This awesome sandwich is reminiscent of the famous Maine Lobster Roll, and made with ingredients that are easy to find.

1 (8 ounce) package imitation crab or lobster meat
¼ cup mayonnaise
1 tablespoon finely chopped red onion
1 teaspoon lemon juice
¼ teaspoon OLD BAY® Seasoning
1 tablespoon butter, softened
2 hot dog buns

Steps:

  • In a medium bowl, flake the crabmeat, and mix in mayonnaise, onion, lemon juice and Old Bay seasoning. Cover and refrigerate for 30 minutes to allow the flavors to mingle.
  • Spread butter on the inside of the hot dog buns, and toast under the broiler. Fill buns with the crab salad, and serve.

½ cup diced red onion
½ cup diced green bell pepper
½ cup diced celery
1 pound imitation crab meat, flaked
¼ cup sour cream
1 ½ cups mayonnaise
⅔ cup Italian-style salad dressing
2 tablespoons lemon juice
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large bowl, combine onion, green pepper, celery and imitation crab meat.
  • In a separate bowl, mix together sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
  • Pour the dressing mixture into the crab/vegetable mixture and toss lightly to combine. Cover and chill at least 2 hours before serving.

1 package (8 ounces) cream cheese, softened
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon minced garlic
Paprika
Assorted crackers or vegetables

Steps:

  • In a small bowl, combine the first six ingredients. To serve chilled, cover and refrigerate until serving. Sprinkle with paprika., To serve warm, spoon into a greased 3-cup baking dish. Sprinkle with paprika. Bake, uncovered, at 375° for 15 minutes or until heated through. Serve with crackers or vegetables.

This is one of my favorite snacks. It can be served with crackers, or I like to eat it with the big corn chips (Scoops) or serve it in jumbo pasta shells. It's easily doubled if you want to use a whole brick of cream cheese and a pound of imitation crabmeat. This is fairly chunky; if you want it to be more spreadable, increase the amount of cream cheese/mayonnaise. Cook time is chill time.

4 ounces cream cheese, softened
1/4 cup mayonnaise
1 teaspoon paprika
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/8 teaspoon ground red pepper
8 ounces imitation crabmeat or 8 ounces surimi
1 roma tomato, chopped
1/4 cup chopped green onion

Steps:

  • In a small mixing bowl, beat cream cheese, mayonnaise, paprika, black pepper, garlic powder and ground red pepper with an electric mixer on medium speed till well combined.
  • Stir in the imitation crab, chopped tomato and green onions.
  • Cover and chill for 3-24 hours.

  • Put imitation crab through blender and grind to medium consistency.
  • Mix with balance of ingredients and let set for at least 2 hours before serving.
