • Spoon a little of the batter into each of the prepared cups top with 1 truffle, and cover with the remaining batter.
  • Arrange cups on a baking tray and bake 15 minutes or until edges of the cakes begin to pull away from the sides of the cups. Let stand 10 minutes.

These individual molten chocolate cakes come from my ArtBites "Dining in the Aztec Empire" class, where I learned that chocolate is indigenous to Mexico, and for centuries nobles and priests used it to make an unsweetened drink.

Yield makes 6 servings

Number Of Ingredients 7

6 tablespoons unsalted butter, plus about 2 tablespoons, melted, for the cake molds
4 tablespoons sugar, plus more for the cake molds
12 ounces bittersweet chocolate, coarsely chopped
4 large egg yolks
2 large egg whites
6 small sprigs of fresh mint, for garnish
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400°F. Brush six 4-ounce ramekins with the melted butter. Sprinkle the inside of each ramekin with sugar and tap out the excess. Place the ramekins on a rimmed baking sheet and refrigerate until needed.
  • In the top of a double boiler or a stainless-steel mixing bowl set over a pan of simmering water so that the bottom of the bowl does not touch the water, place 6 tablespoons of butter and the chocolate. Heat until melted and smooth. Set aside to cool slightly.
  • In a large mixing bowl, place 2 tablespoons of sugar and the egg yolks. Whisk until thoroughly blended. Add the chocolate mixture to the egg yolks and stir until well blended.
  • In the work bowl of an electric stand mixer fitted with the whisk attachment, or in a large mixing bowl with a handheld mixer, beat the egg whites on medium speed until they are frothy. Increase the speed gradually and beat until soft peaks form when the whisk is lifted out of the bowl. Sprinkle over the remaining 2 tablespoons of sugar and beat until the meringue is shiny and forms stiff peaks.
  • Fold about 1/4 of the egg whites into the chocolate mixture and then gently fold the remaining egg whites into the chocolate mixture. Do not overmix; it is fine if there are a few streaks of egg white in the batter.
  • Pour the batter into the prepared ramekins. Bake until the cakes rise and then crack on top, and are gooey inside, 10 to 12 minutes.
  • Let cool slightly, then unmold onto individual plates. Garnish with mint and serve warm with vanilla ice cream.

1 cup bittersweet chocolate
6 tablespoons butter, unsalted

1/4 cup all-purpose flour
1 cup whole milk
10 1/2 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
2 tablespoons unsalted butter
1/3 cup sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • In the top of a double boiler, melt the chocolate, then add the butter and sugar until just melted.
  • Add eggs and whisk until well combined; add flour and mix only until combined.
  • Do not overmix or the cake will be rubbery.
  • Lightly grease four 4-ounce disposable aluminum cups, muffin molds, or ramekins with vegetable baking spray.
  • Distribute batter among the four molds.
  • Place molds on a sheet pan and bake for 10 to 12 minutes.
  • Do not overbake.
  • For the Chocolate Sauce: Pour the milk into a 2-quart heavy-bottomed saucepan, place over medium-high heat, and bring to a boil.
  • When it boils, remove the milk from the heat and make a ganache by adding the chopped chocolate.
  • Whisk well, stirring into the edge of the saucepan to combine.
  • The ganache should be homogenous and smooth.
  • Set the ganache aside.
  • In a 1-quart heavy-bottomed saucepan, combine the heavy cream, butter, and sugar.
  • Place the saucepan over medium-high heat and bring to a boil, stirring occasionally.
  • The butter should be completely melted and the sugar completely dissolved.
  • Once the mixture has come to a boil, pour it into the warm ganache.
  • Place the sauce over medium-high heat and bring to a boil, stirring constantly with a whisk.
  • As the chocolate sauce cooks, it will begin to thicken slightly.
  • When it reaches a boil, remove it from the heat, and pour it into a clean, dry bowl.
  • Cover by placing plastic wrap directly on top of the sauce to prevent a skin from forming.
  • Let the chocolate sauce cool to room temperature before storing in the refrigerator.
  • When cold, the sauce will become thick enough to be scooped with a spoon.
  • Invert molds onto individual serving plates.
  • If you would like to decorate the plate, do so with fresh raspberries or fruit or chocolate sauce, and serve immediately.
  • The sauce can be reheated whenever needed.
  • If using a microwave, simply place the chocolate sauce in a microwaveable bowl and heat it at medium-high power in 30-second intervals until it becomes liquid.
  • On the stovetop, place in a heavy-bottomed saucepan over medium heat and stir occasionally until it becomes liquid.
  • If you store it in a squeeze bottle, you can easily drizzle it over a dessert or decorate a plate.
  • It will keep in the refrigerator for up to three weeks.
  • It can also be frozen for up to two months if stored in an airtight container.
  • Thaw in the refrigerator and heat as described above until liquid.

1 1/2 bittersweet baking chocolate (60% Cacao 4oz bars)
2 eggs
1/4 cup heavy cream
8 tablespoons unsalted butter (1 stick)
2 egg yolks
1/3 cup sugar
1/2 teaspoon vanilla extract
1/4 cup cake flour

Steps:

  • To make centers, melt 1/2 bar (2oz) chocolate and cream in double boiler. Whisk gently to blend. Refrigerate about 2 hours or until firm. Form into 6 balls; refrigerate until needed.
  • To make cake, heat oven to 400°F Spray six 4-ounce ramekins or custard cups with cooking spray. Melt 1 bar (4oz) chocolate and butter in double boiler; whisk gently to blend. With an electric mixer, whisk eggs, yolks, sugar, and vanilla on high speed about 5 minutes or until thick and light. Fold melted chocolate mixture and flour into egg mixture just until combined. Spoon cake batter into ramekins. Place a chocolate ball in the middle of each ramekin.
  • Bake about 15 minutes or until cake is firm to the touch. Let it sit out of the oven for about 5 minutes. Run a small, sharp knife around inside of each ramekin, place a plate on top, invert and remove ramekin. Garnish with raspberries and a dollop of whipped cream.

This will take 2-3 minutes, so be patient & keep mixing! Temper the egg mixture by folding in about ¼ cup of the warm, melted chocolate, working to ensure the eggs do not scramble. Once combined, gently fold in the remaining chocolate. You want to work carefully here to avoid deflating all of the volume that you just put in the egg mixture!
  • Transfer the batter into the prepared ramekins. Bake for 20-25 minutes, until the edges begin to pull away from the ramekins and the tops are set. Remove from the oven and allow to cool in the ramekins for a few minutes before running a knife around the edges to loosen the cake before carefully turning the cakes out on to a plate to cool completely.
