- TO PREPARE: For the patties, mince first 4 ingredients in a food processor. Add in the onions; pulse till chopped. Add in the grnd beef, cumin, and 1 tsp. salt; pulse to combine. Make the Cucumber Yogurt recipe: Mix cucmbers and yogurt in a small bowl; set aside. TO COOK: Heat the broiler. Divide grnd beef mix into 8 portions. Form each portion into a patty, 3 inches in diameter. Transfer patties to a broiling pan. Broil patties, turning once, till they are browned on both sides, about 6 min. TO SERVE: Place 2 beef patties into each pita bread. Then, spoon a portion of the Cucumber Yogurt into each Indian Beef Patty Pocket. Serve immediately. NOTES : A Subcontinental spin on Gyros, about as easy as hamburgers. You can substitute grnd lamb or possibly chicken for the beef in these meat patties. Or possibly you can substitute 1-inch cubes of lamb, chicken, fish or possibly beef for the grnd meat patties and use the remaining patty ingredients listed as a marinade for the meat or possibly fish cubes, that are then broiled.

- In a small bowl, mix yogurt, parsley, garlic and 1/8 teaspoon salt. Toss beef with herbs, pepper and remaining salt., In a large cast-iron or other heavy skillet, heat 2 teaspoons oil over medium-high heat. Add onion; cook and stir until tender, 4-6 minutes. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add beef; cook and stir until no longer pink, 2-3 minutes. Serve on pitas; top with onion and sauce.

SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT
Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

- For the sauce:
- In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
- For the patties and pita:
- In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
- Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
- Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
- Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
- Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

- Heat a grill pan over medium-high heat. Coat pan with cooking spray. Combine beef, 1/4 cup parsley, cilantro and next 5 ingredients (through cinnamon) in a medium bowl. - Combine dried basil leaves, lemon pepper and onion powder in a small bowl.
- In another small bowl, combine yogurt, cucumber, salt and 1 tsp of herb mixture
- Reserve.
- Shape ground beef into four 1/2-inch thick patties.
- Sprinkle remaining herb mixture over both sides of patties.

- Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown lamb in batches. Add wine to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel. Add onion, garlic, 1 teaspoon salt, oregano and basil. Return lamb to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Press cancel., Select saute setting; adjust for low heat. Add tomato paste; simmer, uncovered, until mixture is slightly thickened, 8-10 minutes, stirring occasionally.
