2-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon dried ajwain seeds or dried thyme
1 cup cold unsalted butter
6 to 8 tablespoons ice water
4 cups cubed peeled potatoes
1/2 cup frozen peas, thawed
1 tablespoon lemon juice
1 tablespoon chat masala seasoning
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon chili powder
1/4 teaspoon ground turmeric
1/2 teaspoon salt
1 to 2 red chili peppers, minced, optional
Green or tamarind chutney, optional

Steps:

  • In a large bowl, mix flour, salt and ajwain seeds; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic wrap. Refrigerate 1 hour or overnight., Preheat oven to 375°. For filling, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain; return to pan. Mash potatoes gently, leaving some chunks. Stir in peas, lemon juice, seasonings and, if desired, chili peppers., On a lightly floured surface, roll 1 half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate greased well with butter. Trim even with rim. Add filling. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake until crust is golden brown, 40-45 minutes. Cool for 10 minutes before cutting. If desired, serve with chutney.

Samosas are a lovely, famous Indian snack that is loved by people of all ages. Pair this perfect mid-day treat with a delightful chutney.

3 cups all-purpose flour
2 tablespoons ghee (clarified butter)
Dash salt (or to taste)
5 large potatoes (boiled, peeled and mashed roughly)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon raw mango powder (aamchoor)
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
Dash salt (or to taste)
Vegetable, canola or sunflower oil (for frying)

Steps:

  • Mix the flour with the ghee and salt to taste. Add a little water at a time to it, to make a firm, smooth dough. Keep aside.
  • In a pan, heat 2 tablespoons oil and add the cumin seeds to it. When they stop spluttering, add the coriander, turmeric, red chili, raw mango, and garam masala powders; fry for just a few seconds.
  • Add the potato to this spice mixture and mix well-season with salt.
  • Simmer and cook for 7 to 10 minutes. Keep aside.
  • Divide the dough you made earlier into golf ball-sized portions. On a lightly floured surface, roll each ball out into a circle roughly 7-8" in diameter (and approximately 1/6" thick).
  • Cut each circle into 2 with a sharp knife.
  • Take one semi-circle and lightly wet its straight edge with water. Fold it into a cone, joining this wet edge and pressing gently to seal well.
  • Fill this cone 3/4 full with the potato filling made earlier. You can put any semi-dry filling you desire into samosas- minced meat , spinach, etc.
  • Lightly wet the open edges of the cone and press together to seal well. Use all the dough up in a similar manner.
  • Deep fry the samosas till golden. Drain on paper towels.
  • Serve hot with tamarind chutney and mint-coriander chutney.

EASY BAKED INDIAN SAMOSAS



Easy Baked Indian Samosas image

This has all the flavor and heartiness of a great samosa without the frying. Although this is an easier, healthier version of the fried samosa, it tastes very authentic. This recipe has the added advantage that you can make ahead and freeze uncooked samosas, simply skip the egg brushing, freeze until you're ready and cook at 350 degrees F (175 degrees C) for 25 to 30 minutes. Serve warm, plain, or with chutney.

4 potatoes, peeled and cubed
¼ cup oil
2 small onions, finely chopped
3 tablespoons coriander seed
1 tablespoon curry powder
1 (1 inch) piece fresh ginger, grated
1 teaspoon salt

1 teaspoon ground cumin
½ teaspoon ground allspice
½ teaspoon cayenne pepper

2 roma (plum) tomatoes, finely chopped

4 prepared pie crusts

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a bowl; coarsely mash.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat oil in a skillet over medium-high heat; cook and stir onions, coriander seed, curry powder, ginger, salt, turmeric, cumin, allspice, cayenne pepper, and cinnamon until onion is lightly browned, about 5 minutes. Remove skillet from heat and stir tomatoes and peas into onion mixture; pour into mashed potatoes and thoroughly mix. Cool completely.
  • Cut each pie crust into 8 even triangles. Spoon filling onto the wide end of each triangle; fold corners over filling creating a triangular 'hat' shape. Pinch the dough together to form a seal. Brush egg white over each samosa and arrange on a baking sheet.
  • Bake in the preheated oven until samosas are golden brown, about 15 minutes.

