PISTACHIO ICE CREAM | PISTA ICE CREAM
Make this easy pistachio ice cream in a ice cream maker, kitchen-aid attachment or with a electric mixer. Serve it as is or over waffles or pancakes for a dessert meal. I am sharing 2 methods to make this pista ice cream.

- If you do not have a ice cream maker, please follow this ice cream recipe without maker. Return back to the next section in this recipe
- Chop pistachios finely and set aside some for garnishing.
- Freeze the icecream maker bowl as per the manufacturers instructions, usually for 24 hours or so.
- Whisk together milk, vanilla and sugar to dissolve the sugar completely. Pour cream and mix well. This has to be very cold otherwise chill this well for 12 hours in the refrigerator.
- Start the machine and pour the mixture slowly into the churner. Churn for 15 to 20 mins, until thick. The timings may vary depending on the temperature and your ice cream machine.
- If using a kitchenaid ice cream attachment it makes a click noise when the ice cream is thick and perfectly done. You are going to stop at this stage. It is soft set & is eatable.

PISTA KULFI
Pista Kulfi is a very popular Indian ice cream. Kulfi comes in a variety of different flavors. Traditional kulfi is flavored with cardamom; this recipe is flavored with cardamom and pistachios.

Steps:
- Remove the crust from all sides of the bread and cut the bread in small pieces.
- Blend bread pieces, cornstarch, and a 1/2 cup of milk, making smooth paste and set aside.
- Boil remaining milk (3.5 cups) in nonstick frying pan on medium high heat. Stir milk as needed to keep milk from burning on the bottom of the frying pan. Stir the sides of the pan to avoid scalding.
- After milk comes to boil, let the milk boil for another 12 minutes. The goal is to boil the milk from 3 1/2 cups to 2 1/2 cups.
- Add the bread mixture to the milk in frying the pan and cook for another 4 minutes, reducing the heat to medium. Bread and cornstarch are added to reduce the water crystallizing in kulfi during freezing.
- Next add sugar and pistachios and cook for 2 more minutes. Turn off the heat and add cardamom powder.
- Cool the milk to room temperature and pour into a bowl,
- Take cellophane wrap and place it right over the milk covering it completely. Note: It is important that the cellophane wrap touches the milk.
- Put it in freezer. It will take about 7 hours for the kulfi to be ready to serve.
INDIAN ICE CREAM WITH PISTACHIOS

- 1. Prepare the pudding or the ice cream. Prepare the pistachios. Then, mix everything together in a large bowl and whip with either a fork, a whisk, or an electric mixer until smooth.2. Transfer to traditional kulfi molds or disposable 5 1/2-ounce plastic soufflé cups. Cover and place in the freezer until completely frozen, at least 4 hours.3. To serve, dip each, mold in hot water about 10 seconds, run a knife around the inside of the mold and transfer immediately to a dessert plate. SAFFRON CARDAMOM ICE CREAM WITH PISTACHIOS
It's getting warmer & my eye has turned to cold luscious ice creams to cue up for summer. This cooked custard ice cream came from August 1993 Gourmet Magazine. This is produced/created by the Ciao Bella Gelato Company of New York. This combines cardamom with the saffron and pistachio nuts for a cool follow-up to a fiery East Indian curry or spicy Middle Eastern cuisine. It distinctly states that the use of saffron threads (againstthe use of saffron powder) will evoke the right aromatic flavor for "this suave dessert." Mmmmm... Thank you Trader Joe's for the saffron threads! Some of the prep time is for cooling custard - though I would opt to let it chill overnight in fridge & prechill in freezer before putting in my small Cuisinart ice cream maker which can poop out before the churning is ideal.

- Combine the milk, cream, saffron and bring to a boil in a heavy saucepan .
- Remove pan from heat and let cream mixture stand, covered, for 1 hour.
- Return pan to the heat and bring mixture to just simering.
- In another bowl, whisk egg yolks, sugar and pinch of salt together.
- Add 1/2 cup of the cream mixture to the eggs & blend to temper them.
- After mixing, add the rest of the cream to the egg mix in a steady stream, whisking to blend well.
- Pour the entire mixture back into the pan.
- Cook this custard over moderate low heat, stirring until a thermometer reaches 170°F.
- Strain through a fine sieve into another bowl and stir in cardamom.
- Let custard cool completely and freeze in ice cream freezer according to manufacturer's recommendations.
- Add pistachios during last few minutes of freezing/churning time.

KULFI (INDIAN ICE CREAM WITH NUTS)
A wonderful Madhur Jaffrey recipe. You don't need an ice-cream maker for this recipe, but if you do have one, you may use it! There are quite a few recipes posted here which includes cream. Kulfi is not made with cream, it's made with reduced milk. You may use full-cream or semi-skimmed milk. So, it would help to have a wide, heavy based sauce-pan for boiling down the milk, but a heavy non-stick pan would do as well. Please note, the cooking time does not include cooling time and freezing time.

- Pour the milk into a wide, heavy based sauce pan and bring to boil over high heat, stirring constantly.
- As soon as the milk begins to rise, turn the heat down just to the point to allow the milk to simmer vigorously but without boiling over.
- Add in the cardamom pods.
- Leave the milk to boil and stir the sides of the pan constantly to avoid scalding.
- Whenever a film forms on top of the milk, just stir it in .
- The milk has to reduce to about a third of the original amount, about 750 ml (1 1/4 pints) which will take about 45 minutes.
- When the milk has reduced, remove the cardamom pods and discard them.
- Add in the sugar and almonds, stir and simmer gently for 2-3 minutes.
- Pour the reduced milk into a bowl (which can be put into the freezer) and let it cool completely.
- Add half of the chopped pistachios and stir them in .
- Cover the bowl with an aluminum foil and put it in the freezer.
- (I do not have an ice-cream maker, but if you do, then you can pour the milk into the machine and get it going).
- Meanwhile, put 6 small individual cups or a 900ml ( 1 1/2 pints) pudding basin in the freezer.
- Every 15 minutes or so, remove the ice-cream bowl from the freezer and give the ice-cream a good stir.
- As the ice-cream begins to freeze, it will become harder to stir but when it becomes almost impossible to stir, take out the cups or pudding basin from the freezer and divide the ice-cream between the cups or empty it into the pudding basin.
- Sprinkle the remaining pistachios over the top and cover with aluminum foil sealing them well on the edges.
- Return them back to the freezer to let the ice-cream harden (for at least 4 hours).
- If it's in individual cups, then remove the cups from the freezer 10-15 minutes before you want to serve it to soften slightly.
- If it's made in the pudding basin, you can put it in the fridge 20-30 minutes before serving.
- Remove the ice-cream from the pudding basin by running a sharp knife around the edges of the ice-cream and slip it onto a serving plate (it should slip off easily, if it doesn't then dip the bowl in hot water and try again).
- Cut into 6 slabs and serve.
