1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup fresh blueberries
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 cup powdered sugar
1/4 cup milk
violet paste food color

Steps:

  • Heat oven to 375ºF.
  • Reserve 1 Tbsp. dry cake mix. Use remaining cake mix to prepare batter as directed on package. Add dry pudding mix; beat 2 min. Toss blueberries with reserved cake mix; stir into batter. Spoon into 24 muffin pan cups sprayed with cooking spray.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min. Remove to wire racks; cool completely. Turn cupcakes upside-down.
  • Beat cream cheese, powdered sugar and milk in small bowl with mixer until blended. Tint to desired shade with food color. Spoon over cupcakes; let stand 15 min.

This is based on another recipe which I modified for our taste. It's very moist with a great banana flavour (as long as you use really overripe ones). Because there is not a lot of sugar, most of the sweetness comes from the bananas; it is not intended to be an overly sweet cake so please don't give this recipe a poor review simply because you are expecting it to be sweeter. Having said that, it still makes a really nice afternoon tea while being quite low in saturated fat for a cake and full of fruit. You can try adding more sugar if you like but of course then it won't be as healthy. :)

400 g bananas, very ripe
2 cups self-raising flour
1 teaspoon baking powder
1/3 cup brown sugar
1/3 cup sunflower oil or 1/3 cup low-fat butter
1/3 cup low-fat milk
2 eggs
1 punnet fresh blueberries

Steps:

  • Preheat your oven to 180°C Line the bottom of a 20cm deep round cake pan with baking paper, then grease it.
  • Mash bananas with a fork.
  • Sift baking powder and flour into a bowl and then stir in the sugar.
  • Mix the oil (or butter, if using), milk, bananas and eggs in another bowl, then mix with the flour-sugar mixture.
  • Pour half of the batter into the cake pan, spinkle half the blueberries over the top, then top with the rest of the batter.
  • Decorate the cake with the remaining blueberries and then bake in the oven for 50-55 minutes.
  • Allow the cake to cool in the pan for 10-15 minutes, then gently turn out onto a rack to finish cooling.
  • Serve with sweetened cream or ice cream for a yummy afternoon tea!

2 cups whole wheat flour (I use white whole wheat flour)
2 cups oats (I use old fashioned)
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups plain yogurt (low-fat or fat-free, see notes)
1/2 cup unsweetened applesauce
2 large eggs
2 teaspoons vanilla
zest and juice of 1 lemon
1 1/2 cups blueberries (slightly less than a pint)
1 cup powdered sugar
3-5 teaspoons lemon juice

Steps:

  • Preheat oven to 350. Generously grease a 9-inch round springform pan with cooking spray.
  • In a large bowl, add the flour, oats, sugar, baking powder, baking soda and salt. Stir well to combine.
  • In a separate medium bowl, add the yogurt, applesauce, eggs, vanilla, and lemon zest and juice. Stir well to combine, breaking up any lumps from the yogurt.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix. Gently fold in blueberries.
  • Transfer batter to prepared pan and bake for 40-50 minutes, until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10 minutes, then carefully remove and transfer to a wire baking rack to cool completely.
  • Meanwhile, make the lemon glaze, if using. Add powdered sugar to a small bowl and add the lemon juice, starting with just 2 teaspoons. Add an extra teaspoon as needed, stirring constantly, until you get a good drizzling consistency.

If you're celebrating Labor day this next week this is a nice dessert to serve at your barbecue! Lots of us have frozen blueberries this time of year and this would be wonderful to make. Easy and refreshing!

2 c fresh or frozen blueberries
4 Tbsp sugar, divided
1 1/2 tsp cornstarch
1 container (about 6 oz.) nonfat vanilla yogurt
4 oz neufchatel cheese (room temp. reduced fat cream cheese)
2 Tbsp sweet sherry or orange juice (optional)
2 1/2 c pound cake in 1/2 inch cubes (half of 10-11 ounce pkg)

Steps:

  • 1. In small saucepan, stir together 1/2 cup of the blueberries, 2 tablespoons of the sugar, the cornstarch, and 3/4 cup water. Bring to a boil; cook and stir until sauce is clear and thickened and berries pop, about 5 minutes;cool. Add 1 cup of the blueberries. Meanwhile, in small bowl, combine, yogurt, neufchatel cheese, and remaining 2 tablespoons sugar until smooth; stir in sherry or orange juice.
  • 2. To serve in individual 6 to 8 ounce glasses: Spoon about 1/4 cup of the cake cubes into the bottom of each glass; top with heaping tablespoon of the blueberry sauce and about 2 tablespoons of the yogurt mixture; repeat; garnish each glass using remaining 1/2 cup blueberries. Cover and refrigerate for at least 1 hour. Alternatively, to serve Blueberry Trifle in a 1 quart glass bowl by arranging in layer, half of the cake cubes topped with half of the blueberry sauce and yogurt mixture; repeat. Garnish with remaining 1/2 blueberries. Cover and refrigerate for about 2 hours. Yield: 4-6 servings
