PAKORA (INDIAN VEGETABLE FRITTERS)

Recipe video above. Vegetable fritters can be so bland and uninspiring ... but not in the hands of Indian cooks! Pakoras are a traditional Indian street food made with all sorts of vegetables. I've used onion, potato and caulifloiwer, but see Note 5 for other options. Serve as starter for an Indian menu, light meal or pass around as canapes. They're gluten free and vegan so everybody can enjoy them!Spiciness: Mild. Large chillies are not that spicy, and we are using 2 across lots of pakoras! Feel free to omit/reduce the fresh chilli and chilli powder.No deep fry method - See Note 7 for shallow pan-fried version.

2 1/4 cups chickpea flour ((Note 1))
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp fenugreek powder ((Note 2))
1/2 tsp chilli powder ((pure chilli powder, Note 3))
2 tsp salt ((cooking/kosher salt))
3/4 cups + 2 1/2 tbsp water
1 1/2 cups onions (, grated using standard box grater (~1 1/2 onions))
2 cups potato ((~1 large), peeled and grated using standard box grater (Note 4))
2 1/2 cups cauliflower ((~1/4 large head), finely chopped into rice size pieces (or grate))
2 large red chillies ((cayenne peppers), finely chopped (adjust spiciness to taste, or leave them out))
1 tbsp fresh ginger (, finely grated)
2 tbsp coriander/cilantro leaves (, finely chopped)
3 - 4 cups vegetable or canola oil ((4cm / 1.5" depth in pot))
2 cups mint leaves
1 cup coriander/cilantro leaves
1/4 cup eschalot (, sliced)
3 tbsp lime juice
1 tsp caster sugar
1/2 tsp cumin seeds
1/2 tsp cooking/kosher salt
2 ice cubes ((loosens + keeps sauce green))
1 cup plain yoghurt
1/2 cup mint leaves (, packed)
1/4 tsp salt

Steps:

  • Make batter: Place chickpea flour in a bowl with the spices (turmeric, cumin, coriander, fenugreek, chilli). Slow whisk in the water.
  • Mix in Vegetables: Add potato, cauliflower, onion, ginger, chilli and coriander. Mix well with a wooden spoon. It should be a thick batter, almost paste-like.
  • Preheat oven to 80°C/175°F - to keep cooked pakoras warm. Set a rack over a tray.
  • Heat oil: Heat 4cm / 1.5" oil in a large heavy based pot to 180°C/350°F (Note 6).
  • Form patties: Drop 2 tbsp of batter roughly formed into a patty shape into the oil. I use my hands (as is typical in India!) but you can also use 2 tablespoons (be careful of splash-age). Don't crowd the pot, it will lower the temperature too much.
  • Fry pakoras: Fry 2 - 3 minutes until golden. Drain on paper towels. Keep cooked pakoras hot in the oven on a rack set over a tray.
  • Serve: Serve pakoras with Coriander Mint Sauce or Minted Yogurt Sauce!

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. 1/2 to 3/4 cup canola oil or bacon drippings
2 cups yellow or white cornmeal
1 teaspoon salt
1-1/4 cups water
Optional: Butter and honey

Steps:

  • Preheat oven to 375°. Add oil to a 12-in cast iron or oven-proof skillet; place in oven. In a large bowl, whisk together all cornmeal, salt and water. Mixture will be thick. Carefully spread mixture evenly in skillet, spooning some of the oil on top of batter. Bake until edges start to brown, about 35 minutes. To serve, break into pieces and serve with butter and honey if desired.

2 pounds - frozen corn
1 - stick butter (not margarine)
1/2 & 1/2 - just enough to almost cover corn
- several shakes of louisana hot sauce (optional)
- salt and pepper

Steps:

  • Melt butter in 12 inch skillet. Add corn, Louisiana Hot Sauce, salt and pepper and pour Half & Half to just below corn level.
  • Once the corn defrosts in the skillet the Half & Half will be at the level of the corn.
  • Cover and simmer on LOW heat. This has to be stirred often and watched carefully.
  • Simmer until the Half & Half has almost evaporated. This can take from 20 to 30 minutes for the liquid to cook down.
  • Note: Because this recipe uses real butter and Half & Half it will burn easily if not cooked on very low heat and stirred often.

My Crispy Corn Fritter (Indian Corn Pakora) are made with sweet corn in a batter with earthy Indian spices for a satisfying snack in no time!

2 cups corn kernels (cooked or thawed)
1/2 medium red onion (thinly sliced, 1/2 cup)
1 tsp garlic (minced or paste)
1 tsp ginger paste
1 Birds Eye Chile (minced (optional, for more heat))
1/2 cup besan flour (, chickpea flour)
2 tbsp rice flour
1 tsp kashmiri red chili powder ((See Note 1))
1/2 tsp ground cumin
1/4 tsp ground turmeric
1/4 tsp kosher salt
1/4 tsp garam masala seasoning
1/8 tsp ground asafoetida (hing)
10 dried curry leaves (chopped if fresh, crushed if dried)
1 1/2 cups vegetable oil (deep frying)

Steps:

  • In a large mixing bowl add the corn kernels and red onion.
  • Using your hand, squeeze and mash the vegetables through your fingers, mixing well and releasing corn milk.
  • Add the Dry Ingredients to the vegetables, mixing well to form a wet, clumpy mixture. Add a tablespoon of water if needed to hold a scoop together (or tablespoon of chickpea flour if too loose) to fry.
  • Heat vegetable oil in a large frying pan or saucepan (large enough to cook four pakoras at a time) over medium heat to reach 300°F.
  • Use a 1/4 cup scoop and fry in batches of 4 to not over crowd and drop the oil temperature. Cook 3 minutes per side and golden brown. Drain on paper towel lined baking sheet and keep warm in oven (250°F ) while you finish frying remaining pakoras. Typically makes 12-14 pakoras.
  • Serve hot and with tomato chutney, mint and coriander sauce or dipping sauce of choice.