1 cup all-purpose flour
2 tablespoons vegetable oil
2 large potatoes (boiled)
1 onion, chopped
2 green chilies, very finely chopped
3 tablespoons oil
1/2 teaspoon ginger, grated
1/2 teaspoon garlic, crushed
coriander seed
1 tablespoon cilantro, finely chopped
1/2 lemon, juice of
1/2 teaspoon turmeric
1/2 teaspoon garam masala

Steps:

  • Mix together the flour, oil and salt.
  • Add a little water, until mixture becomes crumbly.
  • Keep adding water, kneading the mixture till it becomes a soft pliable dough.
  • Cover with a moist cloth and set aside for 20 minutes.
  • Beat dough on a work surface and knead again.
  • Cover and set aside.
  • FILLING.
  • Heat 3 tbsp oil.
  • Add ginger, garlic, green chillies and few coriander seeds.
  • Stir fry for 1 minute, add onions and saute till light brown.
  • Add cilantro (fresh coriander), lemon juice, turmeric, red chili, salt and garam masala.
  • Stir fry for 2 minutes.
  • Add potatoes.
  • Stir fry for 2 minutes.
  • Set aside and allow to cool.
  • Divide dough into 10 equal portions.
  • Use a rolling pin, roll a piece of dough into a 5" oval.
  • Cut into 2 halves.
  • Run a moist finger along the diameter.
  • Roll around finger to make a cone.
  • Place a tablespoon of the filling into the cone.
  • Seal the third side using a moist finger.
  • Deep fry the samosas on low to medium heat until light brown.
  • Serve with tomato sauce or any chutney you love.

½ cup all-purpose flour
½ cup whole-wheat pastry flour
¼ teaspoon salt
2 tablespoons vegetable oil
6 tablespoons ice-cold water, or more as needed
1 ¼ pounds potatoes, peeled and quartered
1 tablespoon black or yellow mustard seeds
1 teaspoon curry powder, or more to taste
1 teaspoon ground ginger
½ teaspoon ground cumin
⅛ teaspoon red pepper flakes
1 ½ teaspoons vegetable oil
1 cup diced onion
½ cup diced carrot
1 tablespoon minced garlic
1 cup low-sodium vegetable broth
1 cup frozen peas
2 teaspoons white sugar
salt and ground black pepper to taste
2 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk all-purpose flour, pastry flour, and salt together in a bowl. Drizzle 2 tablespoons vegetable oil into the flour mixture while stirring until clumps form. Stir cold water, 1 tablespoon at a time, into the dough until it holds together; shape into ball, cover with damp towel, and set aside.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes; drain. Transfer drained potatoes to a large bowl and mash until only small chunks remain.
  • Stir mustard seeds, curry powder, ground ginger, cumin, and red pepper flakes together in a bowl.
  • Heat 1 1/2 teaspoons vegetable oil in a skillet over medium heat. Cook and stir onion, carrot, and garlic in the hot oil until carrot is tender, about 5 minutes.
  • Move onion mixture to one side of the skillet. Pour seasoning mixture to the skillet and cook until the spices are toasted and fragrant, about 30 seconds. Stir onion mixture and spice mixture together; add vegetable broth and peas to the skillet and stir.
  • Fold the carrot mixture into the mashed potatoes; add sugar, stir, and season with salt and pepper. Spread the filling into a 9-inch pie plate.
  • Turn dough out onto a lightly floured work surface; roll out to an 11-inch disc. Place dough atop the pie filling, pressing down on the dough in several spots to remove any pockets of air. 2 1/2 cups all-purpose or pastry flour
1/2 teaspoon sea salt
1/4 teaspoon baking powder
1 cup (2 sticks) cold butter, cut into 8 pieces
6 to 8 tablespoons ice water
vodka (optional and as needed)
2 teaspoons coconut oil or other oil
1 teaspoon brown mustard seeds
1 teaspoon cumin seeds
1 medium onion, finely chopped
1 small carrot, diced
1-inch piece fresh ginger, finely chopped
1 clove garlic, minced
2 to 3 hot chilies, seeded and finely chopped
1 teaspoon ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon paprika
1/2 teaspoon chili powder
2/3 teaspoon chat masala (optional)
1/2 teaspoon ground turmeric
1/4 to 1/2 teaspoon ground cayenne
pinch of asafetida (optional)
1 teaspoon sea salt, or to taste
8 oz (225 g) mushrooms, chopped
1 large tomato, finely chopped
1 small bunch fresh spinach, trimmed and roughly chopped
1 large potato, roasted or boiled, peeled and cubed
1 cup fresh or frozen peas, lightly steamed or gently boiled for a few minutes
1 1/4 cup cooked chickpeas (1/2 cup dried or 1 14 oz can)
1/4 cup fresh parsley, trimmed and finely chopped
small handful of fresh basil, finely chopped (optional)
2 tablespoons butter, ghee or oil
2 tablespoons chickpea flour (besan) or unbleached white flour
1 1/4 cup coconut milk or plain whole fat yogurt
1/2 teaspoon garam masala

