FRIED CHEESE
An extremely tasty new way to eat cheese! Very easy and quick to make. It tastes like a warm, buttery Cheese-It. Is very healthy but doesn't taste like it!

Steps:
- Spray a cooking pan with PAM spray.
- Set heat to medium-high.
- Sprinkle the 1/2-1 cup of cheese onto pan, (make sure cheese is evenly spread out into a circular shape).
- When cheese is bubbling a lot and the edges have a golden/brown color flip the cheese over like a pancake.
- (This side takes a lot less time to cook so moniter it carefully).
- When both sides have a golden/brown color, take out of pan to serve.
FRIED CHEESE CURDS
Steps:
- In a medium bowl, mix the flour, baking powder and salt. Stir in the club soda and mix until smooth. Add the cheese curds to the batter and coat thoroughly.
- Heat the oil in a large, heavy skillet or heavy-bottomed pot over medium heat until a deep-frying thermometer inserted in the oil reads 360 degrees F. Fry the cheese curds for about 1 minute, turning halfway through. Drain on paper towels. Serve the fried cheese curds with marinara or your favorite dipping sauce.
I'VE GOT THE NEED, THE NEED FOR FRIED CHEESE
Steps:
- In a medium saucepan, add oil and heat to 325 degrees F.
- In a medium shallow bowl, whisk eggs and milk thoroughly. In another medium bowl mix panko and Italian bread crumbs.
- Dredge 1 entire side of egg roll wrapper into egg wash. Place 2 slices of salami in the center of wrapper, towards the edge closest to you. Place 1 stick of cheese on top of salami. Roll wrapper edge closest to you over the filling. Tuck ends and continue to roll until it forms an egg roll shape.
- Dredge rolled wrapper in egg wash again, and then thoroughly coat in bread crumb mixture. (Wrappers can be frozen for future use at this point.)
- Add 1 to 2 rolled wrappers to oil at a time, cooking 2 to 3 minutes, until golden brown. Be careful not to over cook, or cook on too high of a temperature as wraps may explode. Remove fried cheese to a paper-towel lined plate and serve immediately
HOME-FRIED CHEESE STICKS
These is an easy, cost-efficient way to make home-made fried cheese sticks. Taste just wonderful, light crispiness. More for your dollar and easily stored in the freezer for when you have a craving. I make 2 batches, one for the 'now' and one for later. Serve with your favorite dipping sauce.

Steps:
- Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
- Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
- Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.

FRIED CHEESE
This fried cheese is such a treat. There's a delicious mixture of cheeses that give these little cheese bites great flavor and a gooey texture. Dipped in marinara they make a great party appetizer or treat for game day.

Steps:
- 1. In a large mixing bowl, combine ricotta, mozzarella, Asiago, and Parmesan cheeses.
- 2. Add the egg and Italian seasoning. Mix well with clean hands.
- 3. In a medium-sized skillet, heat oil over medium-high heat.
- 4. While the oil is heating, take tablespoonfuls of the ricotta mixture and form into a 1 to 2-inch balls.
- 5. Lightly roll the cheese balls into the Italian bread crumbs and then lightly into the Panko bread crumbs.
- 6. Carefully place the cheese balls into the oil in small batches. Do not overcrowd the skillet.
- 7. Let cook for about 1 to 2 minutes, then carefully flip the cheese balls over with a slotted metal spoon.
- 8. Once the cheese balls have a golden brown color, remove them using the slotted spoon.
- 9. Place on a paper-towel-lined plate to drain excess grease. Serve warm with warm marinara sauce.
FRIED CHEESE
A cheese lovers dream come true! Can be made with Monterey Jack, Cheddar, American, Swiss or Mozzarella cheese. Try serving with red pepper jelly as a great appetizer.

- Cut cheese into 3/4 inch cubes.
- Heat oil (2 inches deep) in deep fryer or saucepan to 375 degrees.
- Beat 1 cup baking mix, milk and egg with hand beater (or fork) until smooth.
- Coat cheese cubes lightly with dry baking mix and insert round wooden pick in each cube.
- Dip into batter, covering cheese completely.
- Fry several cubes at a time, turning carefully until golden brown (1 to 2 minutes).
- Drain on paper towel.

CHEDDAR FRICO
Frico, or "little trifles" in Italian, are very thin and crisp. When sprinkling the cheese mixture in the skillet, don't worry if there are spaces; the cheese will melt into a lacy whole. In Italy, frico are traditionally made with Montasio cheese, but other cheeses, such as cheddar, Asiago, and Parmesan, produce excellent results.

- In a medium bowl, toss together cheese and flour. Heat a large nonstick skillet over medium-low heat. Sprinkle about 1 1/2 tablespoons cheese mixture into skillet to form a 4-inch round.
- Cook until cheese is starting to melt and become firm, 1 1/2 to 2 minutes. Using a small offset spatula, turn; continue cooking until it is firm and slightly golden, 15 to 30 seconds more.
- Immediately drape frico over a rolling pin, and let cool slightly to set the shape. Repeat with remaining cheese mixture. If skillet gets too hot and frico begin to color too quickly, remove from heat for several minutes before proceeding.
