Dinner just doesn't get any easier than this comforting vegetable pie-it even makes its own crust! To make it even quicker, substitute a 10-ounce package of frozen chopped broccoli or cauliflower for the fresh; it doesn't need to be boiled. Just thaw, drain and add it to the pie.This recipe is by Betty Crocker and was originally published in the Hartford Courant.

1/2 cup biscuit mix, such as original bisquick mix
1 cup milk

1/4 teaspoon pepper
2 eggs

Steps:

  • Step 1: Heat oven to 400 F. Grease a 9-inch pie plate.
  • Step 2: In a medium saucepan, heat 1 inch of salted water to boiling. Add 2 cups chopped broccoli (or cauliflower); cover and heat to boiling. Cook about 5 minutes, or until almost tender; drain thoroughly.
  • Step 3: In the greased pie plate, stir together the cooked broccoli, 1/3 cup chopped onion, 1/3 cup chopped bell pepper and 1 cup shredded cheddar cheese (4 ounces).
  • Step 4: In a bowl, combine 1/2 cup biscuit mix (such as Original Bisquick mix), 1 cup milk, 1/2 teaspoon salt, 1/4 teaspoon pepper and 2 eggs. Stir together until blended. Pour into the pie plate.
  • Step 5: Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

Vegetable Pot Pie, a comforting meatless dish that is quick, and super easy to make. Made with mixed fresh and frozen vegetable and shortcrust pastry, this pot pie is a family-favourite recipe.

2 cups frozen vegetable mix (peas, carrots, peppers, sweet corn)
1 cup brussels sprouts, halved
1/4 cup mushrooms, chopped
1 cup vegetable stock ((broth))
2 tbsp plain flour
1 tsp chopped parsley
1 ready-rolled shortcrust pastry sheet
1 egg
salt and pepper to taste
1 onion
1 tbsp vegetable oil
1 tbsp semolina

Steps:

  • In a pan, heat up the oil, add the chopped onion, and fry gently until tender.
  • Add the frozen and fresh vegetables, and cook for 5 minutes, until the veggies start to soften.
  • Add the flour and vegetable stock, season with salt and pepper, and mix in the fresh parsley.
  • Leave to cook for a further 5 minutes, until the liquid begins to thicken. Remove from the heat and leave to cool completely.
  • Pre-heat the oven to 200 degrees Celsius (390 Fahnrenheit).
  • Distribute the veggie mixture between the oven-safe pots (or any baking dish you use), and sprinkle semolina over.
  • Beat the egg, then brush the edges of the dishes with it, then cut the shortcrust pastry to form lids of each of the dishes you use.
  • Press gently with your fingers, so that the pastry fits well around the pots.
  • Use a sharp knife to cut steam vents on top of the lids, then brush with more egg wash, and bake for about 20 minutes or until golden.
  • Serve hot!

This recipe is very loosely based on one I found in "Popular Potato Recipes" published by Murdoch Books, but includes every shortcut I could invent (and a few extra ingredients like mushrooms, zucchini and two types of cheese)! This is a good year-round recipe because you can eat it hot or cold. Leftovers microwave OK, too. You can blind bake the pastry if you like, but it's always turned out well just putting the filling straight in.

1 sheet frozen puff pastry, defrosted
2 cups mashed potatoes
salt, pepper
2 tablespoons butter
1/2 cup frozen spinach, defrosted (silverbeet)
1/2 onion, finely chopped
1 zucchini, thinly sliced
150 g mushrooms, thinly sliced
2 tomatoes, sliced
1/2 cup grated tasty cheese
1/2 cup grated mozzarella cheese

Steps:

  • Preheat oven to 200°C.
  • Gently sauté onion in butter in small pan for 2 minutes.
  • Add spinach and zucchini, cover and cook over low heat for another 10 minutes.
  • Lightly brush pie dish with oil or melted butter.
  • Place pastry sheet into pie dish and trim edges.
  • Spread mashed potato over pastry.
  • Season with salt and pepper.
  • Top with spinach mixture, mushrooms and tomatoes.
  • Sprinkle with combined cheeses.
  • Brush pastry border with milk.
  • Bake for 25- 30 minutes.
  • If pastry turns brown during last 10 minutes of cooking, cover pie with foil to prevent it burning.
  • Serve with a variety of relishes, sauces, green salad and garlic bread for a vegetarian lunch or light dinner.

1 9-inch pre-baked pie crust
3 tomatoes (, peeled and sliced (Roma work best))
1 small zucchini (, sliced into rings)
1 small yellow squash (, sliced into rings)
1/2 cup sweet onion ((or red onion), sliced)
10 fresh basil leaves (, chopped)
1 cup shredded mozzarella cheese
1 cup freshly shredded cheddar cheese
3/4 cup mayonnaise ((or half mayo, half Greek yogurt))
2 Tablespoons freshly grated parmesan cheese
salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
  • Use a paper towel to pat-dry the tomatoes and make sure most of the excess juice is out. (You don't want very wet tomatoes or your pie will turn out soggy).
  • Heat a large skillet over medium-high heat. Season zucchini and squash with salt and pepper. Saute the squash in a single layer for 2-3 minutes on each side or until golden brown. Remove to a paper towel
  • Layer the zucchini, squash, tomato slices, and onion on the bottom of the pie shell. (Make sure pie shell is pre-baked, and completely cool, to avoid sogginess). Sprinkle basil on top.
  • Combine the grated cheeses and mayonnaise together. Smooth cheese mixture over the top and sprinkle parmesan cheese on top.
  • Bake for about 30 minutes or until lightly browned. Allow to cool for at least 15 minutes.
  • To serve, cut into slices and serve warm.

  • Because this crust is hearty, I prefer to precook it a bit.
  • Experiment with this to find your own preference.
  • The trick to this recipe is preparing the filling, sauce, and topping concurrently.
  • I usually end up finishing up the sauce last, but I have not given up hope.