Steps:

  • Begin by preparing your pie crust.
  • If you are making the butter crust, combine the flour, salt and baking powder in a large bowl. Working quickly, cut in the butter using two knives or a pastry cutter until the butter is reduced to very small pieces. (Alternately, grate the butter into the mixture.) Gradually sprinkle 6 tablespoons of ice water over the dough and combine with a fork. The dough is ready for rolling once it holds together when you squeeze it. If the dough is too dry, add a little more ice water or some vodka. You don't want the dough to be too sticky.
  • Divide the dough into two pieces and roll into balls. Wrap in plastic wrap. Chill in the refrigerator for 30 minutes.
  • While the dough is chilling, prepare your filling. Heat the oil over medium heat in a large saucepan. When hot, toss in the mustard seeds and cumin seeds and cook, stirring frequently, until the mustard seeds turn grey and begin to splutter and pop. Add the onion to the pan and fry, stirring often, until the onion begins to soften, about 5 minutes. Add the carrot to the pan and cook for another 5 to 7 minutes. Add the ginger, garlic and chilies, and cook for another few minutes. Now add the mushrooms and stir for few minutes until they start to release their liquid.
  • Next come the spices. Add the ground cumin, coriander, paprika, chili powder, chat masala (if using), turmeric, cayenne, asafetida and salt, and stir for 1 minute.
  • Now add the tomato and continue to stir for a few minutes to thicken. Add the spinach, a handful at a time, until wilted. Gently stir in the potato, green peas, chickpeas, parsley and basil if using, and gently simmer on medium-low heat.
  • In a small saucepan, melt the butter or heat the oil over medium-low heat. When hot, whisk in the flour and keep stirring until browned - about 3 minutes. Turn up the heat slightly and whisk in the coconut milk or yogurt. Simmer, whisking occasionally, until the mixture thickens - about 3 to 4 minutes. Whisk in the garam masala and transfer the mixture to the cooked vegetables and chickpeas. Simmer for another few minutes to blend the flavors. Remove from the heat and let cool for a bit.
  • To finish, roll out half of the dough into a 12-inch circle, roughly 1/8-inch thick. Gently fold the pastry in half and transfer to a 9-inch pie plate. Do not stretch the dough, but carefully press the round into the dish so that the sides are lined and you have some overlap. Trim excess dough so that about 1/2-inch remains to make up the crust.
  • Transfer the filling to the lined pie plate, spreading the mixture out evenly.
  • Roll out the second round of dough and place on top of the pie. Press together the bottom and top layers of the pastry and trim off any excess. Fold the top layer of dough over and under the bottom layer, press firmly together and flute the edges. Cut 4 to 5 slits into the top of the pastry.
  • Bake in a preheated 425°F oven for 30 minutes. At this point, remove from the oven and cover the outer layers of the crust with some foil wrap so the edges don't burn. Return to the oven and bake for another 15 to 20 minutes or until the top of the pie is golden brown.
  • Let the pie cool for 10 to 15 minutes before serving.
